15-MINUTE MISO SOUP WITH GREENS AND TOFU

15-Minute Miso Soup with Greens and Tofu image

An inspired take on Japanese miso soup with tofu, green onion, and loads of greens. Just 15 minutes from start to finish, and so flavorful and comforting.

Provided by Minimalist Baker

Categories     Appetizer     Entree     Side

Time 15m

Number Of Ingredients 6

4 cups vegetable broth ((use dashi for more traditional miso soup // see notes above))
1 sheet nori ((dried seaweed // optional // cut into large rectangles // 1 sheet yields 1/4 cup))
3-4 Tbsp white or yellow miso paste
1/2 cup chopped green chard or other sturdy green
1/2 cup chopped green onion
1/4 cup firm tofu ((cubed // use silken tofu for more traditional miso soup))

Steps:

  • Place vegetable broth in a medium sauce pan and bring to a low simmer.
  • In the meantime, place miso (starting with lesser end of range) into a small bowl, add a little hot water and whisk until smooth. This will ensure it doesn't clump when added to the soup later. Set aside.
  • To the broth add chard (or other greens of choice), green onion, and tofu (if using silken, add at the end of cooking) and cook for 5 minutes. Then add nori and stir. Remove from heat, add miso mixture, and stir to combine.
  • Taste and add more miso or a pinch of sea salt if desired. Serve warm. Best when fresh.

Yield Serves 4

Number Of Ingredients 15

15g/½oz dried wild mushrooms, such as porcini
1.4 litres/2½ pints just-boiled water
2 tbsp dark soy sauce, plus extra to serve
1 vegetable stock cube
4 tbsp brown miso paste
200g/7oz medium dried egg noodles
396g pack firm tofu, drained, dried, cut into 8 rectangular slices
2-3 tsp sunflower oil
4 large free-range eggs
150g/5oz chestnut mushrooms, thinly sliced
2 pak choi, roots trimmed, leaves separated and washed
100g/3½oz fresh beansprouts, rinsed and drained
6 spring onions, trimmed, very thinly sliced
50g/2oz roasted cashew nuts, roughly chopped
dried flaked chillies, to serve (optional)

Steps:

  • Put the dried mushrooms in a large, heavy-based saucepan and cover with the water. Add the soy sauce, stock cube and miso paste and stir until the stock cube has dissolved. Set aside for 30 minutes to rehydrate and infuse.
  • Meanwhile, half-fill a saucepan with water and bring to the boil. Add the noodles and cook for 3-4 minutes, or until just tender, stirring occasionally to break up the strands. Drain well, then rinse under running water until cold.
  • Half-fill the same pan with water and bring to the boil. Add the eggs to the boiling water and cook for 5 minutes.
  • Heat 2 teaspoons of the oil in a large, non-stick frying pan over a medium heat. Add the tofu pieces and fry carefully for 3-4 minutes on each side, or until pale golden-brown on both sides. Turn off the heat but keep the pan on the hob so that the tofu stays warm.
  • Stir the noodles into the mushroom broth and bring to the boil. Reduce the heat until the mixture is simmering, add the chestnut mushrooms and pak choi and continue to simmer for a further 2-3 minutes. Stir in the beansprouts and spring onions, remove from the heat.
  • Drain the eggs then rinse under cold water. Crack and peel off the shells, cut in half.
  • Divide the broth, noodles and vegetables between 4 serving bowls. Top with the tofu and eggs. Sprinkle over the cashew nuts and chilli flakes. Season with extra soy sauce.

JAPANESE MUSHROOM AND TOFU UDON NOODLE SOUP

Japanese Mushroom and Tofu Udon Noodle Soup image

This Japanese udon noodle soup with kimchi-miso broth is made with mushrooms and tofu. Top with roasted, peeled tomato halves, if desired.

Provided by Kevin Schmidt

Categories     Soups, Stews and Chili Recipes     Soup Recipes     Noodle Soup Recipes

Time 1h

Yield 4

Number Of Ingredients 19

1 pound udon noodles
8 cups water
1 ounce dried kombu (dried kelp)
6 shiitake mushroom caps, thinly sliced
½ cup chopped kimchi
½ red bell pepper, cut into thin strips
4 green onions, sliced
3 tablespoons miso paste
2 tablespoons soy sauce
2 tablespoons rice vinegar
2 tablespoons mirin (Japanese rice wine)
2 tablespoons maple syrup
1 tablespoon minced fresh ginger
1 tablespoon toasted sesame oil
2 cloves fresh garlic, minced
1 lime, juiced
salt and ground black pepper to taste
2 tablespoons canola oil, or as needed
½ (14 ounce) package firm tofu, cubed

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook udon in boiling water, stirring occasionally, until noodles are tender yet firm to the bite, 10 to 12 minutes. Drain and rinse under cold water to stop the cooking; set aside.
  • Combine water and kombu in a large soup pot over medium heat; bring to a gentle simmer. Turn off heat and pour through a fine sieve or strainer. Pour broth back into the soup pot and discard the kombu. Add mushrooms, kimchi, bell pepper, green onions, miso, soy sauce, rice vinegar, mirin, maple syrup, ginger, sesame oil, garlic, lime juice, salt, and pepper. Bring to a simmer and cook for 15 minutes. Turn off heat and adjust seasoning, if necessary.
  • While soup is cooking, heat oil in a large skillet over medium-high heat. Add tofu cubes and fry on each side until browned, 1 to 2 minutes per side. Remove tofu to a paper towel-lined plate to drain. Add tofu to the soup.
  • Divide udon noodles amongst 4 bowls. Ladle the hot broth-tofu mixture over top and serve immediately.

  • 1. First of all soft boil the eggs. Place a saucepan with water over high heat until boiling. Then turn the heat to medium. Add the eggs. If one is cracked and egg white comes out, add another egg.
  • 2. Time it: boil the eggs for 5 minutes. Then immediately drain them, rinse them under cold running tap water and immediately place them in the fridge. I even put them in the freezer sometimes for about 5 minutes and then in the fridge. Once cooled, peel the soft eggs carefully under running tap water if necessary.
  • 3. Keep the eggs at room temperature until needed later. Pour the water in a large saucepan and then add the miso paste and half of the soy sauce.
  • 4. Give it a good stir and bring it to a gentle boil. Once the miso has dissolved, add the noodles.

  • In a large, heat-proof bowl or pot, combine the ginger, kombu, dried mushrooms, and boiling water. Let steep while you prepare the rest of the ingredients, 20-30 minutes. Carefully strain the stock, leaving behind any sand that may be hanging out on the bottom of the pan (or pour through a coffee filter if you prefer). Add half a cup of stock to the miso paste and stir it to loosen. Add the miso to the stock, and taste for salt, adding tamari and lime juice until you like the flavor.
  • While the stock is doing its thing, position a rack in the center of the oven and preheat to 400ºPlace the tofu on a smallish, rimmed baking sheet and drizzle with 1 tablespoon each of the sesame oil and tamari. Add the Sriracha and toss to coat. Roast in the oven until hot and slightly crisp on the outside, tossing once or twice, about 10 minutes.
  • Re-warm the stock until steamy-hot but not simmering. Add the kale and cook just below a simmer until wilted and bright green.
