MOM'S JOHNNY CAKE

Mom's Johnny Cake image

I remember making this growing up from a handwritten recipe that my mom kept in a plastic sleeve. It's one of the first recipes I learned to make, and along with her banana bread recipe, the first place I learned to 'sour' milk by adding a little lemon juice or vinegar to the milk. Serve with butter and honey and a glass or milk for a great snack, or serve as a side dish to chili, fried chicken, or just about anything that you'd enjoy a hunk of cornbread with! njoy!

Provided by SrtaMaestra

Categories     < 30 Mins

Time 25m

Yield 9 serving(s)

Number Of Ingredients 8

1 cup sour milk
1/2 cup sugar
1 teaspoon baking soda
1 teaspoon salt
1 egg
1 tablespoon lard (we always used vegetable shortening)
1 cup flour
1 cup cornmeal

Steps:

  • Mom's instructions simply say: Mix all ingredients together. Bake at 350 for 20 minutes.
  • I remember making this in a weird little rectangular pan, which I'm sure we greased. I would estimate this to fit in an 8 or 9 inch square pan, Adjust time accordingly, as the 8 inch will make a litte thicker cake. Bake until a toothpick comes out clean--no longer--so it will stay moist.

JOHNNY CAKES RECIPE (HOE CAKES OR FRIED CORNBREAD ...
2018-03-01 This is a great johnny cake recipe, but I must point out that johnny cakes are not the same as hoe cakes. Hoe cakes are closer to a mexican gordita than a johnny cake. They are made from a soft dough that doesnt contain any flour or levening. While they are really different, they both taste great. Reply. Denise says. December 20, 2018 at 10:37 am. • In a bowl, mix together the dry ingredients with a wooden spoon. Add the buttermilk slowly. Mix in the egg, cutting into the yolk with the spoon's edge to help it mix in better. Add the water and fat or oil and stir well. The texture should be like thick soup, so you may need to add more water.
  • I like to fry the cornbread cakes in my grandmother's cast-iron skillet or on a flat iron griddle, but any skillet or grillded will be fine. Heat the skillet or griddle over medium heat and grease it well with the fat of your choice (butter is delicious, but it tends to burn unless you mix it with a little oil). Once the skillet is hot and the fat is sizzling, drop the batter from a 1/8 cup (2-tablespoon) measure into the skillet, in batches if necessary. Fry the cakes until the edges are bubbling and the centers are set, then flip with a spatula to fry them on the other side until they're done. Like with pancakes, you can't say how long it will take, but the second side always cooks faster than the first. If the cakes seem greasy, drain them on paper towels before serving hot.
