VEGAN TURKEY
A vegan turkey made with vital wheat gluten and chickpeas or tofu.

Steps:
- Add 1 1/2 cups chickpeas, 1 cup broth, 2 tbsp nutritional yeast, 2 tbsp melted coconut oil, 2 tsp poultry seasoning, 2 tsp soy sauce, 1/2 tsp salt, 1/4 tsp garlic powder, and 1/4 tsp onion powder to a food processor or blender.
- Blend for about 30 seconds until you have a thick liquid. (It's okay if there are still a few chunks of the beans in it.)
- Pour the liquid into a glass bowl (gluten will stick to plastic) and sprinkle 3/4 cup of gluten flour over it and fold it in with a silicone spatula.
- Sprinkle the remaining gluten flour over it and continue to fold it in. Once it gets firm, use your hands to knead the dough for about 30 seconds until all of the gluten is incorporated.
- Form the dough into one large loaf and wrap it tightly and completely in foil.
- Place the wrapped "turkey" in a large steamer basket, cover, and steam for 1 hour. (You can now eat the "turkey" or you can baste and bake it for more flavor.)

This very old fashioned sandwich spread is posted for lovers and users of Velveeta-or in Australia, Kraft processed cheese in the blue box. This is amazingly popular when discovered amongst a platter of assorted sandwiches!

- Grate cheese and onion, crumb bread, chop tomatoes.
- Cook all ingredients in a saucepan for 10 minutes stirring constantly.

- Pour the hot water over the rolled oats. Add the rest of the ingredients. Oil a baking pan and shape the mixture in the form of turkey, using stalks of celery for the legs and shaping the mixture around them. Use small oblongs of the mixture for wings. Pat oil over the outside and bake in a moderate oven until done in the middle, probably 45 minutes. Loosen with a spatula and remove to a meat platter. Garnish and serve hot.

- Spread in 9x13 glass baking dish.
- Bake 1/2 hour at 350 covered with aluminum foil.

SMOKED TURKEY
This is an easy to make recipe. I've tried numerous others using colas, fancy pans, etc., but none come out near as good as this. Keeping it simple is the best way. Be sure to use a high-quality charcoal, so that it will burn for a long time. Turkey will be moist tender and smoky!

Steps:
- Place the charcoal into the bottom pan of the smoker. Light the coals and wait for the temperature of the smoker to come to 240 degrees F (115 degrees C). Lightly oil grate.
- Rinse turkey under cold water, and pat dry. Place hickory chips into a pan with water to cover.
- Place turkey onto the prepared grate. Add 2 handfuls damp chips at start of cooking, then a handful every couple of hours during the cooking process. Leave the lid on - DO NOT keep looking at the turkey, or you will let the heat out! Continue smoking until the internal temperature of the turkey reaches 165 degrees F (74 degrees C), or keep going until the coals die out.
