MOCK LASAGNA
This easy mock lasagna casserole recipe requires NO layering and uses a mafalde noodle that is similar to lasagna, only cut into much thinner strips.

Steps:
- Preheat your oven or pellet grill to 325°.
- Boil your noodles until they are JUST about al dente. You want to purposely undercook a bit so they don't go too far during baking. Drain well, but do not rinse. Place the noodles into a large 10x13 casserole dish.
- Mix together the ingredients from the "cheese mixture" section along with half of the shredded mozzarella cheese. Spoon this mixture over the noodles and (using tongs) toss the noodles around a bit.
- Place the sauce over the noodles and then top with the remaining 4 cups of mozzarella cheese.
- Bake the casserole for 25 minutes, or until the cheese is melty and the casserole is heated through.
- If you don't want to fire up the oven for this, you can assemble the whole casserole in a large pan and then cover it over low heat until everything is melty.

- In a large skillet over medium heat cook the ground beef, onion, and garlic until brown. Add the tomato sauce, tomato paste, salt, and oregano and stir until well incorporated. Cook until heated through.
- In a large bowl mix together the cottage cheese, grated Parmesan cheese, and shredded mozzarella cheese.
- Spoon a layer of the meat mixture onto the bottom of the slow cooker. Add a double layer of the uncooked lasagna noodles. Break to fit noodles into slow cooker. Top noodles with a portion of the cheese mixture. Repeat the layering of sauce, noodles, and cheese until all the ingredients are used.
- Cover, and cook on LOW setting for 4 to 6 hours.

CRESCENT ROLL LASAGNA
My mom used to make this crescent roll lasagna for us and everyone loved it. It's a fast, yummy alternative to normal lasagna and our most often requested recipe at potlucks. My husband loves spicier food so for him I put in more seasoning to make the meat pop. You can make it ahead of time; just refrigerate covered for up to 3 hours and then increase baking time to 25 to 30 minutes.

- Preheat the oven to 375 degrees F (190 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir ground beef and sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Add onion, tomato paste, garlic, parsley, basil, oregano, salt, and pepper. Let simmer, uncovered, for 5 minutes.
- Combine cottage cheese, Parmesan cheese, and egg in a bowl for filling.
- Unroll 1 can of crescent rolls on an ungreased 15x13-inch cookie sheet and press the edges together to seal. Spread 1/2 of the meat mixture on top, to within 1 inch of the edge of the dough. Top with cheese filling. Spoon remaining meat mixture carefully on top. Place mozzarella cheese slices on top of the meat.
- Unroll remaining crescent can and place dough on top, being careful to overlap the edges by about 1/4 inch. Pinch the edges to seal to prevent leaking. Brush dough with milk; sprinkle on sesame seeds.
- Bake in the preheated oven until golden, 20 to 25 minutes.

An old family recipe that I've done some tweaking to. A simple and delicious way to get a "Lasagna" on the table in a fraction of the time.

- Place noodles in 2 quart casserole, add butter.
- Mix in cream cheese and cottage cheese.
- Add salt and pepper to taste.
- Saute onions and green peppers until glossy and translucent.
- Add ground beef and brown lightly.
- Add tomato sauce to meat mixture and heat until bubbly.
- Pour meat mixture over noodle mixture and spread to cover.
- Sprinkle grated cheddar on top of meat mixture.
- Bake in 350 degree oven for 35 minutes.
"MOCK" LASAGNA
My friend made this using tortellini's. I revamped it to our tastes. It is so quick and easy. Nice if you want lasagna but don't have time to make it. You may not use all the ravioli, but 1 1-lb bag was not enough for me. Can use cheese or spinach filled for a vegetarian version.

- Preheat oven to 350 degrees.
- In bowl mix cooked hamburg, spaghetti sauce, mushrooms, egg and 1/2 cup parmesan cheese.
- Spread 2 tablespoons of sauce mixture on bottom of 9x13 pan.
- Add a layer of ravioli. Can do a single layer or can overlap them.
- Layer 1/3 of sauce mixture over ravioli.

- In a large skillet, cook beef and onion over medium heat until meat is no longer pink, breaking meat into crumbles; drain. Sprinkle with salt and 1/4 teaspoon pepper; set aside. , In a large bowl, combine the pasta, 3 cups mozzarella cheese, cottage cheese, eggs, Parmesan cheese, parsley and remaining pepper. Transfer to a greased shallow 3-qt. or 13x9-in. baking dish. Top with beef mixture and spaghetti sauce (dish will be full). , Cover and bake at 350° for 45 minutes. Sprinkle with remaining mozzarella cheese. Bake, uncovered, until bubbly and cheese is melted, 15 minutes longer. Let stand for 10 minutes before serving. Freeze option: Sprinkle casserole with remaining mozzarella cheese. Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary until heated through and a thermometer inserted in center reads 165°.
