Even assertive ingredients like puckery-tart cranberries can be tempered by pineapple and honey.

Number Of Ingredients 7

1 navel orange
12 ounces (3 cups) fresh or frozen cranberries
1/2 fresh pineapple, peeled and cut into 1/4-inch dice (about 3 cups)
2 tablespoons honey
1 tablespoon packed light-brown sugar
1/2 teaspoon coarse salt
Freshly ground pepper, to taste

Steps:

  • Grate 2 teaspoons zest from orange. Remove remaining peel and pith from orange, and discard. Holding orange over a bowl, cut between membranes, allowing segments and juice to fall into bowl. Squeeze juice from membranes into bowl, and discard membranes. Slice segments crosswise. Add zest.
  • Pulse half the cranberries in a food processor until finely chopped. Add remaining cranberries, and pulse just until the second addition is coarsely chopped. Add to orange segments and zest, along with pineapple, honey, sugar, salt, and pepper, and gently combine. Cover, and refrigerate overnight (or up to 3 days). Serve chilled or at room temperature.

Steps:

2 cans (14 ounces each) whole-berry cranberry sauce
1 can (20 ounces) crushed pineapple, drained
1 package (14 ounces) frozen unsweetened sliced strawberries, thawed and drained
1/2 cup chopped walnuts

Steps:

  • In a large bowl, gently mix cranberry sauce, pineapple and strawberries until blended. Refrigerate, covered, 1-2 hours or until cold. Just before serving, stir in walnuts. 1 20-ounce can crushed pineapple in its own juice
2 12-ounce packages cranberries
1 1/4 cups sugar
1 cup chopped walnuts
1 tablespoon fresh lemon juice
1/4 teaspoon ground cloves

Steps:

  • Drain pineapple thoroughly in sieve set over large measuring cup. Add enough water to juices in cup to measure 2 cups liquid. Place liquid in large non-aluminum saucepan. Add cranberries and sugar. Stir over high heat until sugar dissolves and mixture comes to boil. Continue to boil until most berries pop open and mixture is thick, stirring occasionally, about 10 minutes. Remove from heat. Mix in drained pineapple, walnuts, lemon juice and cloves. This fruity relish requires no cooking - all you need is a blender! Cranberries, oranges, apples, and pineapple (plus some ginger and nutmeg to jazz it up) make this a great change of pace from the usual cranberry sauce.   • Now take a heavy bottom sauce pan. Add Cranberries +Pineapple crush into the pan. Add packed brown sugar, crushed cloves and 1 cup water to the pan. If you are planning to add a little kick to the relish, then add a fat pinch of chili flakes to it now. This step is totally optional.
  • Bring the Pineapple Cranberry Relish mix to a boil. Reduce the heat to medium and cover with a lid. Covering with lid is important since it splatters while cooking. Cook for 10-15 minutes till the relish starts thickening. Keep stirring in between, to avoid burning.
