FOIL-PACKET SALMON WITH MUSHROOMS AND SPINACH

Foil-Packet Salmon with Mushrooms and Spinach image

Foil-pack dinners are a convenient way to quickly create a flavorful dish with practically no cleanup. In this foil-pack, the salmon and vegetables are simply cooked, then finished with a bright, assertive ginger-scallion butter.

2 cups thinly sliced shiitake mushroom caps
4 cups baby spinach
Kosher salt and freshly ground pepper
4 6-ounce skinless salmon fillets
Extra-virgin olive oil, for drizzling
1/4 cup dry white wine (or use water)
4 tablespoons unsalted butter, at room temperature
3 scallions, sliced
2 teaspoons grated fresh ginger
1/2 teaspoon toasted sesame oil

Steps:

Lay out four 18-inch-long sheets of heavy-duty foil. Mound 1/2 cup mushrooms and 1 cup spinach in the center of each; season with salt and pepper. Top each with a salmon fillet, season with salt and pepper and drizzle with olive oil. Drizzle each with 1 tablespoon wine (or water). Bring the short ends of the foil together and fold twice to seal; fold in the sides to form a packet, leaving room inside for steam.
Preheat a grill to medium high. Grill the foil packets until the fish is just cooked through, 10 to 12 minutes. (Alternatively, you can bake the foil packets in a 450˚ F oven until the fish is just cooked through, 12 to 15 minutes.) Let the packets sit 5 minutes.
Meanwhile, combine the butter, scallions, ginger, sesame oil and 1/4 teaspoon salt in a mini food processor. Pulse until smooth. Carefully open the foil packets. Top with the flavored butter.

DH and I made this for dinner last night and thought it was excellent. Another winner from Keiko O Aoki's "Easy and Healthy Japanese Food for the American Kitchen." DH and I doubled the green onions and found the salmon had to cook for significantly longer (about 20 mins) than what was posted in the recipe (though we realize oven heating times vary). This was very easy and required very little prep. I should mention that I always use reduced sodium soy sauce (I prefer San-J Tamari).

Ingredients

4 salmon fillets
2 sprigs green onions, thinly sliced at an angle
8 shiitake mushrooms, stems removed and tops cut in half
red pepper flakes (to garnish)
3 tablespoons miso
2 tablespoons mirin
2 tablespoons sake
2 teaspoons soy sauce
1 tablespoon sugar

Steps:

In a bowl, mix all marinade ingredients.
Cut salmon into bite-sized pieces.
In a shallow pan, place the fish and add the marinade. Marinate for 10 minutes.
Thinly slice the green onions at an angle. Remove stems from shiitake mushrooms and cut the tops in half.
In a baking pan, place a sheet of aluminum foil long enough to make a pouch. Place the ingredients on the foil in the following order: green onion on bottom, marinated salmon, and shiitake on top.
Fold the sides and ends of the aluminum foil to make a pouch; make sure to seal tightly so juices don't flow out.
Place inside oven 10-20 minutes at 400 degrees F or until done. Sprinkle with hot pepper flakes and serve.

1 tablespoon miso
1 tablespoon cooking sake
1/2 tablespoon sugar
25 g butter
1/2 onion, sliced
1/2 medium carrot, peeled and julienned
1/2 red bell pepper, julienned
1 king trumpet mushroom
1 salmon fillet
aluminum foil

Steps:

Mix miso, sake, and sugar in a small bowl until well combined.
On a large sheet of aluminum foil place the butter then onion,carrot, bell pepper and mushroom.
Place the salmon on the top of vegetables.
Spread the Miso mixture on the salmon. Fold the foil and seal the edges to make a packet.
Place foil packet in a large frying pan.
Pour water into the frying pan about 2cm, cover & steam for 15 minutes.
