MOM'S YEAST ROLLS
This is the best bread recipe. Light and fluffy rolls that melt in your mouth. Can be used to make loaves or cinnamon rolls.

Steps:
- Melt margarine in hot water. Add sugar and salt and stir. Add cold water and yeast. Stir to dissolve yeast.
- Add 3 cups flour and mix. Add eggs and 2 1/2 - 3 cups more flour. Mix, cover and let rise until dough doubles in size.
- Punch down and let rise 30 more minutes or until doubles.
- Make walnut size balls of dough. Place about 2 inches apart in well-buttered 9 x 13 inch pan. Bake in a preheated 350 degrees F (175 degrees C) oven for 30-45 minutes. Brush top of rolls with margarine while hot.

MOM'S ITALIAN BREAD

- In a large bowl, dissolve yeast in warm water. Add the sugar, salt and 3 cups flour. Beat on medium speed for 3 minutes. Stir in remaining flour to form a soft dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a floured surface; divide in half. Shape each portion into a loaf. Place each loaf seam side down on a greased baking sheet. Cover and let rise until doubled, about 30 minutes. , Meanwhile, preheat oven to 400°. With a sharp knife, make 4 shallow slashes across top of each loaf. Bake 20-25 minutes or until golden brown. Remove from pans to wire racks to cool.

MOM'S YEAST BREAD
This is the recipe my mom used over and over when I was growing up. I learned how to make yeast bread using this recipe when I was eight years old (no, I had no idea that yeast bread was supposed to be "hard", I just made it!). You can sub in some whole wheat to make it healthier, but I wouldn't use all whole wheat, you'll have hocky pucks instead of bread. My mom didn't use the wheat germ or vital wheat gluten, but I add it for the extra nutrition. You can leave them out if you wish. This recipe will make 2 loaves of bread or 2 dozen rolls. I usually make rolls and bake in 2 8-inch pans. We eat one pan (12 rolls) fresh, and freeze the other pan. Don't be afraid of the preparation time, it includes the rising time, which is time you can be doing other things.

Steps:
- Dissolve yeast and sugar in warm water in large bowl. This usually takes about 5 minutes. If you don't see any bubbles/foaming, your yeast is dead, start over.
- Add the milk, Crisco, salt, wheat germ, vital wheat gluten, and about 4 cups flour. I usually heat the milk and Crisco in the microwave so the Crisco melts, and the milk gets warm all in one step.
- Continue adding flour 1/2 cup at a time until the dough forms a ball, and starts leaving the sides of the bowl.
- Knead the bread, adding flour as needed until the dough is smooth and elastic. I usually knead about 3-5 minutes.
- Let bread rise in a covered bowl in a warm place until double in size (about 30-60 minutes).
- Punch down and form into loaves or rolls and place in a greased and floured pan.
- Let rise about 30 minutes more. Bake at 425 degrees 25-30 minutes, or till the bottom of the bread sounds hollow when tapped.
- Remove from pans and place on racks to cool.
- Butter tops while still warm, if desired. Cool completely before wrapping.

MY MOTHER'S BREAD
Steps:
- Stir the yeast into the warm water and let stand until creamy and foamy, about 10 minutes. Add the yeast mixture to the flour and mix well. Add in the salt. Add as much water as needed, until dough comes together and is smooth. Move to a lightly oiled bowl. Cover with towel and let rise in a warm spot until double in size, about 30 minutes.
- Preheat the oven to 350 degrees F.
- Butter and flour 3 bread pans. Remove risen dough from bowl and punch down. Divide dough and put into prepared pans.
- Bake bread for 45 minutes, until it is blond in color. Lower the oven temperature to 275 degrees F and continue baking for another 45 minutes, or until nicely browned.
MOM'S SPELT BREAD
My mother's wheat allergy means that in our house everything was baked with spelt. This is the bread recipe I grew up on, and I've never seen a spelt bread to equal it. This bread is delicious warm but will slice much more neatly when cooled fully.

- Mix both 3 1/2 cups whole grain spelt flour, 3 cups white spelt flour, water, oil, sugar, yeas, and salt together in a bowl with a spoon until mostly combined. Switch to kneading by hand, adding more white spelt flour if necessary, but not too much. Keep kneading until dough is the texture of your earlobe.
- Place dough on a parchment paper-lined baking sheet in the shape of a loaf and allow to rise until doubled in size, about 1 hour.
- Preheat the oven to 375 degrees F (185 degrees C).
- Bake in the preheated oven until top is a deep golden brown and the bread sounds hollow when tapped, about 20 minutes.

- Warm the milk and water in a small saucepan until very warm (110'-120' degrees F) Lightly grease a 8x4 inch loaf pan; sprinkle cornmeal inside pan.
- In a large bowl, mix together 1 1/2 cups of the flour, yeast, sugar, salt and soda.
- Stir milk into the flour mixture; beat well.
- Stir in the remaining flour, 1 cup at a time, until a stiff batter is formed.
- Spoon batter into prepared pan.
- Cover and let rise in a warm place for about 45 minutes until nearly doubled in size.
- Preheat oven to 400 degrees F.
- Bake until golden brown, about 25 minutes.
- Remove from pan immediately and cool on wire rack.
- This is best sliced and toasted.

- Place bulgur in a small bowl. Add boiling water to cover. Let stand 15 minutes; drain well. Meanwhile, in large mixing bowl combine 2 cups of the all-purpose flour and the yeast; set aside. In medium saucepan heat milk, honey, butter, and salt just until warm (120 degree F to 130 degree F) and butter almost melts. Add milk mixture to flour mixture. Add egg. Beat with an electric mixer on low to medium speed for 30 seconds, scraping sides of bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in the bulgur, remaining all-purpose flour, 1 cup of the whole wheat flour, oats, cereal flakes, and wheat germ.
- Turn dough out onto a lightly floured surface. Knead in enough of the remaining whole wheat flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape dough into a ball. Place in a lightly greased bowl, turning once to grease surface of dough. Cover; let rise in a warm place until double in size (about 1 hour).
- Punch dough down. Turn dough out onto a lightly floured surface; divide in half. Cover; let rest 10 minutes. Meanwhile, lightly grease two 8x4x2-inch loaf pans. Shape dough into 2 loaves; place in prepared pans. In small bowl combine egg white and 1 tablespoon water. Brush loaf tops with egg white mixture; sprinkle with coarsely crushed cereal. Cover; let rise in a warm place until nearly double (about 30 minutes).
- Preheat oven to 375° degree F. Bake for 30 minutes or until loaves sound hollow when lightly tapped. If desired, cover tops of loaves with foil the last 10 minutes of baking to prevent overbrowning. Remove from pans; cool on wire racks. Makes 2 loaves.
