2 ½ limes, rind removed
7 fluid ounces sweetened cream of coconut (such as Coco Lopez®)
2 ½ (1.5 fluid ounce) jiggers white rum (such as Bacardi®)
5 sprigs fresh mint leaves
2 mint sprigs, for garnish
2 lime wedges, for garnish

Steps:

  • Blend the ice, limes, cream of coconut, rum, and mint leaves together in a blender until smooth. Pour into two glasses and garnish each with a mint sprig and lime wedge as desired.

This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

10 fresh mint leaves
½ lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 ½ fluid ounces white rum
½ cup club soda

Steps:

  • Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

3 cups water
3 oz red cabbage, julienned
1 cup sugar
½ cup lime juice
1 ½ cups water
10 mint leaves
2 tablespoons white rum

Steps:

  • Add water and red cabbage to a medium-size pot. Bring the water to a boil, then strain the cabbage in a sieve over a bowl to reserve the blue liquid.
  • Pour the strained blue water into an ice tray. You will be left with 1 cup (235 ml) of blue water. Reserve the water and freeze the ice tray for 6 hours, or overnight.
  • Add the reserved blue water to a pot with the sugar and bring to a boil until the sugar has dissolved. Set aside.
  • Combine the lime juice with 1½ (355 ml) cups of water and stir to combine. Pour the lime mixture into an ice tray and freeze for 6 hours, up to overnight.
  • Add the blue ice cubes to a blender and blend until finely crushed. Put the crushed blue ice in a glass.
  • Wash the blender well.
  • Add the lime ice cubes and 8 mint leaves. Blend until finely crushed. Put the crushed lime and mint ice on top of the blue ice.
  • Slowly pour the white rum and blue simple syrup. Top with a sprig of mint.
  • Enjoy!

1 cup boiling water
1 cup fresh mint leaves

2 cups cold water
1 cup grapefruit soda
1 cup rum or additional grapefruit soda
EACH SERVING:
2/3 cup grapefruit soda
GARNISH:

Steps:

  • In a small bowl, dissolve gelatin and sugar in boiling water; add mint leaves. Cover and steep for 20 minutes. Press through a sieve; discard mint. 1/4 cup butter, melted
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
2/3 cup sugar
zest and juice from 1 large lime
2 Tbsp. finely chopped fresh mint
2 cups thawed COOL WHIP Whipped Topping, divided

Steps:

  • Mix pretzel crumbs and butter; press onto bottom of plastic wrap-lined 9-inch round pan. Freeze until ready to use.
  • Beat cream cheese, sugar, lime zest, juice and mint in medium bowl with mixer until blended. Whisk in 1-1/2 cups COOL WHIP; spoon over crust.
  • Freeze 4 hours or until firm. Serve topped with remaining COOL WHIP.

I take absolutely no credit for this. This is right from the Kraft website, but it looked so good and so easy I had to pass it on. Haven't made it yet, but have had similar recipes so I know it will be good. Salty, tangy, and sweet and the way it comes out of the round pan is so pretty and unique. Just a great summer dessert.

1 cup finely crushed pretzel
1/4 cup butter, melted
1 (8 ounce) package cream cheese, softened
2/3 cup sugar
1 lime, zested and juiced
2 tablespoons of fresh mint, fine chopped
2 cups whipped topping, thawed (Cool Whip)

Steps:

  • Pretzels -- I just crushed mine in a mini food processor, but using a baggie and a mallet or rolling pin works just as well. Just make sure to end up with a fine texture.
  • Crust -- Use a 9" round pan for this recipe and line with plastic wrap. Then in a small bowl, mix the pretzel crumbs and butter. Press onto the bottom of the pan. I like to use the bottom of a glass to press the crust down good. Freeze until ready to use.
  • Filling -- Beat the cream cheese, sugar, zest, juice and mint with a mixer until well blended. Then fold in 1 1/2 cups of the whipped topping. Spread it over the pretzel crust and use a spatula to smooth out the top.
  • Freeze -- At least 4 hours.
  • Serve -- The plastic wrap makes it easy to lift right out of the pan and slide on to a plate. Let it set 10-15 minutes to soften a little and then top with the remaining whipped topping in the center, a fresh lime slice and a sprig of mint for the perfect summertime dessert.
  • ENJOY!

1 cup mint leaf
1 (12 ounce) can limeade
3 cups water
2 limes
1/2 cup sugar
12 ounces bacardi rum
club soda

Steps:

  • Place sugar and 1 cup water in saucepan, bring to a boil and stir until sugar is dissolved. Remove from heat and cool.
  • Place mint leaves in a bowl with the juice of 1 lime and a sprinkling of sugar and using a muddler or the end of a wooden spoon/rolling pin/etc mash the leaves up until they are all mushed up.
  • Combine the sugar syrup, limeade, remaining water, mashed mint leaves/lime juice, the juice form the other lime and the rum in large bowl. Cut up the limes and toss into the mixture.
  • Pour the mixture into a resealable gallon size freezer bag and allow to freeze.
  • When ready to serve use a ratio of 1:1 of slush and club soda. You can add ice cubes to help it stay cool --
  • **Use the limeade can to measure out the rum**.
