This healthy dinner option is sure to become a fast mealtime favourite with its rich umami flavour and light, clean taste. Enjoy this wonderfully garnished miso broth, poured over the delicate pairing of poached salmon, bok choy and soba noodles.

Number Of Ingredients 13

1 tbsp vegetable oil
1 inch knob of ginger, peeled, julienned
1 bunch green onions, chopped, white ends set aside
1 clove garlic, minced
1 tbsp miso paste
3 cups vegetable stock
2 4 oz salmon fillets, skin off
6 oz soba noodles
2 tsp sesame oil
4 small baby bok choy, quartered
2 radish, thinly sliced
1 tsp black sesame seeds
sliced green onion

Steps:

  • To preheat the oven, touch Combination two times to select Combo 2 and then press Start/Set.
  • In a medium saucepan, heat vegetable oil over medium heat. Add ginger and green onion whites, cook for 2-3 minutes until ginger begins to soften. Add garlic and cook for another minute. Add miso paste and vegetable stock, bring to a boil then reduce heat and simmer for five minutes.
  • Place salmon in an 8x8 baking dish, pour broth over salmon. Place on wire shelf in the oven in the middle position. Place baby bok choy on glass tray in the bottom position. Set cooking time to 15 minutes and Press Start/Set.
  • Cook soba noodles according to the package. Once cooked, rinse under cold water. Toss soba noodles in sesame oil.
  • Serve salmon and bok choy over soba noodles. Top with broth, radish, black sesame seeds and green onion.

2 3-pound Atlantic salmon fillets, from the center cut
1 tablespoon salt
10 black peppercorns
1 bay leaf
1 small onion, quartered
1/4 cup sliced carrot
1/4 cup sliced celery
4 sprigs parsley, plus 1/4 cup minced
8 tablespoons unsalted butter, at room temperature
2 tablespoons lemon juice
1/4 teaspoon freshly ground white pepper

Steps:

  • Cut each fillet into six serving pieces. Set aside.
  • Fill a large fish poacher or roasting pan with enough water to cover the fish when it is added later, and bring the water to a boil. Add the salt, peppercorns, bay leaf, onion, carrot, celery and the sprigs of parsley, and simmer for five minutes.
  • Place the butter, lemon juice, white pepper and minced parsley in a mixing bowl. Beat until all the ingredients are well incorporated. Place the mixture on wax paper and roll into the shape of a log. Chill until ready to use.
  • Add the fish pieces to the court bouillon, cover with a piece of cheesecloth and simmer for 10 minutes. Remove the cheese cloth and drain the fish on paper towels. Serve with the maitre d'hotel butter.

1 large baby bok choy, halved lengthwise
olive oil, to taste
salt, to taste
brown rice, cooked, for serving, optional
sesame seed, for garnish

Steps:

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a small bowl, combine the miso paste, honey, rice vinegar, garlic, ginger, and pepper. Whisk until smooth.
  • Place the salmon fillets skin-side down in the center of the prepared baking sheet and brush generously with the miso-honey sauce.
  • Lay the asparagus on one side of the salmon and the baby bok choy on the other side. Drizzle the vegetables with olive oil and season with salt and pepper. Rub the vegetables until evenly coated.
  • Bake for 10-12 minutes, or until the salmon is cooked to your liking.
  • Divide the vegetables and salmon between serving plates, with rice alongside if desired. Garnish the salmon with sesame seeds and serve immediately.

2 (1 1/2-pound) salmon fillets, skin removed
1 cup miso paste
¼ cup sake
½ cup brown sugar
2 tablespoons sesame seeds
1 teaspoon sesame oil
¼ cup water
½ cup prepared soy-ginger salad dressing
3 tablespoons seasoned rice vinegar

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Fill a large skillet with about 1 inch of water and bring to a boil. Poach fish just until cooked on the outside, about 2 minutes per side. Transfer fillets to a broiler pan.
  • In a small bowl, stir together the miso paste, sake, brown sugar, sesame seeds, sesame oil, water, salad dressing and rice vinegar. Spread this over the tops of the salmon fillets.

3 tbsp pale (shiro) miso paste
2 tbsp mirin
1 tbsp sugar
1 tbsp saké (optional)
2 x 100g salmon fillets
half a cucumber
2 tsp rice wine vinegar
1 tsp vegetable oil
pinch caster sugar

Steps:

  • Stir together the miso, mirin, sugar and sake, if using. Place the salmon fillets on a plate or in a medium food bag and cover with the miso marinade. Leave in the fridge for at least 30 mins or, better still, overnight.
  • Heat oven to 200C/fan 180C/gas 6. Lightly oil a baking tray. Use kitchen paper to wipe off the marinade (don't be tempted to wash it off as you will lose some of the flavour). Place the fillets on the baking tray, skin side down. Cook in the oven for 15 mins until the fish flakes easily and is cooked through.
  • Meanwhile, make the cucumber salad. Using a vegetable peeler, shave the cucumber into long, thin ribbons. Whisk together the rice wine vinegar, oil and sugar. Toss the cucumber ribbons in the dressing, then curl them up on two plates. Serve with the salmon and some plain white rice sprinkled with toasted sesame seeds.

1 medium sweet red pepper, julienned
1 small onion, halved and thinly sliced

Steps:

  • In a small bowl, whisk vinegar, honey and 4-1/2 teaspoons miso until smooth. Gradually whisk in 1/3 cup canola oil and sesame oil; set aside. , Spread remaining 4-1/2 teaspoons miso over salmon. Bake at 400° for 12-15 minutes, or until fish just begins to flake easily with a fork., Meanwhile, in a large skillet, heat remaining canola oil over medium heat. ⅓ cup chopped onion
1 clove garlic, minced

¼ wedge lemon
water to cover
1 tablespoon miso paste
¼ cube vegetable bouillon
2 (6 ounce) skin-on salmon fillets
10 baby bok choy
2 carrots, cut into matchsticks
2 ribs celery, cut into matchsticks
1 bunch enoki mushrooms, cut from stalk and separated
1 small bunch watercress
2 green onions, sliced on the bias

Steps:

  • Heat olive oil in a large, deep skillet over medium heat. Add onion and garlic; cook and stir until onion is translucent, about 5 minutes. Season with salt and pepper. Squeeze lemon juice over the onions and add rind in the skillet. Fill the skillet halfway with water; stir in miso paste and vegetable bouillon cube.
  • Place salmon fillet skin-side down in the skillet. Pour in enough water to cover and bring to a simmer, about 4 minutes. Add baby bok choy, carrots, and celery. Continue simmering until salmon flakes easily with a fork, 2 to 6 minutes more.
