WORLD'S BEST PIZZA CRUST
My mom makes the best pizza crust on several continents. It's fast and easy. Excellent as a white pizza or traditional red sauce, any toppings go.

- Dissolve yeast and sugar in water.
- Beat in ½ flour.
- Add salt, oil and rest of flour (add more if needed to make handle-able dough).
- Rise in oiled bowl.
- Place on greased pan.
- Add sauce, cheese, etc.
- Bake at 450 20 -25 minutes (til brown).

- In a large (6 quart) bowl, using a wooden spoon or a stand up mixer, mix yeast, salt, sugar, olive oil and water.
- To the ingredients, mix in flour. There is no need to knead the dough, just be sure that all flour is mixed in.
- Cover the bowl with plastic and let the dough rise for about two hours.
- Because this recipe makes four pizzas, I prefer to freeze a part of the dough for later.
- After the dough rises, cut it into four pieces and wrap it tight into plastic. Place the wrapped dough inside a ziploc bag; remove air out the the bag, seal and freeze.

MOM'S PIE CRUST
The very first thing I learned how to cook! This freezes beautifully; no well-equipped home is without a ball of pie dough in the freezer! Guaranteed to roll!

- Combine flour and sugar into the bowl of an electric mixer. Cut butter into tablespoon pieces; add it to the flour and butter. Use the paddle beater to cut the butter and flour together. Alternatively, this can be done by hand with a pastry blender.
- With the mixer on low speed , or while stirring the mixture with a fork, pour in the cold water. When the dough starts to clump, and before it turns into a ball, stop stirring.
- Lightly knead dough in the bowl until it forms a ball. Divide dough into two parts. Flatten each part into a disk, and chill for about 30 minutes before rolling.

QUICK AND EASY PIZZA CRUST
This is a great recipe when you don't want to wait for the dough to rise. You just mix it and allow it to rest for 5 minutes and then it's ready to go!! It yields a soft, chewy crust. For a real treat, I recommend you use bread flour and bake it on a pizza stone, but all-purpose flour works well too. Enjoy!

- Preheat oven to 450 degrees F (230 degrees C). In a medium bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
- Stir in flour, salt and oil. Beat until smooth. Let rest for 5 minutes.
- Turn dough out onto a lightly floured surface and pat or roll into a round. Transfer crust to a lightly greased pizza pan or baker's peel dusted with cornmeal. Steps:
- Mix flour and salt in medium size bowl.
- Cut in shortening with pastry blender until uniform with pieces no larger than a pea.
- Break egg into measuring cup and beat.
- Add milk to egg to just over 1/2 cup (about 1/2 cup plus a table spoon total milk and egg) stir well.
- Blend egg and milk mixture into flour mixture with a fork until liquid is no longer present.
- Very lightly knead dough and form into a ball (Over working the dough is the most common reason for pie crust failure!).
- Cut Dough in half.
- Roll out and use with your favorite filling. Makes a top and bottom crust. divide recipe in half for a single crust pie.
VALENTINO'S PIZZA CRUST
This is an excellent pizza crust recipe. I have found it is really good when baked on a pizza stone.

- Stir water, sugar and yeast together until dissolved. Add the olive oil and the salt. Stir in the flour until well blended. Let dough rest for 10 minutes.
- Pat dough into pan or on to a pizza stone using fingers dipped in olive oil. If desired sprinkle basil, thyme or other seasonings on crust. Top with your favorite pizza toppings and bake for 15 to 20 minutes in a preheated 425 degree oven.

MOM'S PIZZA CRUST
Steps:
- 1. Set oven to 450 degrees F.
- 2. Put flour, yeast, salt, and sugar into the bowl of a food processor or electric mixer.
- 3. Combine oil with hot water. With machine running, add water a little at a time, pulsing machine on and off, until the dough forms into a ball.
- 4. Keep it going in the machine for just under a minute. (This replaces kneading.)
- 5. Turn out onto a floured board, turn and knead a few times to form a smooth ball. Cover dough with a bowl and let rest for 10 minutes.
- 6. Punch down, roll out into pizza crust shape, and then pop it in the oven.
- 7. Bake in your preheated 450 F oven for 10 to 15 minutes, or until crust is golden and toppings are baked nicely.

- Sprinkle the yeast over the top of the warm water and allow to rest for at least 5 minutes, until yeast is foamy. In the bowl of a stand mixer fitted with the dough hook, combine the bread flour and salt, mixing briefly to blend. With the mixer on low speed, pour in the yeast and water mixture as well as the olive oil. Mix until a cohesive dough is formed and knead on low speed until the dough is smooth and elastic, about 5 minutes.
- Remove dough from the mixing bowl and place on a clean and lightly floured surface. I like to finish hand-kneading the dough. If it is still sticking to your hands (which is possible - I don't weigh my flour so the texture of the dough is a little different every time) add a little more flour and knead into a smooth ball.
- Transfer the dough ball to a lightly oiled bowl, turning once to coat. Cover with a clean kitchen towel and let dough rise until doubled in size, at least 1 hour.
- Press down the dough to deflate it. Transfer the dough to a lightly floured work surface. Divide the dough into 4 equal pieces. Form each piece of dough into a smooth, round ball. Cover with a damp cloth. Let the dough relax for at least 10 minutes but no longer than 30 minutes.
