"I used apricot preserves to sweeten a basic vinaigrette," says Bobby.

3 tablespoons champagne vinegar
1 heaping tablespoon apricot jam
Kosher salt and freshly ground pepper
1/4 cup extra-virgin olive oil
8 cups mixed baby greens (about 5 ounces)
1/4 cup slightly toasted sliced almonds

Steps:

  • Whisk together the vinegar and jam in a small bowl and season with salt and pepper. Slowly whisk in the olive oil until emulsified.
  • Put the greens in a large bowl, toss with the vinaigrette and top with the almonds.

A friend made me a bag of this treat for Christmas and I had to get the recipe for this! A nice treat for the holidays--a perfect mix of cranberries, almonds, and apricots. Store in the refrigerator.

12 (1 ounce) squares semisweet chocolate, chopped
½ cup chopped dried cranberries
½ cup slivered almonds
½ cup chopped dried apricots

Steps:

  • Line a baking sheet with a sheet of waxed paper.
  • Place chocolate in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes.
  • Combine cranberries, almonds, and apricots in a bowl. Add to melted chocolate and mix until well combined.
  • Spread chocolate onto the prepared baking sheet to a thickness of about 1/4 inch. Place baking sheet in the refrigerator until chocolate has completely hardened, about 1 hour. Break into pieces.

1 teaspoon butter
1 cup steel-cut oats
⅓ cup chopped pecans
⅓ cup slivered almonds
3 cups boiling water

1 ½ tablespoons ground cinnamon
1 teaspoon salt

Steps:

  • Combine 1/2 cup water and wheat berries in a small saucepan; bring to a boil. Cover saucepan, remove from heat, and set aside for wheat berries to soak, about 10 minutes.
  • Melt butter in a 2-quart saucepan over low heat; cook and stir oats, pecans, and almonds in melted butter until golden and fragrant, about 5 minutes. Carefully pour boiling water into nut mixture; add wheat berries and dried apples. Cover saucepan and cook over low heat, without stirring, until wheat berries are tender, about 20 minutes; stir in sugar, cinnamon, and salt.

3 tablespoons butter
3/4 teaspoon salt
1/2 teaspoon ground cinnamon

Steps:

  • Simmer 2 cups water and wild rice in small saucepan 20 minutes. Drain.
  • Preheat oven to 375°F. Butter 2 1/2-quart ovenproof dish. In prepared dish, mix wild rice with remaining 6 cups water. Stir in all remaining ingredients. Cover loosely with foil and bake until grains are tender, water is absorbed and cereal is creamy, stirring occasionally, about 1 1/2 hours.

1 onion, chopped

3 cups chicken stock of canned broth
1/2 cup dried apricots, quartered (about 3 ounces)
1/4 cup dried currants
1/2 cup slivered almonds (about 2 ounces), toasted

Steps:

  • Melt butter in heavy medium saucepan over medium heat. Add chopped onion, ground saffron and cloves and saut&5 minutes. Add rice and stir to coat grains. Mix in chicken stock, dried apricots and currants. Bring to boil. Reduce heat to low. Cover and cook until rice is tender and liquid is absorbed, about 15 minutes. Fluff rice with fork. Add slivered almonds and season to taste with salt and pepper. Transfer to bowl and serve.
