This recipe was created when my baked macaroni and cheese loving husband asked for something more individualized to minimize leftovers. It has been a weekly staple for several years now and our 6 year old now prefers this to traditional baked macaroni.

½ cup orzo
1 ½ teaspoons butter
1 cup shredded Cheddar cheese
¼ cup milk
1 egg, slightly beaten
1 ½ teaspoons Italian seasoning
ground black pepper to taste
¼ cup Italian-seasoned bread crumbs, or to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook orzo in the boiling water, stirring occasionally until cooked through but firm to the bite, about 10 minutes. Drain.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Melt butter in a saucepan over low heat; stir Cheddar cheese into melted butter until cheese starts to melt, 2 to 3 minutes. Add milk, egg, Italian seasoning, and black pepper to cheese mixture; cook, stirring constantly, until cheese sauce is smooth and thickened, about 5 minutes. Stir orzo into cheese sauce until evenly coated.
  • Spoon orzo mixture into ramekins and top each serving with bread crumbs. Place ramekins in a shallow baking dish.
  • Bake in the preheated oven until topping begins to brown, about 30 minutes. Allow 'mock-a-roni' to cool enough to handle ramekins without potholders, about 5 minutes.

3/4 cup raw white rice
14 1/2 ounces broth (any flavor)
2 tablespoons butter or 2 tablespoons margarine

Steps:

  • In medium skillet saute' broken spaghetti pieces in butter, stirring constantly, until the spaghetti begins to brown.
  • Add rice, stirring until the rice is well coated with the butter and the spaghetti browns a little more Carefully pour in broth.
  • Simmer until liquid is absorbed.

Easy cookies! These are very chewy yummy mockaroons. They do not have real coconut in them. Just a few ingredients and you're done.

½ cup butter
1 cup white sugar
1 egg
1 ⅓ cups dry potato flakes
1 ⅓ cups biscuit baking mix
1 teaspoon coconut extract

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
  • In a medium bowl, cream together the butter and sugar until smooth. Stir in the egg and coconut extract. Combine the flour and potato flakes, and stir into the batter until well blended. Drop heaping spoonfuls onto the prepared cookie sheets.
  • Bake for 12 minutes, or until the tops are still white, and the bottoms are light brown. This will insure chewy cookies. Cool for a few minutes on the cookie sheet before removing to wire racks to cool completely.
