This was a favorite recipe of our Mom's for Sunday dinner. We all loved it, and I'm sure you will too. Ground ham is formed into a meatloaf and baked in the oven.

2 pounds ground ham
1 ½ pounds ground pork
2 eggs
1 cup dried bread crumbs
1 cup evaporated milk
⅛ teaspoon salt
⅛ teaspoon ground black pepper
1 cup brown sugar
1 tablespoon mustard powder
¼ cup cider vinegar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the ham, pork, eggs, bread crumbs, evaporated milk, salt and ground black pepper. Mix all together well and form into a loaf. Place loaf into a lightly greased 9x13 inch baking dish.
  • Bake at 350 degrees F (175 degrees C) for 90 minutes.
  • While the loaf is baking, combine the brown sugar, mustard powder and vinegar. Mix well and pour over the loaf in the final 15 minutes of baking.

2 eggs
1 cup milk
1 cup dry bread crumbs
1/4 teaspoon pepper
1-1/2 pound ground fully cooked ham
1/2 pound ground pork
GLAZE:
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/2 teaspoon ground mustard
2 tablespoons water

Steps:

  • In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

1/2 lb hot dog, chopped into very small pieces
1 cup cracker crumb
1 egg, beaten
1 teaspoon salt
1/2 teaspoon ground black pepper
3/4 cup brown sugar
1/2 cup water
1/2 teaspoon dry mustard
1 tablespoon vinegar

Steps:

  • Add all glaze ingredients together until well mixed.
  • Mix all loaf ingredients together until well mixed.
  • Add 1/2 glaze to meat.
  • Grease a 10x4x3 inch loaf pan with cooking spray.
  • Place loaf mixture in pan.
  • Bake at 350 degrees for 45 minutes.
  • Spread glaze over loaf.
  • Bake 15 minutes more.

1/8 teaspoon nutmeg
1/8 teaspoon paprika
BASTING SAUCE:
1/2 cup packed brown sugar

Steps:

  • In large bowl, gently combine all ham loaf ingredients. Form into a loaf; place in shallow baking pan. Bake, uncovered, at 350° for 1 hour. , Then, in small saucepan, combine all ingredients for basting sauce; bring to a boil. Immediately drain any drippings from ham loaf and pour basting sauce over it. Continue baking ham loaf, basting occasionally with pan juices, for 15-30 minutes or until lightly browned.

Famous Western Pennsylvania Ham Loaf. Perfect way to use up left over smoked ham after Christmas or Easter. Be sure to serve it with a generous amount of sauce. We use a hand-held meat grinder that belonged to my husband's great-grandmother - doesn't take long and is somewhat nostalgic.

2 pounds ground smoked ham
2 pounds ground pork
2 cups crushed graham crackers
1 ½ cups evaporated milk
3 eggs, beaten
1 (10.75 ounce) can condensed tomato soup
1 cup brown sugar
½ cup white vinegar
½ cup water
1 tablespoon ground dry mustard

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Line a large baking sheet or jellyroll pan with parchment paper.
  • In a large bowl, mix the smoked ham and ground pork together until thoroughly mixed, and lightly mix in the graham crackers, evaporated milk, and eggs. Form the mixture into two loaves, and place the loaves onto the prepared baking sheet.
  • In a saucepan over medium-low heat, whisk together the tomato soup, brown sugar, vinegar, water, and dry mustard until well combined. Bring the mixture to a boil, stirring to dissolve the brown sugar. Pour about 1 cup of sauce over each ham loaf, reserving remaining sauce.

Central PA specialty, "Ham loaf"'s main ingredient can be hard to find outside of PA. If you can't grind your own ham at home, you might luck out and find a butcher who can for you. The milk and eggs will keep it moist while cooking, and the sauce is hard to beat (never hurts to make extra).

3/4 lb ground pork
2 eggs, beaten
3/4 cup breadcrumbs (until desired consistency)
3/4 cup milk

6 ounces pineapple juice

Steps:

  • Preheat oven to 350 degrees.
  • Mix loaf ingredients together and form into a loaf shape and place in baking dish.

Whenever I order the meat from the meat market, I order ground ham and pork from a local meat market premixed. ½ pound ground pork
½ onion, chopped
2 cups rolled oats
2 eggs
2 ½ tablespoons chopped fresh parsley
1 teaspoon ground mustard
½ teaspoon ground black pepper
1 ½ cups evaporated milk
1 ½ cups brown sugar
¼ cup cider vinegar
¾ cup mayonnaise
¼ cup sour cream
5 tablespoons prepared horseradish
1 tablespoon lemon juice
