Steps:

  • Blend all ingredients in a blender for a few seconds, until well mixed.
  • Pour mixture into a 10" greased pie plate.
  • Bake at 350 degrees Fahrenheit for 1 hour or until centre tests firm.
  • Then flour will settle to form crust, the coconut forms the topping, the centre is an egg custard filling.

¼ cup butter, melted
1 cup sugar
½ cup flour
¼ teaspoon salt
½ teaspoon baking powder
2 cups milk
1 cup flaked coconut (more if desired)
1 teaspoon vanilla

Steps:

  • Preheat oven to 350F.
  • Place all ingredients to a large bowl and beat together until combined, or place in blender at one time and blend until mixed together. Pour into a greased 9 -10 inch pie dish.
  • Bake for 1 hour or until center is firm and pie is golden.
  • The pie will have a slight wobble to the surface. That will set as it is cooling.
  • When done, crust will be on bottom, custard in the middle, and coconut on top - right where they belong!
  • Allow to cool and refrigerate until completely chilled or overnight.
  • Serve with your favorite ice cream, and sprinkle with toasted coconut.

2 cups brown sugar
¼ cup butter, softened
2 eggs
1 teaspoon vanilla extract
1 teaspoon salt
½ cup all-purpose flour
1 ½ cups milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch pie dish.
  • Place the brown sugar and butter in a mixing bowl, and beat them together with an electric mixer until creamy and very well combined, without lumps. Beat in eggs, one at a time, incorporating the first egg before adding the next one. Add the vanilla extract and salt; beat the flour in, a little at a time, and then the milk, making a creamy batter. Pour the batter into the prepared pie dish.
  • Bake in the preheated oven for 35 minutes; remove pie, and cover the rim with aluminum foil to prevent burning. Return to oven, and bake until the middle sets and the top forms a crusty layer, about 15 more minutes. Let the pie cool to room temperature, then refrigerate for at least 1 hour before serving.

From Women's Weekly All Time Favourites. This has never stuffed up for me, my husband loves it. Australian cup measurements (250ml, 1T=20ml). I've also made a lighter version, can post if required.

1/3 cup plain flour
1 1/2 cups milk (I've used lite and soy here)
3 eggs
2 slices bacon, rashers chopped (I prefer chopped ham)
3 shallots, chopped
1 cup grated cheddar cheese
130 g corn kernels, rinsed, drained
2 tablespoons chopped fresh parsley

Steps:

  • Fry bacon until browned, place bacon into a sieve and allow to drain. (I use chopped ham or bacon and just microwave it for a bit, then drain on paper towel).
  • Oil shallow 23cm round flan dish. Whisk flour and milk in medium bowl until smooth; whisk in eggs.
  • Stir in remaining ingredients; pour mixture into prepared dish. Bake in moderately slow oven (160C, 325F) about 1 hour (60 minutes) or until set.
