My momma makes the best (and easiest!) deep-dish macaroni and cheese. It's like a baked mac 'n' cheese pie with a combination of smoked Gouda, pepper Jack, mozzarella, cottage cheese, and more. It's one of our family's favorite dishes and a holiday must-have.

3 tablespoons unsalted butter, plus more for greasing
1 teaspoon kosher salt, plus more for boiling
16 oz large elbow macaroni
1 cup sour cream
1 cup cottage cheese
2 cups shredded sharp cheddar cheese, divided
1 cup shredded smoked gouda cheese, divided
1 cup shredded pepper jack cheese, divided
1 cup shredded whole-milk mozzarella cheese, divided
1 can cheese sauce, or cream of mushroom soup
½ cup evaporated milk
½ teaspoon black pepper
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon cayenne
2 large eggs, beaten

Steps:

  • Preheat the oven to 325°F (160°C). Grease a 7 x 11-inch (17 x 27 cm) baking dish with butter.
  • Bring a large pot of salted water to a boil. Cook the macaroni according to the package instructions until al dente, then drain and return to the warm pot.
  • Add butter to the macaroni and stir until melted and the noodles are well coated.
  • In a large bowl, stir together the sour cream, cottage cheese, 1 cup cheddar, ½ cup Gouda, ½ cup pepper Jack, ½ cup mozzarella, the cheese sauce, evaporated milk, salt, black pepper, garlic powder, onion powder, and cayenne until well combined.
  • Add the sauce to the pot with noodles and mix until fully coated. Season with more salt and black pepper to taste. Stir the eggs until well incorporated.
  • Pour the macaroni into the prepared baking dish and smooth in an even layer.
  • In a medium bowl, toss together the remaining 1 cup cheddar, ½ cup Gouda, ½ cup pepper Jack, and ½ cup mozzarella cheese. Sprinkle the cheese mixture evenly over the noodles.
  • Cover the baking dish with foil. Bake for 30 minutes.
  • Increase the oven temperature to 425°F (220°C). Remove the foil and bake for another 10 minutes, until the cheese is golden brown. Let cool slightly before serving.

2 cups whole milk
1/2 cup heavy cream, plus more if needed
4 ounces cream cheese
One 16-ounce block sharp Cheddar, shredded
1 1/2 cups extra-sharp Cheddar, cut into 1/2-inch cubes
1 teaspoon granulated garlic
2 large eggs
1/2 cup sour cream

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9- by 13-inch baking dish with butter.
  • Bring a large pot of salted water to a boil, add the macaroni and cook, stirring occasionally, until al dente, about 7 minutes. Strain in a colander, run cold water over the pasta and set aside.
  • Using the same pot the macaroni was cooked in, melt the 1/4 cup butter over medium heat, add the flour and whisk until smooth. While whisking constantly, slowly add the milk and then the cream. This is a completely unpretentious, down-home macaroni and cheese recipe just like my grandma and mom always made. A simple white sauce where you add cheese and a few other flavors with macaroni and a potato chip crust. This recipe makes a lot, I like to make two pans so I can take one to a pot luck and have the other one to keep in the fridge for later. It's an easy recipe to adjust down if you only want to make one pan. If you aren't cooking it right away, just keep the topping separate until you are ready to put it in the oven.

The only mac and cheese recipe you'll ever need- no funny ingredients, minimal effort and grand on taste!

2 cups elbow macaroni
1 cup half-and-half
1 pinch cayenne
salt and pepper
2 cups sharp cheddar cheese
1 tablespoon butter, melted, for the casserole

Steps:

  • Boil the macaroni for 4 minutes or until half-cooked (salt the water!)
  • In a medium saucepan heat the half-and-half with cayenne, salt and pepper. Add macaroni and 1 1/2 cups of the cheese and cook on medium heat until the cheese melts. Pour into a buttered casserole and top with remaining cheese.
  • Bake in a preheated 350F oven for 15 minutes until the cheese melts.

One-Dish Baked Macaroni and Cheese image

I like this recipe because I can mix it together, put it in the oven and not worry about noodles boiling over while taking care of our twins. The timing for stirring the dish while baking isn't critical. This recipe was inspired by some other macaroni and cheese recipes I found on RecipeZaar while looking for something to do with cottage cheese (#251829 and #107973). It's a hit with our kids and my husband enjoys it, too. I use gluten-free noodles, you'll have to adjust the liquid and timing if you use standard wheat noodles. The cottage cheese will liquefy while baking so don't add too much liquid at first. I use a 10" square Corning Ware dish, a slightly larger dish would be better because sometimes it bubbles over a little before I remove the lid.

1 lb low fat cottage cheese
12 ounces elbow macaroni, uncooked bionature gluten-free
2 1/4 cups reduced-fat milk
1/2-1 teaspoon Dijon mustard (optional)
1/2 teaspoon salt
12 ounces sharp cheddar cheese, grated
1 cup corn, cooked (optional)
1 cup cooked broccoli (optional)
1/4 cup parmesan cheese, shredded (optional)

Steps:

  • Heat oven to 375 degrees F.
  • Grease a large covered baking dish.
  • Put the milk, dry noodles, cottage cheese, mustard, salt and half the cheddar cheese in the dish and mix well.
  • Cover and bake for 30 minutes.
  • Remove from oven, reduce heat to 350 degrees F, add rest of cheddar cheese, stir well and return to oven for 15 minutes more.
  • Remove from oven, stir well, mix in optional vegetable, and top with shredded Parmesan if desired.
  • Return to oven without lid and bake about 15 minutes more, until browned on top.
  • Remove from oven and let cool maybe 10 minutes before serving, will be very hot out of the oven.

  • Cook the macaroni according to package directions. Meanwhile, in a large saucepan, melt butter over medium-low heat. Add the flour, salt and pepper; stir until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheese until melted. , Drain macaroni. Add to the cheese mixture; toss to coat.

Pour pasta into strainer to remove water then add it back to the warm pot. Let the heat of the pot steam out any excess water off the noodles. Heat should be turned off.
  • Add in butter to the pot and stir, the the residual heat melt the butter until it is completely dissolved and has coated all the pasta.
  • In a separate bowl add together sour cream, cottage cheese, 1 cup of sharp cheddar, ½ cup gouda, and ½ cup of mozzarella, cheese soup, evaporated milk and all of your seasonings and whisk well. Add the mixture to your pot of al dente noodles and make sure they are fully coated. This is the perfect time to taste the pasta mixture to ensure it is seasoned well. Feel free to add more salt and pepper if needed.
