JAMAICAN RUM-GLAZED BBQ PIG'S TAIL RECIPE BY TASTY

Steps:
- Blend together ingredients for green seasoning.
- Add pig's tail to pot of boiling water for 20 minutes to rinse.
- Add blended green seasoning to a second pot of boiling water and then re-add pig's tail to water. (You will be boiling the pigs tail twice in total)
- Remove pig's tail from the water after 15 minutes ensuring not to rinse them off the second time.
- Heat BBQ grill to 350°F (180°C) or set oven to 350°F (180°C).
- Combine the BBQ sauce, ketchup, mustard, brown sugar, rum, garlic, ginger, Worcestershire sauce, and mustard in a medium bowl.
- If using a BBQ grill, cook pig's tail on each side for 3 minutes and then add the sauce and again leave each side for 4 minutes until the fat has somewhat melted and is dark and sizzling.
- If using oven, cover pig's tail with foil and bake for 6 minutes without sauce. Brush BBQ sauce onto pig's tail, making sure both sides are covered completely in sauce. Leave for another 5 minutes, still covered with foil, and then for another three minutes without the foil to achieve a dark crispness on the outside.
- Best served hot!

Steps:
- Wrap each dog with one slice of streaky bacon, spiralling it down the whole length of the dog.
- Secure with cocktail sticks.
- In a small bowl, mix together the ketchup, chili sauce, mustard and onion until well blended.
- Cook the dogs over hot coals for 7-10 minutes, basting with the sauce and turning from time to time, until the bacon is browned and crisp.
- Serve any remaining sauce with the dogs.

Steps:
- Combine olive oil, balsamic vinegar, Dijon mustard, minced ginger, minced garlic, cayenne, 1/4 teaspoon salt, and white pepper in a pint-sized jar with a lid. Place the lid on the jar and shake the ingredients until well blended. Taste and adjust seasoning, if desired. Place container in the refrigerator until ready to use.
- Clean grates of an outdoor grill and preheat to medium-high, about 10 minutes, or as the manufacturer recommends.
- When grill is ready, grease grates using tongs to hold a paper towel saturated with vegetable oil.
- While the grill is heating, combine smoked paprika, granulated garlic, 1/4 teaspoon salt, and black pepper in a small bowl.
- Sprinkle both sides of pork slices with dry spice mixture and allow to stand at room temperature until the grill is ready.
- Place seasoned pork slices on the grill and do not touch for about 2 minutes. Using tongs, flip the slices and continue to grill until grill marks form and the pork reaches an internal temperature of 145 degrees F (62 degrees C), an additional 2 to 3 minutes. Remove from the grill and set aside.
- Place peach slices across the grate and grill until grill marks form, 2 to 3 minutes per side. Add to the reserved grilled pork slices.
- Make a bundle of kale leaves and slice across into 1/8-inch slices. Place sliced kale and carrots in a large mixing bowl. Add grilled pork slices and grilled peaches, and toss with desired amount of dressing (see note).
- Arrange salad on plates, and sprinkle 1/4 cup blueberries on each plate.

- Place 20 pounds charcoal in pork cooker. Pour 1 quart charcoal lighter fluid over top, and ignite. Let burn until charcoal has turned ash - grey . Place heavy gauge wire, about the size of pig , over pork cooker, 13 inches from coals.
- Place pig flat , skin side up, on wire surface. Close lid of cooker; cook at 225° for 6 hours, adding additional lighted coals as needed to maintain temperature in cooker.
- Place a second piece of wire over pig, sandwiching pig between the 2 layers of wire. Turn pig over; remove wire from top. Insert meat thermometer in thigh; do not touch bone.
