Number Of Ingredients 11

3/4 pound sliced bacon, diced
1/2 cup chopped onion
1 cup cider vinegar
2 cups water
1-1/2 cups sugar
1 jar (2 ounces) diced pimientos, drained
2 tablespoons Dijon mustard
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • In a large skillet, cook bacon until crisp; remove bacon and set aside. Drain, reserving 2 tablespoons drippings in the skillet. Add onion and saute until tender; remove from the heat. Add the vinegar, water, sugar, pimientos, mustard, salt, pepper and bacon; mix well., Combine cornstarch and cold water; stir into skillet. Cook and stir until mixture comes to a boil. Boil for 2 minutes, stirring constantly. , Serve warm over fresh spinach or mixed greens. Refrigerate leftovers and reheat before serving.

This hot bacon dressing is based on memories of the wilted leaf lettuce salads my mother used to make. I also love this dressing on cobb salads, chef's salads and spinach salads.

Number Of Ingredients 6

1 lb bacon, diced
1/4 cup flour
1 1/4 cups sugar
1/4 teaspoon salt
2 cups water
1 cup balsamic vinegar

Steps:

  • Fry bacon until crispy.
  • Remove bacon to paper towel covered dish to drain and cool.
  • Reserve 1 1/2 teaspoons of the bacon fat.
  • Combine flour, sugar, salt.
  • Mix well with 1/2 cup water, let stand in mixing container.
  • Heat vinegar and remainder of water to hot (do not boil).
  • Add the hot liquid to dry ingredients, stirring well.
  • Add the mixture to the bacon fat still in skillet, and cook to desired consistency. (If gravy like texture is desired, you can bring to a brief boil. Overcooking with cause it to congeal into a thick ball).
  • If desired, you can crumble the bacon you fried and add to salad.
  • Pour over your salad of choice and devour immediately.

8 slices bacon
1 ½ cups white sugar
3 teaspoons cornstarch
½ teaspoon salt
¼ cup water
½ cup white vinegar

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • In a medium bowl, whisk together the sugar, cornstarch and salt, and slowly pour in water and vinegar, whisking constantly.
  • In a medium skillet, add the crumbled bacon and pour the vinegar mixture over it. Cook over medium heat, stirring constantly, until mixture thickens.

A warm bacon dressing that goes perfectly with a spinach salad.

Number Of Ingredients 6

1 beaten egg
1/3 cup vinegar
1/2 cup sugar
1/3 cup flour
2 cups water
1/2 lb bacon

Steps:

  • In a medium skillet, cook bacon until crisp. Remove from pan and drain on paper towel. Crumble when cooled. Leave bacon drippings in the skillet and allow to cool. In a medium bowl, beat egg. Add vinegar, sugar, flour, water, salt and pepper. Add the egg mixture to the reserved drippings in the skillet. Cook over low heat stirring constantly, bring to rolling boil. Take off heat when it has reached desired consistency. When cool, fold in crumbled bacon and serve over your favorite salad.

6 slices bacon, diced
1/2 cup finely chopped yellow onion (sweet onions work well)
vegetable oil
2 teaspoons cornstarch, mixed with
2 teaspoons water
1/2 cup white vinegar
1/2 cup water
1/4 cup sugar
salt and pepper

Steps:

  • Fry bacon until crisp.
  • Remove bacon from pan leaving fat.
  • Set bacon aside.
  • Add onion to bacon fat in pan and cook 5 minutes until onion is soft.
  • Remove onion from pan leaving fat.
  • Set onion aside with bacon.
  • Pour bacon fat into measuring cup and add enough vegetable oil to equal 1/2 cup.
  • Add fat/oil to cornstarch mixture and set aside.
  • Combine vinegar, water, sugar, salt and pepper in small saucepan and heat to a boil.
  • Add cornstarch mixture and cook until thickened about 1-2 minutes.
  • Remove from heat and add bacon and onion.
  • Serve while warm.

Steps:

  • In a skillet over medium heat, cook bacon until crisp. Remove bacon and drain, reserving drippings in skillet. In a small bowl, mix sugar, flour, egg and vinegar until smooth. Stir in water and milk and add to drippings. Crumble bacon and return to skillet. Cook over medium-low heat until thickened. More water or milk may be added until dressing reaches desired consistency. Serve warm.
