MINI PIZZA RECIPE
Mini Pizza is a delicious tiny round pizza that is mixed with cheese, sausages and olives. It is perfect for serving kids or adults birthday party.

Steps:
- Add a warm milk, yeast, and sugar. Mix it all together in a large cup or a bowl.
- Transfer them into another bowl that contain flour, salt, and vegetable oil. Mix them well together.
- While mixing and kneading the pizza dough using your hand, add 1/4 cup of water/milk. If the texture of the pizza dough is still dry and hard, add another 1/4 cup of milk/water and repeat the process. A 1/2 cup is more than enough to make the texture of the dough soft and fluffy.
- Cover the dough with a towel and keep it in room temperature for 1 to 2 hours maximum. The yeast will help grow the pizza dough. The picture below is only based on just 1 hour.
- Rub the tray with oil. This is important because after baking the pizza, it can easily be removed.
- Soak your finger with olive oil, and make a round tiny pizza using your hand
- Brush the dough with olive oil, and then add tomato sauce. Next, you add sausage and olives. And then lastly, you add mozzarella and cheddar cheese.
- Transfer the tray into the oven and let it cooked for 10 minutes in 180 degrees Celsius. Make sure the oven is already hot enough before putting in the oven.

- Toast muffins.
- Spread half with some tomato sauce.
- Top with grated cheese, then cut salami in half and place like a mouth, put olives for eyes, strip of capsicum for a nose and grated vegetables for hair.
- Place on a paper towel in the microwave and microwave on medium for 30 seconds or until cheese melts.
- Alternatively bake in hot oven for 10 minutes or until cheese melts.

- Preheat oven to 425ºF. Line two baking sheets with parchment paper.
- Combine the yeast, water, and sugar in a large mixing bowl. Stir, then let sit for 10 minutes, or until the mixture is creamy and has small bubbles on the top.
- To the yeast mixture, add the salt, olive oil, and flour. Stir until everything is incorporated and the mixture forms a ball. Turn out onto a lightly floured work surface and knead for a minute or two, or until it feels smooth and elastic.
- Rub a teaspoon of olive oil all over the dough ball, then cover it with plastic wrap and let it rest in the mixing bowl for 5 minutes.
- Cut the dough into 8 equal pieces and form them into balls. One at a time, place each ball onto the floured work surface and use a rolling pin or clean hands to roll, pat, or pull the dough into a pizza crust shape.
- Spread sauce and sprinkle cheese onto the pizzas, then top with desired toppings.
- Place the pizzas on the prepared baking sheets and bake for about 16 minutes, or until the edges are puffy and golden and the cheese is melted and browned in spots.

- Roll or pat biscuits into 2-1/2 in. circles. Place on greased baking sheets. , In a small bowl, combine the tomato sauce, onion, oregano, basil and garlic powder; spread over the biscuits. Sprinkle with cheese. Bake at 400° for 8-10 minutes or until edges are lightly browned.

MINI TOP-YOUR-OWN PIZZAS

Steps:
- Put the flour in a large bowl. Add a little salt to one side of the bowl and the yeast to the other side. Sprinkle over the sugar, together with a spoon, and add the oil and 190ml warm water. Combine with a spoon until all the flour comes away from the sides of the bowl, then tip onto a floured surface. Knead for 5-10 mins or until smooth and elastic. Lightly oil a clean bowl, add the dough, cover with cling film and leave to rise for 1 hr.
- Meanwhile, make the sauce. Pour the passata into a saucepan, add the basil and mixed herbs, then season and bring to the boil over a low heat. Simmer gently for 5 mins, then set aside to cool. Chop the toppings.
- Once the dough has risen, tip it out, knock out the air and divide into 6 equal parts. Heat oven to 240C/220C fan/gas 9 and place 2 large baking sheets in the oven.
- Roll out the dough on a lightly floured surface into a circle around 15cm in diameter. Pick up the circle of dough and toss about a metre up, spinning it in the air. Catch it on the back of your hand, so your fingers don't poke through the dough. Do this at least 3 times to achieve a thin central base and a thicker outside crust. Alternatively, you could carry on rolling, but it's not as much fun!
- Lay the bases onto baking parchment (2 bases on 1 piece of parchment) and carefully slide each pair inside a plastic bag 'tent' for 15 mins to prove again.
- After the second rise, spread the sauce over the bases and add the and mozzarella. Take the baking sheets out the oven and quickly slide the pizzas (still on their baking parchment) on top. You can cook 2-3 pizzas per tray. Return to the oven and bake for 12 mins. Take out, slice and eat.

- Preheat oven to 425 degrees F.
- Combine 2 cups flour, undissolved yeast, sugar and salt in a large bowl. Add very warm water and oil; mix until well blended, about 1 minute.
- Gradually add enough remaining flour to make a soft dough. Dough should form a ball and will be slightly sticky. Knead** on a floured surface, adding additional flour if necessary, until smooth and elastic, about 4 minutes. Divide dough into 8 portions; cover. (If using RapidRise Yeast, let dough rise at this point for 10 minutes.)
- Pat each portion of dough with floured hands into an 8-inch circle on a greased baking sheet. Form a rim by pinching the edge of the dough. Add a second crust to the same baking sheet.
- Bake for 6 to 7 minutes, dough will be just set and only lightly browned on the bottom. Remove crusts to a wire rack to cool. Continue with remaining pizza dough. (Works best to use several baking sheets.) May use crusts immediately or place in freezer bags and freeze for up to 1 month.
- When ready to bake, preheat oven to 475 degrees F. Spread each crust with pizza sauce. Top with desired toppings to make Halloween designs! Repeat with remaining pizzas. Place on a baking sheet and bake for 6 to 8 minutes, until cheese is melted and lightly browned and bottom of crust is browned.
