MASCARPONE AND GRAPE PUFF PASTRY BITES
Steps:
- Preheat oven to 400 degrees F.
- Unfold puff pastry and cut into 3 equal pieces along the fold. Roll each sheet out slightly. Using a 2 1/2-inch cutter, cut 4 rounds out of each strip, giving you 12 rounds total. Using a 1 1/2-inch cutter, press into each round, making a solid indentation without cutting completely through the pastry.
- Place rounds on a baking sheet lined with parchment paper and top with a baking rack. This will keep the rounds uniform and even as they puff up during baking. Bake until rounds are golden, about 20 to 25 minutes. Transfer to a rack to cool slightly, about 5 minutes.
- Using the tip of a spoon, carefully remove the inner circle of the puff pastry creating a nest. Fill each nest with 1 teaspoon of the bacon bits and top with 2 teaspoons of the mascarpone. Garnish with grape halves and a sprinkle of parsley. Serve on individual plates or a serving platter.
LAMB PUFF PASTRY BITE APPETIZER

Steps:
- Mix garlic, salt, pepper, cumin, coriander, and allspice together in a bowl; add lamb. Form lamb mixture into 10-inch logs the thickness of hot dogs.
- Whisk egg and water together in a small bowl to make egg wash.
- Lay puff pastry sheets on a lightly floured work surface; roll gently to smooth the creases. Slice pastry into 10x4-inch strips. Brush egg wash over pastry. Place 1 lamb log on each strip of pastry; wrap dough around lamb and pinch edges to seal. Wrap in plastic wrap and chill for 1 hour.
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Remove plastic wrap and slice each piece of pastry into 8 pieces with a sharp knife. Arrange in a single layer on the lined baking sheet. Brush each piece with egg wash.
- Bake in the preheated oven until golden brown, about 20 minutes. Serve with tzatziki sauce.

- Preheat broiler. Combine lamb with green onion, mint and garlic in small bowl. Season with salt and pepper; mix well. Form lamb mixture into two 1-inch-thick patties. Season patties with salt and pepper. Broil patties until brown, about 4 minutes. Turn patties and broil second sides until brown on top but still pink in center, about 4 minutes. Spread 1 1/2 teaspoons chutney over each. Continue broiling until chutney bubbles slightly, about 1 minute longer. Transfer patties to plates.

- In a large pot, combine the ground lamb, onion, chilies, soy sauce and Worcestershire sauce. Season with ginger and garlic pastes, white pepper, cinnamon, cardamom and cloves. Cook, stirring occasionally, over medium heat until the meat is evenly browned and the onions are tender, about 15 minutes. Mix in cilantro, cover and set aside.
- Preheat the oven to 375 degrees F (190 degrees C). Lay sheets of puff pastry out on a lightly floured surface. Cut each one into 9 squares and roll out to 1/4 inch thickness. Spoon about 1 1/2 tablespoons of the meat mixture into the center of each square. Brush the edge with water, fold corner over to form a triangle, and press to seal. Do not overstuff the triangles, or they will burst in the oven. Place the patties onto a foil lined baking sheet leaving at least an inch between each one. Brush the tops lightly with beaten egg.
- Bake for 12 to 15 minutes in the preheated oven, or until golden brown all over. Serve hot for best flavor.
