Steps:
- Grate 2 teaspoons zest from orange. Remove remaining peel and pith from orange, and discard. Holding orange over a bowl, cut between membranes, allowing segments and juice to fall into bowl. Squeeze juice from membranes into bowl, and discard membranes. Slice segments crosswise. Add zest.
- Pulse half the cranberries in a food processor until finely chopped. Add remaining cranberries, and pulse just until the second addition is coarsely chopped. Add to orange segments and zest, along with pineapple, honey, sugar, salt, and pepper, and gently combine. Cover, and refrigerate overnight (or up to 3 days). Serve chilled or at room temperature.

- In a large bowl, gently mix cranberry sauce, pineapple and strawberries until blended. Refrigerate, covered, 1-2 hours or until cold. Just before serving, stir in walnuts. Freeze option: Do not add walnuts. Freeze relish and walnuts separately in freezer containers. To use, thaw in refrigerator overnight. Stir in walnuts just before serving.

This is a variation on classic, fresh Ocean Spray® cranberry sauce! My grandma has made it for years and people who don't like cranberry sauce request that I make this at our events! - Drain juice from canned pineapple into a measuring cup. Fill the measuring cup with enough water to equal 1 cup liquid altogether.

- Preheat oven to 350°. In a small bowl, mix brown sugar and butter; spread onto the bottom of a greased 13x9-in. baking pan. Top with pineapple slices. Place a whole cranberry in the center of each pineapple; sprinkle remaining cranberries around pineapple., For cake, in a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. - Drain pineapple thoroughly in sieve set over large measuring cup. Add enough water to juices in cup to measure 2 cups liquid. Place liquid in large non-aluminum saucepan. Add cranberries and sugar. Stir over high heat until sugar dissolves and mixture comes to boil. Continue to boil until most berries pop open and mixture is thick, stirring occasionally, about 10 minutes. Remove from heat. CRANBERRY FRUIT RELISH
This fruity relish requires no cooking - all you need is a blender! - Take a blender. Add washed cranberries, Pineapple chunks along with its juice to the blender. Churn in the blender till roughly blended. We want chunky blend and not the smooth blend of berries and pineapple. If some berries are left whole, then it is okay.
- Now take a heavy bottom sauce pan. Add Cranberries +Pineapple crush into the pan. Add packed brown sugar, crushed cloves and 1 cup water to the pan. If you are planning to add a little kick to the relish, then add a fat pinch of chili flakes to it now. This step is totally optional.
- Bring the Pineapple Cranberry Relish mix to a boil. Reduce the heat to medium and cover with a lid. Covering with lid is important since it splatters while cooking. Cook for 10-15 minutes till the relish starts thickening. Keep stirring in between, to avoid burning.
