Buy shelled and deveined shrimp, and this recipe is as fast as dinner gets. Be sure to zest the lemons before you juice them.

6 tablespoons good-quality olive oil
1 tablespoon coarse salt, plus more for boiling water and seasoning
1 1/2 pounds dry linguine
6 tablespoons (3/4 stick) unsalted butter
3 tablespoons (about 9 cloves) minced garlic
25 to 30 large shrimp (about 2 pounds), shelled and deveined
3/4 cup minced fresh flat-leaf parsley
1/2 teaspoon freshly ground pepper, plus more for seasoning
1/2 cup freshly squeezed lemon juice (about 4 lemons)
1/4 teaspoon crushed red-pepper flakes
1/2 lemon, sliced thinly into half-rounds, plus grated zest of 1 lemon

Steps:

  • Drizzle 1 tablespoon olive oil into boiling salted water. Add linguine, and cook according to the directions on the package, 7 to 10 minutes.
  • While the pasta is cooking, place the butter and the remaining 5 tablespoons olive oil in a large, heavy-bottomed pot set over medium heat. Once butter has melted, add the garlic and saute until lightly brown, about 2 minutes, being careful not to let it burn. Add the shrimp, parsley, salt, and pepper, and saute, stirring occasionally, until the shrimp have just turned pink, about 5 minutes. Turn off the heat.
  • When the pasta is done, drain the cooked linguine, and add immediately to the shrimp. Add the lemon juice, pepper flakes, lemon slices, and lemon zest. Toss well, season to taste, and serve immediately.

Steps:

Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.
  • When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

  • Prepare linguine according to directions on package. In large skillet heat olive oil. Add garlic, onion, and red pepper and saute until soft. Add shrimp and cook until firm, about 5 minutes.   • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink. Transfer the linguine to a large mixing bowl.
  • Heat the olive oil and butter together in large skillet over medium heat until the butter is melted. Cook and stir the garlic in the butter and oil for 2 to 3 minutes. Add shrimp and cook for 4 to 5 minutes, stirring frequently. Stir in the wine, lemon juice, red pepper, basil, and salt and cook another 1 minute. Mix in the tomatoes and cook 1 minute more; remove from heat and transfer mixture to the bowl with the linguine. 12 jumbo shrimp, peeled and deveined
12 large sea scallops, tough foot muscles removed
Freshly ground pepper
3 1/2 tablespoons unsalted butter
2 cloves garlic, minced
2 tablespoons fresh lemon juice, plus lemon wedges for garnish
1/2 cup dry white wine
1/4 cup torn fresh basil
2 tablespoons chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs.
  • Meanwhile, heat a large skillet over medium-high heat. Pat the shrimp and scallops dry, then season with salt and pepper. Add 1 1/2 tablespoons butter to the pan and cook the shrimp until golden on one side, about 3 minutes. Turn the shrimp and add half of the garlic; cook until the garlic is fragrant but the shrimp are still translucent, 1 to 2 more minutes. Transfer the shrimp to a plate.
  • Add the scallops to the skillet and cook until golden on one side, about 3 minutes. Turn the scallops, add the remaining garlic and cook 1 to 2 more minutes. Add the lemon juice and wine and bring to a boil, scraping up any browned bits with a wooden spoon. Cook until the sauce is reduced by half, about 3 minutes. Return the shrimp to the pan, then add the basil and the remaining 2 tablespoons butter; season with salt and pepper.
  • Drain the pasta and transfer to a large serving bowl. Toss with the shrimp, scallops and sauce; garnish with parsley and lemon.

1 pound dry pasta (I'm using spaghetti)
1/4 cup olive oil
1 stick (8 tablespoons) unsalted butter
12 cloves garlic, sliced
2 pounds shrimp, peeled and deveined
1 cup liquid (I'm using white wine)
2 lemons, juiced
2 tablespoons chile flakes, optional
2 tablespoons chopped fresh parsley, optional

Steps:

  • Bring a pot of water to a boil and add 2 tablespoons salt . Add the spaghetti, give it a stir and cook until al dente according to the package instructions.
  • Meanwhile, heat a large saute pan over medium heat. Add the oil, butter, garlic and a pinch of salt and sweat the garlic for 2 minutes. Add the shrimp, season with salt and pepper and cook, stirring, 1 minute. Add the wine, lemon juice and chile flakes if using and cook until the shrimp are just cooked through, 3 to 5 minutes.
  • Reserve some of the pasta water, then drain the spaghetti. Add the spaghetti and a little of the reserved pasta water to the pan with the shrimp and toss to combine. Toss in the parsley if using and serve.

SUMMER SHRIMP SCAMPI WITH LINGUINI

I adapted this dish from a Tyler Florence recipe one evening while trying to come up with a way to use an abundance of fresh basil and tomatoes from my garden. I had made a batch of fresh pesto with toasted pine nuts the day before. You can make your own or use ready made from the grocers. AND I used large frozen shrimp (lets face it, most grocers more than 25 minutes from the ocean only sell frozen anyway!). The combination of shrimp and tomatoes with a little garlic and basil seemed like a natural for a summer evening dinner. Add a little toasted sour dough garlic bread. My family polished off the whole platter.

1 lb linguine
4 tablespoons butter
4 tablespoons extra virgin olive oil
1 large shallot, finely diced
5 garlic cloves, sliced thin
1/4 teaspoon red pepper flakes

2 cups grape tomatoes, quartered
1/2 cup white wine
1/2 cup basil pesto
1 lemon, zested & juiced

Steps:

  • For the pasta, bring a large pot of water to boil. When it comes to a boil add a couple tablespoons salt and the linguini. Stir to separate pasta, cover & cook 6-8 minutes or until not quite done. Drain the pasta & reserve about a cup of the liquid.
  • If using frozen shrimp, defrost them in a strainer under cold running water.
  • Meanwhile in a large skillet, melt 2 tablespoons of butter in 2 tablespoons olive oil over medium-high heat. Saute the shallots, garlic, and red pepper flakes until the shallots are translucent, about 3 to 4 minutes. Season the shrimp with salt & pepper; add them to the pan and cook til they have heated through (or turned pink), about 2-3 minutes. Remove shrimp from the pan; set aside and keep watm. Add the wine, pesto and lemon juice and bring to a boil. Add 2 tablespoons of butter. When the butter has melted, return the shrimp to the pan along with the linguini & reserved pasta water. Toss well and season with salt and pepper . Top with lemon zest and serve immediately.

6 tablespoons butter
1 tablespoon minced garlic
1 cup heavy whipping cream
½ cup chopped parsley

¾ cup grated Parmesan cheese
salt to taste
ground black pepper to taste
1 (16 ounce) package linguini pasta

Steps:

  • Cook pasta until al dente according to package directions.
  • While linguine is cooking, melt butter or margarine in a large skillet. Add garlic, and saute briefly to release flavor. Add cream; heat just to boiling, stirring frequently. I've been buying a well known frozen dinner bag that's absolutely fantastic, but rather expensive. So I checked the ingredients, searched scampi recipes online, and decided to create my own by adding, subtracting, and tweaking all of them. This is my first!!

1 (16 ounce) package linguine pasta
2 tablespoons butter
1 ½ tablespoons olive oil
½ cup chopped red bell pepper
½ cup chopped yellow bell pepper
6 cloves garlic, sliced
48 large shrimp - peeled, deveined, and tails removed
½ cup dry white wine (such as Chardonnay)
1 teaspoon lemon juice
¼ cup clam juice
2 tablespoons butter
1 ½ tablespoons olive oil
2 tablespoons heavy cream
1 ½ teaspoons crushed red pepper flakes, or to taste
3 tablespoons chopped fresh parsley
1 teaspoon sea salt

Steps:

Mix in 2 more tablespoons of butter and 1 1/2 tablespoons of olive oil, and return the shrimp to the skillet. Stir in reserved pasta cooking water, cream, red pepper flakes, parsley, and sea salt. Add the cooked linguine, and toss lightly with the shrimp and sauce in the skillet. Simmer the mixture over medium-low heat for 5 minutes to let the pasta absorb some of the sauce, and serve hot.

Scampi are tiny, lobster-like crustaceans with pale pink shells (also called langoustines). Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations. This classic recipe makes a simple garlic, white wine and butter sauce that goes well with a pile of pasta or with a hunk of crusty bread. However you make the dish, once the shrimp are added to the pan, the trick is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds with the texture of tires.

1 lb shrimp, peeled and deveined
1 tablespoon salt
1 tablespoon pepper
1 tablespoon red chili flakes
3 cloves garlic, minced
6 oz butter, melted
1 tablespoon lemon juice
½ cup white wine
8 oz linguine
fresh parsley, to garnish
red chili flake, to garnish

Steps:

  • Preheat oven to 400˚F (200˚C).
  • In a medium-sized casserole pan, combine shrimp, salt, pepper, red chili flakes, garlic, butter, lemon juice, and white wine.
  • Bake for 10-13 minutes, or until shrimp turns pink and is fully cooked.
  • Bring 4 quarts of water to a boil, add salt to taste, and cook linguine pasta al dente according to package directions, stirring occasionally.
  • Strain linguine and combine with shrimp until pasta is fully coated in white wine scampi sauce.
  • Garnish with chopped Italian parsley.
