GRILLED MORTADELLA AND MUENSTER MONSTER SUB



Grilled Mortadella and Muenster Monster Sub image

Number Of Ingredients 11

1/3 cup mayonnaise
2 tablespoons minced pitted oil-cured black olives
1/2 teaspoon dijon mustard
1 small clove garlic, minced or grated
1/4 teaspoon honey
Kosher salt
2 pounds mortadella, sliced about 1/8 inch thick
6 ounces muenster cheese, thinly sliced
1 24-inch baguette
2 beefsteak tomatoes, sliced
2 cups shredded iceberg lettuce

Steps:

  • Preheat a grill to medium high. Make the olive aioli: Mix the mayonnaise, olives, mustard, garlic and honey in a bowl. Taste and add salt if necessary. Make a small cut on the edge of each slice of mortadella to prevent it from curling as it cooks. Grill the mortadella until marked, then flip, top with a slice of cheese and grill until the cheese melts, 1 to 2 more minutes. (You can also cook the mortadella in a large nonstick skillet over medium-high heat, about 3 minutes per side.)
  • Sandwich build: Split the baguette in half lengthwise and toast lightly on the grill. Schmear the olive aioli on the baguette top. Layer the cheese-topped mortadella on the baguette bottom. Top with the tomatoes, lettuce and the baguette top. Cut into individual sandwiches. Photograph by Kang Kim

Number Of Ingredients 9

1 long, soft sub roll (about 6 inches)
1/4 cup Jalapeno Honey Mustard, recipe follows
6 thin slices mortadella
6 slices muenster cheese
1/2 cup roasted red pepper strips (store-bought or homemade)
6 leaves butter lettuce
1 cup mustard
1/3 cup honey
1 tablespoon minced pickled jalapenos

Steps:

  • Slice the roll in half horizontally. Spread the Jalapeno Honey Mustard on the lid only. Layer on the mortadella, muenster, peppers and lettuce. Close the lid and slice into halves or quarters, depending on who's hungry.
  • In a small bowl, combine the mustard, honey and jalapenos. Use right away or store for up to a week in the fridge.

Panini and grilled cheese sandwiches are nothing new but for some reason you rarely, if ever, see Muenster cheese used on them. Muenster cheese reminds me of Germany which makes me happy. Combine that with caramelized onions, roast beef, pastrami and a homemade '1000 island' style dressing instead of the sugary store bought kind on toasted buttery sourdough and you're talking about a seriously delicious sandwich

3/4 cup mayonnaise
1/4 cup sour cream
3/4 cup ketchup
1 teaspoon dill relish
1 teaspoon sweet pickle relish
1 teaspoon dried onion flakes
1/4 teaspoon garlic powder
1/2 teaspoon lemon juice
1/2 teaspoon balsamic vinegar
3 -4 good shakes Tabasco sauce
fresh ground black pepper, to taste
8 slices sourdough sandwich bread, good quality
4 ounces thousand island dressing (see recipe above)
4 ounces aioli or 4 ounces mayonnaise
8 slices muenster cheese, sliced
8 ounces rare roast beef, sliced thinly
8 ounces pastrami, sliced thinly
dill pickle, as desired
4 ounces caramelized onions
unsalted butter, melted

Steps:

  • Sandwich dressing.
  • In a bowl, combine the mayonnaise, sour cream, ketchup, relishes, onion, garlic, lemon juice, balsamic vinegar, Tabasco, and black pepper to taste. Mix well! Makes about 2 cups dressing.
  • Assemble the sandwich.
  • For each Panini: on one slice of bread, spread sandwich dressing, while on the other, spread aioli or mayo. Layer Muenster cheese, roast beef, and pastrami, then top with pickles and caramelized onions. Close the sandwich. Brush outer sides of sandwich generously with melted Unsalted Tillamook Butter. Press on Panini grill or toast in pan or on flattop grill. Serve with garlic parmesan fries, sweet potato fries or small side salad.

2 cups cubed cooked chicken breast
1/2 cup dried cranberries, optional
1/2 cup mayonnaise
1/4 cup finely chopped onion
1/4 cup chopped celery
1/4 teaspoon salt
1/4 teaspoon pepper
12 dinner rolls, split and toasted
1 jar (15 ounces) process cheese sauce
24 pimiento-stuffed olives
12 pimiento strips
6 whole baby dill pickles, cut in half lengthwise

Steps:

  • In a large bowl, combine the chicken, cranberries if desired, mayonnaise, onion, celery, salt and pepper. Fill rolls with chicken mixture. , Heat cheese sauce to soften; drizzle or pipe over top of each sandwich to resemble hair. For each monster sandwich, attach olives for eyes, pimiento strips for noses and pickles for fangs.
