MINI WAFFLE POPS WITH WHITE CHOCOLATE, COCONUT, AND CANDIED GINGER
Turn ordinary waffles into fun and festive party treats. These easy mini waffles are baked on lollipop sticks, drizzled with white chocolate, and crusted with shredded coconut and candied ginger.

- Preheat and grease a waffle iron according to manufacturer's instructions.
- Whisk flour, sugar, baking powder, and salt together in a large bowl.
- Whisk milk, eggs, butter, and vanilla extract together in a separate bowl; stir into flour mixture just until batter is moistened.
- Pour 2 teaspoons batter into the preheated waffle iron for each waffle, leaving spaces between each. Insert a lollipop stick about 3/4 of the way into each pool of batter; close the lid. Cook until golden and crispy, about 1 minute. Transfer each waffle pop to a cooling rack and repeat with the remaining batter.
- Melt white chocolate in a microwave-safe glass or ceramic bowl in 15-second intervals, stirring after each interval, 1 to 3 minutes. Transfer melted white chocolate to a pastry bag fitted with a small writing tip or a resealable plastic bag with the corner snipped. Drizzle white chocolate over each waffle pop.
- Sprinkle coconut and candied ginger over the melted chocolate on each waffle pop, lightly pressing toppings to help stick to chocolate as it cools and firms.

CANDIED GINGER
Steps:
- Spray a cooling rack with nonstick spray and set it in a half sheet pan lined with parchment.
- Peel the ginger root and slice into 1/8-inch thick slices using a mandoline. Place into a 4-quart saucepan with the water and set over medium-high heat. Cover and cook for 35 minutes or until the ginger is tender.
- Transfer the ginger to a colander to drain, reserving 1/4 cup of the cooking liquid. Weigh the ginger and measure out an equal amount of sugar. Return the ginger and 1/4 cup water to the pan and add the sugar. Set over medium-high heat and bring to a boil, stirring frequently. Reduce the heat to medium and cook, stirring frequently, until the sugar syrup looks dry, has almost evaporated and begins to recrystallize, approximately 20 minutes. Transfer the ginger immediately to the cooling rack and spread to separate the individual pieces. Once completely cool, store in an airtight container for up to 2 weeks. Save the sugar that drops beneath the cooling rack and use to top ginger snaps, sprinkled over ice cream or to sweeten coffee.
BELGIAN WAFFLE POPS
Steps:
- Line a baking sheet with parchment paper. Using a large chef's knife, trim two corners from each waffle so they are pointed at one end. Insert ice pop sticks into the untrimmed sides of the waffles and lay them on the lined baking sheet.
- Transfer the melted chocolate to a resealable plastic bag; transfer the melted butterscotch to another resealable plastic bag. Snip the tips and drizzle the chocolate over the buttermilk waffles and the butterscotch over the chocolate waffles. Immediately cover the buttermilk waffles with sliced almonds and rainbow sprinkles. Top the chocolate waffles with the mini chocolate chips and chopped peanut butter chips. Let stand until set, about 10 minutes. Serve immediately.

BETTER THAN BEST WAFFLES WITH WHITE CHOCOLATE
I got this recipe from my sister-in-law after her quest for the perfect waffle. She has ended her search for now. She has an expensive professional waffle iron. I have a $20 cheapo and they turn out just as great. Everyone should try this, especially if they think their waffle iron makes only bad waffles. You will be surprised. I do tend to leave my waffles on the iron about 40 seconds more after the ready light goes on, only because I like them a bit browner.

- Beat egg whites in a small bowl until stiff; set aside.
- Sift together dry ingredients.
- Combine egg yolk, milk, butter and vanilla in a separate bowl. Add mixture to dry ingredients and mix until just blended.
