1 tube (8 ounces) refrigerated reduced-fat crescent rolls
11 ounces reduced-fat cream cheese
1/2 cup apricot preserves
2 tablespoons confectioners' sugar
2 cups sliced fresh strawberries
1 cup fresh blueberries
1 cup fresh raspberries

Steps:

  • Unroll crescent roll dough and place in a 15x10x1-in. baking pan coated with cooking spray. Press onto the bottom and 1 in. up the sides of pan to form a crust; seal seams and perforations. Bake at 375° for 8-10 minutes or until golden. Cool completely., In a large bowl, beat cream cheese until smooth. Beat in the preserves and confectioners' sugar; spread over crust. Cover and refrigerate for 1-2 hours. , Just before serving, arrange berries on top. Cut into 20 pieces.

1 (18 ounce) rolls, sugar cookie dough (bake according to pkg directions) or 1 (18 ounce) dessert prepared pizza crust (prebaked)
2 cups ricotta cheese
1/2 cup confectioners' sugar
1/2 cup toasted almond, sliced or chopped
2 tablespoons Amaretto or 1 teaspoon almond extract
2 cups fresh mixed berries (or which ever combination you want)
1/2 cup seedless raspberry jam, heated
non-dairy whipped topping (optional)

Steps:

  • Blend ricotta cheese, powdered sugar, almonds and Amaretto or almond extract; spread over cooled crust, leaving a border around the edges.
  • Top ricotta mixture with berries and brush with warm raspberry jam.
  • Serve chilled or room temperature.
  • If desired, top with whipped topping,.

1/4 cup confectioners' sugar
1/2 cup cold butter. cubed
1/2 cup chopped pecans
1 package (8 ounces) cream cheese, softened
1 egg
1/3 cup sugar
TOPPING:
1-3/4 cups frozen mixed berries, thawed
1/2 cup sugar
2 tablespoons cornstarch
1/4 cup water
2-1/2 cups fresh strawberries, sliced
2 cups fresh blackberries
2 cups fresh raspberries
1 cup fresh blueberries

Steps:

  • In a bowl, combine flour and confectioners' sugar. Cut in butter until crumbly. Stir in pecans. Press into an ungreased 12-in. pizza pan. Bake at 350° for 12-14 minutes or until crust is set and edges are lightly browned. , Meanwhile, in a bowl, beat cream cheese, egg and sugar until smooth. Spread over crust. Bake 8-10 minutes longer or until set. Cool to room temperature., For topping, process mixed berries and sugar in a blender or food processor until blended. In a saucepan, combine cornstarch and water until smooth. Add mixed berry mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. This grilled pizza has all the flavors we love from a classic cheesecake piled onto a grilled pizza crust. It's a show-stopping dessert perfect for all of your summer BBQ's or potlucks!

1 cup warm water
1 teaspoon honey
2 1/4 teaspoons active dry yeast
3 cups all-purpose flour
1 teaspoon salt
1 tablespoon olive oil
8 ounces cream cheese, softened
3/4 cup granulated sugar, divided
1 teaspoon vanilla extract
2 tablespoons fresh lemon juice, divided
1 pint fresh strawberries, stemmed and sliced
1 pint fresh raspberry
1 pint fresh blueberries
4 graham crackers, crumbled
1/4 cup fresh mint leaves, for garnish

Steps:

  • In a small bowl, combine the warm water, honey and yeast. Allow to sit for 10 minutes to proof the yeast. It should be foamy.
  • In a large bowl, combine the flour, salt, olive oil and the yeast mixture. Stir with a wooden spoon until the dough begins to come together. Transfer to a lightly floured work surface and knead by hand until a soft smooth dough forms, about 5 to 8 minutes. Form the dough into a ball and place inside a lightly greased large bowl. Cover loosely with plastic wrap and a damp kitchen towel and allow to rest until doubled in size, for 2 hours.
  • Meanwhile, in a large bowl, cream together the cream cheese and 1/2 cup sugar on high for about 3 minutes. Stir in the vanilla and 1 tablespoon lemon juice until well combined. Chill in the fridge until ready to use.
  • In a separate bowl, toss together the sliced strawberries, raspberries, blueberries, remaining 1/4 cup sugar, and the remaining tablespoon of lemon juice. Allow to sit at room temperature to macerate until ready to use.
  • Once the dough has risen, gently punch it down and then transfer to a lightly floured work surface. Cut into three even pieces and form into balls. Keep them covered with a kitchen towel.
  • Working with one at a time, roll out into a rectangle or a circle. Brush the surface evenly with olive oil.
  • Preheat a large stovetop grill pan or an outdoor grill over medium heat. Once hot, carefully place the pizza dough onto the grill, oil side down. Then brush the top side with oil as well. Cook until the dough begins to puff up slightly and grill marks form, about 5 to 8 minutes. Carefully flip over and continue to grill on the second side for about 3 to 5 minutes. Transfer to a baking sheet and then continue grilling the rest of the pizza dough.
  • Spread the grilled pizza dough with the cream cheese mixture and then add the crumbled graham crackers. Spoon the berries over the top and garnish with fresh mint. Slice and serve immediately.

A big hit at summer parties! I like to buy strawberries, raspberries, and blackberries when they go on sale and freeze them to put in this mixed berry cobbler, but it is also delicious with blueberries, cherries, or even rhubarb or peaches.

6 cups mixed frozen berries, thawed, divided
1 cup white sugar
2 tablespoons cornstarch
2 cups all-purpose flour
2 cups rolled oats
1 ½ cups packed brown sugar
1 teaspoon ground cinnamon
½ teaspoon salt
1 ½ cups unsalted butter, cut into small pieces
2 (8 ounce) packages cream cheese, softened
½ cup white sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Prepare berry filling: Mix 3 cups berries, sugar, and cornstarch in a saucepan over medium-low heat, stirring frequently and crushing berries with the back of a spoon, until mixture is about half liquid, 5 to 7 minutes. Remove from the heat and set aside.
  • Prepare crust: Combine flour, oats, brown sugar, cinnamon, and salt in a bowl. Add butter and cut in with two knives or a pastry blender until mixture is crumbly. Pack 2/3 of the mixture into the bottom of the prepared pan. Set remaining crust mixture aside.
  • Prepare cream cheese filling: Blend cream cheese and sugar with an electric mixer until fluffy. Spread cream cheese mixture over the crust, then sprinkle remaining 3 cups uncooked berries over top. Top with the cooked berry-sugar mixture and crumble the remaining crust mixture over top.
  • Bake in the preheated oven until the top crust is lightly browned, about 45 minutes.
