MY MOM'S CHOCOLATE CAKE



My Mom's Chocolate Cake image

A simple, old-fashioned chocolate cake. Great with a chocolate glaze.

½ cup shortening
½ cup unsweetened cocoa powder
1 cup white sugar
1 egg
1 cup buttermilk
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon vanilla extract
1 ½ cups sifted all-purpose flour
½ cup hot water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.
  • In a large saucepan, melt together the shortening and cocoa. Remove from heat and stir in sugar and egg. Mix buttermilk with baking soda, salt and vanilla, then blend into chocolate mixture. Beat in flour. Stir in hot water. Pour into prepared pan.
  • Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

2/3 cup Crisco (liquid Spry, actually)
1 3/4 cups sugar

Steps:

  • Mix cocoa, soda, and water.
  • Add alternately the spry, sugar, flour, and milk.
  • Put in greased pan (also floured).
  • Start in a cold oven, set for 250°.
  • Finishes baking in about 1 hour.

1 1/2 cups sugar
1/2 cup cocoa
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon baking powder
1/2 cup margarine
1/2 cup coffee
2/3 cup sour milk (add 1 T vinegar and milk to fill 2/3 cup)
2 eggs
1 teaspoon vanilla
1/2 cup margarine
1 lb powdered sugar
1 teaspoon vanilla
1/2 cup cocoa (or to taste)
1/2 cup coffee (or to taste)

Steps:

  • Preheat oven to 350 degrees.
  • Sift together flour, sugar, cocoa, salt, baking soda, cinnamon, and baking soda in a large bowl.
  • Add 1 stick of margarine, 1/2 c of coffee, and 1/3 c of sour milk to the sifted ingredients.
  • Stir by hand until mixed.
  • Add another 1/3 c of sour milk, 2 eggs, and 1 t of vanilla.
  • Beat 3 or 4 minutes with mixer.
  • Pour into lightly greased 9x13-inch baking pan.
  • Bake 20-25 minutes or until a toothpick comes out clean.
  • After cake cools mix together ingredients for the chocolate frosting.
  • In a large mixing bowl, add the stick of margarine and powdered sugar together and add vanilla, cocoa and coffee to taste.
  • Spread frosting on top of cooled cake.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9x13 inch baking pan.
  • Cream the sugar and shortening together until light and fluffy. Add the eggs and mix well. Stir in the cocoa, milk, flour, baking powder, boiling coffee, baking soda and vanilla extract. Mix until just combined. Pour the batter into the prepared pan.

8 tablespoons shortening
2 (1 ounce) squares unsweetened chocolate, melted
2 eggs
1 teaspoon baking soda
1 cup milk
1 cup white sugar
1 ¾ cups all-purpose flour
½ teaspoon salt
2 ½ teaspoons vanilla extract
1 teaspoon instant coffee granules
¼ cup milk
¼ cup unsweetened cocoa powder
6 tablespoons butter
5 cups confectioners' sugar
1 ½ teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 13x9 inch cake pan.
  • Cream together the shortening and the white sugar. Add the melted chocolate and eggs, mix well.
  • Sift the flour with baking soda and salt. Add alternately with 1 cup milk to shortening mixture. Mix in 1 teaspoon vanilla. Pour batter into prepared pan.
  • Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes or until a toothpick stuck into the center of the cake comes out clean. Once cool frost with Coffee Frosting.
  • To Make Frosting: Mix together instant or leftover coffee, 1/4 cup milk or cream, cocoa powder, butter, 1 1/2 teaspoons vanilla extract, and confectioners' sugar until of spreading consistency.

  • In a medium saucepan, combine the sugar with 2 cups of water. Bring to a boil over high heat and stir until the sugar dissolves; then pour into a large bowl. Add the chocolate and butter and let sit, stirring occasionally, until melted and slightly cooled. Stir in the vanilla.
  • Beat the eggs into the chocolate mixture at medium speed until combined. Add the dry ingredients all at once and beat at medium speed until smooth. Divide the batter evenly between the prepared pans and bake for about 25 minutes, or until the top springs back when pressed lightly and a cake tester comes out clean. Cool the cakes in their pans for about 25 minutes, then invert onto a rack to cool completely.
  • Set one cake, right-side up, on a serving platter. Using a metal spatula, spread one-third of the Chocolate Frosting evenly over the cake. Top with the second cake and frost the top and sides with the remaining frosting.
