4 pieces skinless chicken breast, boned (about 8 ounces each)
Salt and freshly ground black pepper
2 to 3 sprigs fresh finely chopped rosemary
1 tablespoon extra-virgin olive oil
1 sheet puff pastry (11 by 17-inch), (recommended: Dufour)
8 slices Italian fontina cheese, slices should be 2 to 3-inches square and 1/4 to 1/2-inch thick, cut in 1/2
1/2 cup fig preserves
1 egg mixed with 1 tablespoon water, for egg wash

Steps:

  • Preheat oven to 400 degrees F.
  • Season the chicken with salt, pepper and rosemary. Cut each piece of chicken in half across the breast giving you 8 equal portions. Heat the oil in a nonstick skillet over medium-high heat. Lightly brown the chicken on both sides, 5 minutes total. Remove from heat.
  • Line a baking sheet with parchment paper. Cut pastry into 8 pieces. Place a piece of cheese on each pastry square and top with spoonfuls of fig preserves and the chicken pieces. Pinch and seal the dough up and over the meat and cheese, seal with egg wash, flip the pastry packets over and brush the tops with remaining egg wash. Bake 12 to15 minutes, until golden.
  • For entree portions, simply leave chicken breast whole and cut the pastry into quarters. Trim off excess dough and use it to decorate the pastry with small cut outs such as heart shapes.

1 (2 1/2-3 lb) chicken
1 large onion
1 celery rib
1 teaspoon salt
1/4 cup all-purpose flour
1/4 cup water
salt and pepper, to taste
2 cups all-purpose flour
1 teaspoon salt
3/4 cup shortening or 3/4 cup lard
1/4 cup cold water

Steps:

  • Place chicken, onion, celery and salt in a large pot. Add enough water to completely cover the chicken. Bring to a boil; reduce heat and simmer until chicken is tender and cooked through, about 1 hour.
  • Remove chicken from broth and cool enough to handle. Pick chicken off the bones and discard bones.
  • Grease a 9 x 13-inch baking dish.
  • Remove celery and onion from broth. Measure broth and return 3 cups to the pot.
  • In a small bowl, blend 1/4 cup flour with 1/4 cup water to make a smooth paste. Stir into hot broth. Cook 5 to 10 minutes or until broth is thickened. Season with salt and pepper. Pour over chicken.
  • For Pastry:.
  • In a large bowl, combine 2 cups flour and 1 teaspoon salt.
  • Cut in shortening with a pastry blender or two knives until mixture forms coarse crumbs.
  • Sprinkle with cold water and mix until dough hold together and will form a ball.
  • Roll out on a floured board or pastry cloth to about 1/4 inch thickness.
  • Cut into strips and place over the chicken. Bake at 375 degrees F until the pastry is golden brown.

This recipe was given to me by my girl friend Mary, and is DELICIOUS....has a sweet and sour flavor. We ate this chicken with brown rice and a green veggie. The sauce is AWESOME over the rice!!!! YUMMY!!!!

1 can oceanspray jellied cranberry sauce
1 (8 ounce) bottle kraft Catalina dressing

Steps:

  • In 9x13 glass baking dish, mix with a whisk: onion soup mix, cranberry sauce, and catalina dressing.
  • Place chicken in the mixture; then flip chicken, so that it is coated.
  • Bake at 325 degrees for 45-60 minutes.

Cover and simmer for 1 to 1-1/4 hours or until chicken is no longer pink. Drain, reserving 3 cups broth. Discard vegetables. Set chicken aside. When cool enough to handle, remove skin and bones from chicken; discard skin and bones. Coarsely chop chicken (should have about 3 cups total). Place chicken in 2-quart rectangular baking dish; set aside.
  • In same Dutch oven, combine the 1/2 cup flour, the 1/2 cup water, and the pepper. Gradually stir the reserved broth into flour mixture. Cook and stir over medium heat until thickened and bubbly. Pour evenly over chicken in dish.
  • For pastry, in medium bowl, combine the 1 cup flour and the 1/4 teaspoon salt. Cut in shortening until pieces are pea-size. Sprinkle 1 tablespoon of the cold water over the mixture; gently toss with a fork. Push moistened dough to side of bowl. Repeat moistening dough, using 1 tablespoon of the water at a time, until all dough is moistened. Form dough into a ball. On a lightly floured surface, roll dough into 11x6-inch rectangle. Cut lengthwise into twelve 1/2-inch-wide strips. Brush strips with milk. Place six of the strips lengthwise across chicken mixture. Cut remaining strips in half crosswise. Place shorter strips crosswise over longer strips in dish.
  • Bake in a 450 degree F oven for 20 to 25 minutes or until pastry is golden and filling is bubbly. Makes 6 servings.
