BLUE CHEESE SOUFFLE
Steps:
- Preheat the oven to 400 degrees F.
- Butter the inside of an 8-cup souffle dish (7 1/2 inches in diameter and 3 1/4 inches deep) and sprinkle evenly with Parmesan.
- Melt the butter in a small saucepan over low heat. With a wooden spoon, stir in the flour and cook, stirring constantly, for 2 minutes. Off the heat, whisk in the hot milk, 1/2 teaspoon salt, 1/4 teaspoon black pepper, the cayenne, and nutmeg. Cook over low heat, whisking constantly, for 1 minute, until smooth and thick.
- Off the heat, while still hot, whisk in the egg yolks, one at a time. Stir in the Roquefort and the 1/4 cup of Parmesan and transfer to a large mixing bowl.
- Put the egg whites, cream of tartar, and a pinch of salt in the bowl of an electric mixer fitted with the whisk attachment. Beat on low speed for 1 minute, on medium speed for 1 minute, then finally on high speed until they form firm, glossy peaks.
- Whisk 1/4 of the egg whites into the cheese sauce to lighten and then fold in the rest. Pour into the souffle dish, then smooth the top. Draw a large circle on top with the spatula to help the souffle rise evenly, and place in the middle of the oven. Turn the temperature down to 375 degrees F. Bake for 30 to 35 minutes (don't peek!) until puffed and brown. Serve immediately.

- Begin by heating the milk, onion, bay leaf, nutmeg and peppercorns in a medium-sized saucepan till it reaches simmering point, then strain the milk into a jug, discarding the rest now. Rinse out the saucepan, then melt the butter in it.
- Add the flour and stir to a smooth, glossy paste, and cook this for 3 minutes, still stirring, until it turns a pale straw colour. Then gradually add the strained milk, whisking all the time, until the sauce is thick and cleanly leaves the sides of the pan.
- Then season lightly and cook the sauce on the gentlest heat possible for 2 minutes, stirring now and then. Next remove the pan from the heat and let it cool slightly, then beat in the egg yolks one at a time. Now crumble 4 oz (110 g) of the cheese into the mixture and stir until most of it has melted - don't worry if some cheese is still visible. Put a kettle on to boil and, in a spanking-clean large bowl, whisk the egg whites to the soft-peak stage, then fold a spoonful of egg white into the cheese sauce to loosen it. Now fold the sauce into the egg white using a large metal spoon and a cutting and folding motion.Divide the mixture equally between the ramekins.
- Put them in the baking tin, place it on the centre shelf of the oven, then pour about ½ inch (1 cm) of boiling water into the tin. Bake the souffles for 20 minutes, then transfer them to a cooling rack (using a fish slice) so they don't continue cooking. Don't worry if they sink a little as they cool, because they will rise up again in the second cooking. When they are almost cold, run a small palette knife around the edge of each ramekin and carefully turn the souffles out on to the palm of your hand, then place them the right way up on a lightly greased, shallow baking tray. They can now be stored in the fridge for up to 24 hours, lightly covered with clingfilm.
- When you are ready to re-heat the souffles, pre-heat the oven to gas mark 4, 350°F (180°C) and remove the souffles from the fridge so they can return to room temperature. Dice the remaining Roquefort into ¼ inch (5 mm) pieces and sprinkle it on top of the souffles, then place them in the oven, on the shelf above centre, for 30 minutes. Then, 2 or 3 minutes before serving, spoon a tablespoon of cream over each souffles and return them to the oven while you seat your guests.
- Serve the souffles immediately on warm plates and garnish each with a sprig of watercress.
TWICE BAKED SPINACH SOUFFLES
The obvious advantage of twice-baked souffles is that they can be made the day before. These spinach souffles reheat perfectly, with a light texture and excellent flavour.

- Stem the spinach, rinse in cold water and lift straight into a large pan.
- Set over moderate heat, cover, don't add extra water, and cook for 2 to 3 minutes until the spinach wilts.
- Drain in a colander, pressing well.
- When spinach has cooled, squeeze firmly to extract excess water and chop finely.
- Heat oven to 350*F.
- Brush 10 small ramekin dishes with melted butter and sprinkle with Parmesan cheese.
- Melt the butter for the souffles in a medium pan, stir in the flour and cook over a moderate heat for a few minutes.
- Slowly add the milk, beating to make a smooth sauce.
- Bring to a simmer and cook for 2 to 3 minutes.
- Add seasoning and a good grating of nutmeg, then remove the sauce from the heat and let it cool slightly.
- Separate the egs, reserving the whites and beating the yolks into the sauce.
- Stir in the spinach, mix well then transfer to a large mixing bowl.
- Beat the egg whites to stiff peaks and fold into the spinach mixture.
- Spoon into the ramekins, filling them level.
- Set the dishes in a large roasting tin.
- Add boiling water from the kettle to a depth of about 1 inch.
- Bake for 20 minutes or until the souffles are well risen.
- Remove the ramekins from the tin, cool for 10 minutes, then loosen the sides and turn out onto a buttered gratin dish--right sides up.
- The souffles can be set aside overnight.
- If the souffles have been chilled, allow them at least 1 hour to come back to room temperature.
- Heat the oven to 400*F.
- Pour the cream over the souffles, coating each one.
- Sprinkle with Parmesan and place in the oven for 15 minutes or until the sauce is bubbling, then serve.

- Preheat oven to 180C. Melt 30gm butter in a small saucepan with garlic, season to taste. Divide mushrooms evenly between two baking-paper-lined oven trays, drizzle with butter mixture, season to taste. Place one tray of mushrooms in oven, roast until tender (10-15 minutes). Process in a food processor until finely chopped and set aside. (Reserve remaining tray of mushrooms to serve.)
- Meanwhile, bring milk to the simmer in a saucepan over medium heat and keep warm. Melt remaining butter in a separate saucepan over medium heat, add shallot and stir occasionally until soft (2-3 minutes). Stir in flour and stir continuously until sandy-coloured (1-2 minutes). Gradually whisk in warm milk, whisking continuously until smooth. Bring to the boil, reduce heat to low-medium and stir occasionally until thick and smooth (4-5 minutes). Remove from heat, stand for 5 minutes, beat in egg yolks and finely chopped mushroom mixture, season to taste. Add parsley and fold in 80gm Roquefort without breaking down cheese. Whisk eggwhites until firm peaks form, fold into Roquefort mixture, then spoon into six 250ml-capacity buttered and floured metal dariole moulds. Place in a roasting pan, fill pan halfway up sides of moulds with hot water, bake until risen and golden (15-20 minutes). Remove from water bath, invert each soufflé into a small shallow buttered ovenproof bowl and set aside u
- Just before serving, divide cream among soufflés, drizzling over and around. Scatter over remaining Roquefort and bake until cream is bubbling and soufflés are golden (10-15 minutes). Roast reserved mushrooms while soufflés are cooking.
- Combine roast mushrooms, herbs, olive oil and vinegar in a bowl, season to taste and serve immediately alongside soufflés.
