MINI SHRIMP POT PIES

Number Of Ingredients 12

2 tablespoons olive oil
16 shrimp, peeled + deveined and chopped
Salt and pepper, to taste
3 tablespoons butter
1 lb button mushrooms, sliced
2 carrots, peeled and chopped
2 thyme sprigs
3 tablespoons flour
1/2 cup white wine
2 cups milk
1 1/2 cups frozen peas
1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count)

Steps:

  • Preheat the oven 375° F. Grease four mini ramekins. Gather the rest of your ingredients.
  • Heat a large skillet over medium heat. Add olive oil, shrimp and a pinch each of salt and pepper. Cook for 3 minutes or until shrimp is cooked through. Remove shrimp from skillet and place on a plate.
  • To the same skillet, add butter. Once melted, add mushrooms and carrots. Cook for 5-8 minutes or until the carrots are soft. Stir in fresh thyme and cook another minute. Add flour and continue cooking a minute longer. Slowly pour in the wine and milk, whisking to ensure that no clumps form in sauce. Bring sauce to a low boil. Reduce heat and stir in peas and cooked shrimp. Simmer sauce for 5 minutes or until thickened. Remove from heat and let cool.
  • Unroll the rounds of pie dough and cut each round of dough into four triangles. Use your hands to fit half of the triangles inside the greased ramekins. Cut remaining triangles into 3 to 4 inch circles. Divide pot pie filling evenly among each ramekin. Place top piece of pie dough over the filling and pinch the two pieces of dough together to seal. Use the tines of a fork to create a rustic design going all the way around the pot pies.
  • Place the pies on a baking sheet and bake for 35-40 minutes or until the filling is bubbling and the pie crust is golden. If the crust starts to get too brown before the pies are done, cover the pies with foil.
  • Serve the pies hot with fresh thyme.

1/4 pound unsalted butter
1 1/2 cups chopped yellow onion (1 large)
1 cup chopped fennel
1/2 cup all-purpose flour
3 cups fish stock or clam juice
1/2 pound large shrimp, peeled and deveined
1/2 pound sea scallops, sliced in half horizontally
1 tablespoon Pernod
1 tablespoon kosher salt
1 1/2 teaspoons freshly ground black pepper
3 tablespoons heavy cream
3/4 pound cooked fresh lobster meat
1 1/2 cups frozen peas (not "baby" peas)
1 1/2 cups frozen small whole onions
1/2 cup minced flat-leaf parsley
1 1/2 cups all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon baking powder
1/4 pound cold unsalted butter, diced
1/4 to 1/3 cup ice water
1 egg, beaten with 1 tablespoon water or heavy cream, for egg wash

Steps:

  • Melt the butter in a large saute pan over medium heat. Add the chopped onion and fennel and cook for 10 to 15 minutes, until the onions are translucent. Add the flour and cook over low heat for 1 more minute, stirring occasionally.
  • Meanwhile, bring the stock to a simmer in a large saucepan. Add the shrimp and scallops and cook for 2 minutes, just until firm. Remove the seafood to a large bowl with a slotted spoon, reserving the stock.
  • When the flour is cooked in the onion and fennel mixture, slowly add the stock, the Pernod, salt, and pepper and simmer for 3 minutes. Stir in the heavy cream.
  • Cut the lobster meat into medium-size cubes and add it to the onion and fennel mixture with the shrimp and scallops. Add the frozen peas, frozen onions, and parsley and pour the mixture into a 9 by 13 by 2 baking dish.
  • For the pastry, mix the flour, salt, and baking powder in a food processor fitted with a steel blade. Add the butter and pulse 10 times, until the butter is the size of peas. With the motor running, add the ice water; process only enough to moisten the dough and have it just come together. Dump the dough on a floured surface and knead quickly into a ball. Wrap the dough in plastic and allow it to rest for 30 minutes in the refrigerator.
  • Meanwhile, preheat the oven to 375 degrees.
  • Roll the dough out to fit the baking dish with about 1/4-inch overlap. Use the egg wash to paint the outside rim of the dish. Place the dough on the filled baking dish and press it lightly to adhere to egg wash. Brush the dough with egg wash. Make 3 slashes in the top to allow the steam to escape. Place the dish on a sheet pan lined with parchment paper and bake for 1 hour and 15 minutes, until the top is golden brown and the filling is bubbling hot.

1 egg
1 tablespoon water
4 sheets puff pastry, thawed (recommended: Pepperidge Farm)
Flour, for dusting
8 large (21 to 25) shrimp, shelled and deveined
1/4 teaspoon cayenne pepper
1 tablespoon olive oil
2 tablespoons unsalted butter
1 small carrot, diced
1 celery stalk, diced
6 mushrooms, sliced thin
2 sprigs fresh thyme
1/2 cup white wine
2 cups heavy cream
Salt and freshly ground white pepper
Special equipment: 3 and 4-inch metal ring

Steps:

  • Preheat oven to 400 degrees F.
  • In a small bowl, whisk egg and water until well blended. Lightly dust work surface with flour. Unfold puff pastry and dock dough with a fork. Using a 4-inch ring, cut 16 circles. Set 4 circles on a nonstick baking sheet. These are the base of the pot pies. Discard scraps. Using a 3-inch metal ring, cut circles in the center of the 12 remaining circles. Remove 4 of the 3-inch circles to the prepared baking sheet. These are the tops. Brush the outer edge of the 4-inch circles with the egg wash. Lay 1 of the 12 rings on top. Brush egg wash on that ring and place another ring on top. Repeat 1 more time until you have 3 rings stacked on top of each other. Repeat with remaining circles until you have 4 assembled. Brush the edges and tops with egg wash and bake in the middle of the oven until golden, about 20 minutes.
  • Meanwhile, season the shrimp with cayenne pepper, salt and black pepper. In a medium saucepan over medium-high heat, add oil and 1 tablespoon butter. Saute the shrimp, 1 minute per side. Remove shrimp and set aside. Add remaining butter to the pan and saute carrots, celery, mushrooms, and thyme, until softened about 10 minutes. Add wine, bring to a simmer and cook until most of the wine has evaporated. Add the cream and bring back to a simmer until the sauce thickens to a gravy consistency, about 12 to 15 minutes. Place the shrimp back into the sauce to coat. Remove thyme and season with salt and white pepper. Ladle the shrimp mixture into the pastry puff bowls and top with the smaller puff circles.

24-36 bread cups (see recipe below)
2 lb louisiana frozen crawfish tails with fat, or cooked shrimp, coarsely chopped
1 stick butter
2 medium onions, chopped fine
3 stalk(s) celery, chopped fine
1/2 red &/or green bell pepper, chopped fine
2 Tbsp chives or green onions, fresh or dried
salt and black pepper - to taste
1 Tbsp garlic, minced
1 Tbsp worcestershire sauce (lea & perrin's)
1 can(s) cream of mushroom soup
1 jar(s) 15oz cheez-whiz
1/2 tsp cayenne pepper
1/2 cap liquid crab boil (optional)
2 dash(es) paprika - for color
1 1/4 c italian bread crumbs
paprika or chopped parsley, fresh or dried for garnish

Steps:

  • 1. First you make a roux. NO! NO! NO!, not this time. Just Kidding! Sorry, I got carried away...
  • 2. FIRST - In a large skillet melt butter and add onion, celery, and chives/green onions, and season with a little salt and pepper. Saute until onions begin to soften.
  • 3. Add garlic, worcestershire sauce, cayenne (start with a pinch, you can always add more later), and paprika; continue to simmer 15-20 minutes, stirring frequently.
  • 4. Add soup and Cheez-Whiz, simmer until cheese is melted, stirring frequently to keep cheese from burning.
  • 5. Add crawfish and simmer 10 minutes. Add 1/2 cap, or to taste, liquid crab boil, (optional).
  • 6. Pour mixture into a large mixing bowl and add bread crumbs. Mix well and let sit to allow bread crumbs to expand. The mixture needs to be fairly thick so it won't fall down your shirt when you take the first bite of the mini crawfish pie.
  • 7. Check the mixture and add more bread crumbs if needed, stir and set aside.
  • 8. If you planned ahead and already have your bread cups made, then pop them back into the mini muffin pan and set aside, pour yourself a drink and put your feet up.   • 9. Once all of your ingredients are ready, use a small spoon and fill each bread cup, pack it in and heap it up on top. Sprinkle the top with a little paprika or chopped parsley. Bake at 350* F for 10 minutes and serve.
  • 10. *NOTE: Before baking, crawfish pies can be frozen then put into a Zip-Lock bag and kept frozen until ready to serve. From frozen bake at 350* F for 25 minutes until hot.
  • 11. *TIP: Alternate method for dough cups - Instead of making bread cups, you can use Pillsbury's pre-made pie crusts (2 crusts) in freezer section of the grocery, or you can make your own fabulous homemade pie crust. Use a cookie cutter to cut rounds that will form a cup when put into a mini muffin pan. Bake for 10 minutes then fill with crawfish mixture. Bake for another 10 minutes to heat through. *OPTIONS: If you don't want to make mini crawfish pies - use this filling to make one full size pie with a top and bottom crust. If you can't get crawfish, use shrimp or crab meat in place of crawfish. Add crab meat last so it stays together better.

1 ½ lb boneless, skinless chicken breast
5 ¼ tablespoons butter
onion, diced
3 carrots, diced
½ cup flour
1 cup milk
2 cups chicken broth
1 cup frozen peas
1 teaspoon salt
½ teaspoon pepper
4 sheets puff pastry
1 egg, beaten

Steps:

  • Preheat oven to 425°F (220°C).
  • Add the oil to a large pot over high heat. Once the oil begins to shimmer, add the chicken, and stir until cooked through, about 7 minutes. Transfer the chicken to a bowl.
  • Melt butter in the same pot. Add the onions and carrots and stir until softened, about 8 minutes.
  • Add the flour, stirring to combine. Slowly add the milk and chicken broth, alternating between the two, stirring continuously and bringing to a boil.
  • Add the cooked chicken, peas, salt, and pepper, and stir until thoroughly mixed. Remove from heat and let cool.
  • Lay out puff pastry sheets and use a small 6-inch (15 cm) bowl to cut circles out of it.
  • Place dough circles in a nonstick muffin tin and fill with pot pie mixture.
  • Using remaining puff pastry, cut ⅛-inch (3 mm) strips of dough, and make a lattice top for each muffin cup. Brush the lattice tops with the egg.
  • Bake for 15 minutes, until golden brown.

1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
1 can (4 ounces) tiny shrimp, rinsed and drained
1/2 cup chopped celery
1/2 cup mayonnaise
1/4 cup chopped green pepper
2 tablespoons diced pimientos
1 tablespoon lemon juice
1-1/2 teaspoons chopped onion
1/4 teaspoon seafood seasoning
1/4 cup shredded cheddar cheese

  • On a lightly floured surface, roll out pastry to 1/8-in. thickness. Cut out two 7-in. circles (discard scraps or save for another use). This is a recipe that we just served for a teacher's luncheon. It went over really well - a delicious dish. The cook, Michele, took this from one of Paula Deen's recipes. I prefer fresh mushrooms over canned, but I'm printing the recipe as written. Prep time reflects chilling time for pie crust.

1/2 cup butter, softened,plus

1 (3 ounce) package cream cheese, softened
1 cup all-purpose flour
8 tablespoons butter (1 stick)
3/4 cup all-purpose flour
1 1/2 cups half-and-half or 1 1/2 cups cream
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 (13 1/4 ounce) can sliced mushrooms, drained
1/2 cup grated parmesan cheese

1 lb cooked shrimp, peeled,deveined,and coarsely diced
garlic powder
buttered bread crumb, for topping
6 parsley sprigs, for garnish

Steps:

  • For Crust: Preheat oven to 325 degrees F.
  • In a mixing bowl, blend butter and cream cheese until well combined.
  • Cut in the flour with a fork.
  • Divide dough into 6 balls.
  • Chill in the refrigerator for 1 hour.
  • Grease a 6-cup jumbo muffin tins with butter or nonstick cooking spray.
  • Pat each of the chilled dough balls into each muffin cup.
  • Bake for approximately 8 minutes, or until golden brown.
  • For Filling: Preheat oven to 350 degrees F.
  • In a saucepan over medium heat, melt butter and stir in flour.
  • Slowly blend in half-and-half, stirring constantly.
  • The sauce should be thick; do not brown the sauce.

Shrimp, all veggies and coconut come together in this delicious pot pie recipe made using Progresso® chicken broth - a tasty Thai dinner.

16 wonton skins (about 3 1/4-inch square)
2 tablespoons butter, melted
1 tablespoon sesame seed
3/4 teaspoon salt

1 cup fresh snow pea pods, strings removed
1 red bell pepper, finely chopped
1 tablespoon grated gingerroot
2 cloves garlic, finely chopped
1 can (13.5 oz) coconut milk (not cream of coconut)
1 3/4 cups Progresso™ chicken broth (from 32-oz carton)
7 tablespoons Gold Medal™ all-purpose flour
1 teaspoon red curry paste
1 lb uncooked medium shrimp, peeled (tail shells removed), deveined

Steps:

  • Heat oven to 425°F. Brush 1 side of each wonton skin with melted butter; sprinkle evenly with sesame seed and 1/4 teaspoon of the salt. Place on ungreased cookie sheets. Bake 5 minutes or until golden brown.
  • Meanwhile, spray 4-quart Dutch oven with cooking spray. Add mushrooms, pea pods, bell pepper, gingerroot and garlic; cook over medium-high heat 4 to 5 minutes, stirring frequently, until vegetables are softened. Stir in coconut milk.

  • Prepare the pot pies dough: Place the flour, salt, and sugar in a bowl in the bowl of an electric mixer fitted with the paddle attachment. Beat in the butter at low speed until mixture is well combined yet lumpy. Add the egg and beat until just incorporated. Add the iced water and beat until obtaining an homogeneous mixture. You might need to stop the electric mixer a few times to scrape together dough from both bottom and sides of the bowl.
  • Place the dough onto a floured surface, form a ball, and then press into a flat disk. Wrap in plastic wrap and refrigerate for about 1 hour.
  • Meanwhile, prepare the pot pies filling. In a medium stainless steel saucepan, bring the chicken stock or broth to a boil over high heat. Reduce the heat to low and stir in tomato paste, whisking to dissolve.
  • In a different saucepan, melt the butter over low heat, add the flour, and stir well to make a roux. Add a little bit of the warm stock, whisking well until combined. Add the remaining stock and continue to whisk well constantly, over medium heat, until it thickens. Season with salt and pepper to taste and set aside.
