These mini pancakes are so much more than a delicious breakfast. Use these silver dollar pancakes as the base for a variety of sweet or savory appetizers or desserts.

Number Of Ingredients 7

1 cup all-purpose flour (spooned and leveled)
1 teaspoon sugar
1 1/2 teaspoons baking powder
1/4 teaspoon coarse salt
1 cup whole milk
2 tablespoons unsalted butter, melted
1 large egg

Steps:

  • In a small bowl, whisk together flour, sugar, baking powder, and salt. In a medium bowl, whisk together milk, butter, and egg. Add flour mixture to milk mixture and whisk until just moistened (batter should have some lumps).
  • Heat a large nonstick or cast-iron skillet over medium. With a paper towel coated in butter, lightly grease skillet. Working in batches, drop batter by tablespoonfuls into skillet. Cook until bubbles appear on top and a few have burst, 2 minutes. Flip and cook until browned on underside, 1 minute. Repeat with more butter and remaining batter, wiping skillet clean between batches. Serve with desired toppings.

Mini Pancakes, sometimes called Silver Dollar are the easiest quickest little pancake bites that are perfect for parties, brunches, kids and pancake kabobs!

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1/4 teaspoon salt
4 teaspoons white sugar
1 1/4 cups milk
1 egg
4 tablespoons butter (, melted)

Steps:

  • You can add the dry ingredients and whisk together, then add the wet and combine fully.
  • I tend to just put everything in a bowl and whisk, these pancakes are really fuss free.
  • Heat a pan or griddle on medium-low heat and coat with a small layer of butter.
  • Using a tablespoon measure use about 3/4 of a tablespoon of batter (just scoop with the tablespoon measure but don't scrape out the entire amount, a quick pour will leave enough behind).
  • Cook the pancakes on both sides until lightly browned, about 45 seconds on each side.
  • Enjoy with your favorite toppings or mix-ins.

Silver dollar pancakes are light, fluffy bite-sized pancakes that are so much fun for kids and adults alike! These quick and easy mini buttermilk pancakes can be served in tall stacks with your favorite toppings!

2 tablespoons unsalted butter, melted ((more for pan))
1 cup buttermilk
1 large egg, beaten
1 teaspoon pure vanilla extract
1 cup all-purpose flour
1 tablespoon granulated sugar
1 ½ teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt

Steps:

  • Add the melted butter to a large mixing bowl. Slowly drizzle in the buttermilk while whisking. Whisk in egg and vanilla.
  • Add flour, sugar, baking powder, baking soda, and salt, and gently mix together on top of the wet ingredients before whisking it all together, until just mixed.
  • Add 1 tablespoon of butter to a griddle preheated over medium heat. Pour batter by 1-2 tablespoon portions onto the griddle. Cook for 1-3 minutes on each side, or until golden brown and cooked through. Add more butter to pan for the next batch as needed, repeating until all batter is used.

  • Add in ¾ cup milk, 2 tablespoons melted butter, 1 tsp. vanilla and using a whisk, mix until JUST combined. DO NOT OVER-MIX! Lumps are OKAY!**The consistency of your batter is important. If your batter is too thin, your pancakes will turn out thin and be hard to flip. If your batter is too thick, you can add 1 tablespoon more of milk at a time until it thins out.
  • Add 1-2 tablespoon of butter to a skillet and turn heat to medium-low. When butter is melted, pour about 1 tablespoon of batter into your skillet leaving about an inch between each pancake. (I suggest using a mini ice cream scoop for perfectly round, evenly sized pancakes).
  • If you want super crispy edges, it is important that you use the handle of the pan to help move the butter AROUND the edges of each pancake! You want the perimeter of each pancake to be nicely coated in the butter! *Use more butter if your pan is larger.
