This amazing salad recipe was given to me by a friend who used to know someone at the now closed Larry's Markets in the Seattle area. I've added to the recipe a little -- so it's not exactly the same... but better! I take this to every picnic and everyone loves it! May also add diced chicken for a variation.

1 (16 ounce) package angel hair pasta
½ cup sesame oil
½ cup soy sauce
¼ cup balsamic vinegar
1 tablespoon hot chili oil
¼ cup white sugar
1 teaspoon sesame seeds, or more if desired
1 green onion, chopped
1 red bell pepper, diced

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
  • Whisk together the sesame oil, soy sauce, balsamic vinegar, chili oil, and sugar in a large bowl. Toss the pasta in the dressing, then sprinkle with sesame seeds, green onion, and bell pepper. Serve warm, or cover and refrigerate for a cold salad.

Great light dressing to pair with cabbage or romaine lettuce, fresh mandarin oranges, and toasted almonds! Place greens in a bowl and add garnishes. Ladle toasted sesame dressing around salad and toss to coat greens evenly. Sprinkle with 1 teaspoon toasted sesame seeds.

1 (4 ounce) package rice sticks or 1 (4 ounce) package rice vermicelli
4 ounces soft tofu, drained
3 tablespoons white miso (shiro)
2 tablespoons minced fresh ginger
2 tablespoons lemon juice
2 tablespoons canola oil, divided
1 serrano chili, chopped
1 tablespoon dark sesame oil
1 medium Japanese eggplant, trimmed and sliced (1/2 lb.)
1 medium red bell pepper, sliced
1/2 lb snow peas, trimmed
4 ounces shiitake mushrooms, stems removed and sliced (1 cup)
2 tablespoons chopped green onions
1 tablespoon sesame seeds

Steps:

  • Prepare rice sticks according to package directions. Rinse under cold running water. Drain well.
  • Purée tofu, miso, ginger, lemon juice, 1 Tbs. canola oil, and serrano chile in blender or food processor until smooth.
  • Season with salt.
  • Heat sesame oil and remaining 1 Tbs. canola oil in nonstick skillet over medium-high heat.
  • Add eggplant and bell pepper, and cook 4 minutes, or until slightly softened.
  • Add snow peas and mushrooms, and cook 3 minutes more, or until vegetables are crisp.
  • Toss vegetable mixture with rice noodles, green onions, and sesame seeds.

2 garlic cloves, crushed
1tsp ginger
2 sirloin steaks (about 375g), trimmed of all visible fat, then cut into strips
1 1/2 tbsp brown miso paste
320g broccoli, stems thickly sliced, florets left whole
3 wholemeal noodles (132g dry weight)
1 1/2 tbsp brown miso paste
2tbsp lemon juice
3tbsp cider vinegar
2 tbsp ginger finely chopped
1 1/2 tbsp olive oil
1 red onion, finely chopped
2 carrots (150g), cut into matchsticks
4 tomatoes, cut into wedges
1tbsp sesame seeds

Steps:

  • For the salad, simmer the broccoli in a large pan of boiling water for 3-4 mins. Meanwhile, cook the noodles following pack instructions, then drain both and set aside.
  • For the dressing, whisk the miso paste in a large bowl with the lemon juice, vinegar, ginger and oil. Toss with the cooked broccoli, noodles, red onion, carrots, tomatoes and sesame seeds.
  • For the steak, heat a wok or frying pan over a medium heat and briefly stir-fry the garlic and ginger until they begin to colour. Add the steak and stir-fry for a few minutes until brown. Pile half on top of the noodle salad. Add the miso to the wok with 2 tbsp water to lift the ginger and garlic from the pan, then spoon over the meat. Serve half and chill the rest for another day. You can enjoy the leftovers chilled or reheat in the microwave or oven until warmed through. Will keep chilled for two days.

2 tablespoons miso paste
2 tablespoons olive oil
1 tablespoon soy sauce

½ teaspoon fish sauce
1 teaspoon sriracha
1 teaspoon honey
1 lime, juiced
1 cup vermicelli rice noodle, cooked, cooled, and rinsed
3 tablespoons olive oil
2 tablespoons soy sauce
2 teaspoons sesame oil
1 teaspoon fish sauce

1 lime, juiced
2 tablespoons sesame seed
1 red pepper, julienned
2 baby cucumbers, peeled and sliced

Steps:

  • Start by glazing your tofu. In a mixing bowl combine the olive oil, soy sauce, sesame oil, fish sauce, sriracha, honey, and lime juice. Then toss in the cubed tofu and coat to cover each piece. Allow to sit in the glaze for at least 30 minutes.
  • Next, assemble the glazed tofu cubes evenly onto skewers. Preheat your greased grill to medium high, then place the tofu skewers on. Cook for 6-8 minutes, turning as needed, then set aside.
  • To assemble the salad, place the rice noodles in a large mixing bowl. Top with the olive oil, soy sauce, sesame oil, fish sauce, sriracha, honey, and lime juice. Toss the noodles to coat.
  • Next, top with the sesame seeds, red pepper, cucumbers, green onions, and carrot. Toss again to coat evenly.
  • Transfer to a serving platter, then shingle the sliced avocado on top. To finish, place the skewers of miso-glazed tofu on top of the noodle salad and serve with extra limes for squeezing.
  • Enjoy!

In a medium bowl combine all of the sauce ingredients together and whisk. Heat a large pan or wok over medium heat. Once hot, add the oil and mushrooms. Saute for 3-5 minutes, or until the mushrooms let out their juices, stirring frequently. Add the chickpeas to the pan and cook for 2 minutes. Combine the cooked noodles and sauce and mix well.
