2 cups chocolate graham cracker crumbs
5 tablespoons margarine, melted
2 pints fresh strawberries
8 ounces cream cheese, softened
14 ounces sweetened condensed milk
1/2 cup fresh lime juice
1 tablespoon creme de menthe (optional)
1 cup whipping cream
3 tablespoons sugar
1/2 teaspoon vanilla extract

Steps:

  • Combine crumbs and butter in a small bowl. Press firmly on bottom and up side of a 9" pie plate. Refrigerate until firm. Reserving 3 strawberries for garnish, cut off stem ends of remaining berries so they are no more than" tall. Arrange, cut ends down, on crust, refrigerate. Beat cream cheese until smooth. Add sweetened condensed milk; beat well. Add lime juice and optional liqueur; blend well. Pour into prepared crust, covering strawberries. Refrigerate overnight (it will taste great). Whip cream until soft peaks form. Gradually add sugar and vanilla and whip until stiff and glossy. Using a pastry bag with a decorating tip, pipe a lattice design on top of the pie. Garnish with the reserved strawberries and lime slice.

This Mississippi Mud Pie is a rich and indulgent dessert made with flourless chocolate filling topped with whipped cream in a buttery chocolate graham cracker crust - lord have mercy on our waistlines.

15 chocolate graham crackers1
8 tablespoons unsalted butter (melted)
2 tablespoons light brown sugar
½ cup unsalted butter (melted)
1 cup semi-sweet chocolate chips (melted)
½ cup light brown sugar
½ cup granulated sugar
1 teaspoon vanilla bean paste2
¼ teaspoon kosher salt
½ teaspoon espresso powder3
½ cup hot water3
4 large eggs
½ cup Dutch cocoa powder4
1 cup heavy cream
3 tablespoons powdered sugar
1 teaspoon vanilla bean paste
chocolate curls (optional)
chocolate syrup (optional)

Steps:

  • Preheat oven to 350°F.
  • Add graham crackers to a food processor and pulse until they become fine crumbs.
  • Transfer to a bowl and make a well in the crumbs, pour the melted butter into the well and mix to combine. Add the sugar and stir until combined.
  • Press crust mix into the bottom and sides of a 9-inch springform pan5. Using a straight-edge glass will help with this.
  • Place the springform pan on a large baking sheet and bake for 10 minutes.
  • While crust is baking, melt the butter in the microwave on 30-second intervals until fully melted and add to a large mixing bowl.
  • Melt the chocolate chips in the microwave for 30-second intervals, stirring between each one until melted. Add to the mixing bowl along with the sugars, vanilla paste, and salt and whisk to combine.
  • Stir together the hot water and espresso powder and then add to the mixing bowl and whisk to combine.
  • Whisk in the eggs one at a time, making sure no yolk is visible after each addition.
  • Whisk in the cocoa until fully incorporated. The mixture will be slightly runny.
  • Carefully pour the mixture into the prepared pie crust.
  • Carefully transfer to the oven and bake for 40 to 45 minutes. Make sure the springform pan is still on the baking sheet in the oven.
  • Remove from oven and allow to cool to room temperature ( about 1 to 2 hours). Once cooled, prepare your whipped cream by beating together the heavy cream, powdered sugar, and vanilla in a chilled metal bowl until soft peaks form. Then top the pie with the whipped cream recipe and chocolate and serve.6,7,8

1 can (14 ounces) sweetened condensed milk
1/4 cup lemon juice
1 carton (12 ounces) frozen whipped topping, thawed
1 quart fresh strawberries, sliced, divided
2 graham cracker crusts (9 inches)

Steps:

  • In a large bowl, combine milk and lemon juice. Fold in whipped topping. Set aside 1/3 cup strawberries for garnish; stir remaining strawberries into filling. Spoon into crusts. Refrigerate for at least 4 hours before serving. Garnish with reserved strawberries.
