MONTE CRISTO

- Preheat a griddle and deep fryer to 350 degrees F.
- Butter the griddle. Dunk the Texas toast on both sides in the French Toast Custard and grill until golden brown. Flip and add 1 slice Swiss cheese to each slice of toast. Then add 3 ounces ham on top of 6 of the toast slices, then top the ham with another slice of Swiss cheese. Top each ham and cheese toast with a cheese only toast, to form 6 sandwiches. Cook until the cheese melts, then remove from griddle and cool. Dunk the cooled sandwiches in the pancake batter until fully covered and put into the fryer. Cook until golden brown on both sides, about 8 minutes. Serve with the Strawberry-Rhubarb Syrup.
- Beat the eggs well, then add the sugar and mix until emulsified and all the sugar has dissolved. Add the milk and vanilla and whisk until combined.
- Add the strawberries, rhubarb, sugar and maple syrup to a saucepot. Place over medium heat and cook until fruit is soft, about 20 minutes. Let cool slightly, then carefully puree with a hand blender.

- Microwave the jam in a microwave-safe bowl until loosened, 20 to 30 seconds. Stir in the mustard; set aside.
- Heat 1/2 tablespoon butter in a large nonstick skillet over medium heat. Add 1 crepe; stack 2 slices each ham, turkey and cheese on one half of the crepe. Cook until the crepe just starts browning on the bottom and the cheese starts melting, 1 to 2 minutes. Fold the crepe in half over the filling using a spatula, then fold in half again to form a wedge. Flip the wedge and cook until the bottom is browned, about 30 seconds. Transfer to a plate. Repeat to make 3 more crepes. (Remove the skillet from the heat between batches if it gets too hot.)
- Toss the greens and frisee with the olive oil and a pinch each of salt and pepper. Serve the crepes with the raspberry mustard and salad.

- Spread mustard on bread. Layer 4 bread slices with Swiss cheese, ham, and cheese again. Place remaining bread slices on top.
- In a shallow dish, whisk together eggs, milk, salt, pepper, and nutmeg. Dip each sandwich in the egg mixture, turning to coat well.

- Make the raspberry jam: In a medium saucepan over medium heat, cook the raspberries for about 4 minutes, until they start to burst and become very fragrant. Add the sugar and cook, stirring constantly, for 10-15 minutes, until running a spoon through the jam leaves an open trail at the bottom of the pot. Stir in the lemon juice. Remove the pot from the heat and let the jam cool completely. Transfer to the refrigerator and chill for at least 2 hours or overnight.
- Make the sliders: Preheat the oven to 325°F (160°C). Line a small baking sheet with foil, leaving enough overhang so the sides can be used as handles. Grease with nonstick spray.
- Slice the sheet of Hawaiian rolls in half horizontally, leaving the individual rolls connected. Place the bottom half in the prepared baking sheet.
- Layer the turkey and ham on top, making sure to fold the meat to fit inside the individual squares of the rolls, then top with the Swiss cheese.
- Spread the raspberry jam over the top half of the rolls and place on top of the cheese layer, pressing down lightly.
- In a small bowl, mix together the egg and melted butter. Liberally brush on top of the rolls.
- Bake the sliders until the cheese is completely melted and the buns are toasted, 25-30 minutes. If the tops begin to brown too quickly, cover loosely with foil.
- Remove the sliders from oven and let cool for about 10 minutes, then transfer to a serving platter. Dust lightly with powdered sugar and serve whole so the sliders can be pulled apart.

I love the classic Monte Cristo that Bennigan's serves with red raspberry preserves for dipping; but sadly, our Bennigan's recently closed. This is a variation from the 2002 Pillsbury Bake-Off using Grands buttermilk biscuits and baked instead of fried.

Many years ago when we lived in Colorado, I went to Bennigan's and had one of their crumptious Monte Cristo Sandwiches. I mastered a replica of it and my family and everyone else just loves it to no end. Why go out when you can make it yourself and it's just as good if not better!

- Mix eggs and milk together in pie dish or dish big enough to dip a sandwich in, set aside.
- Take your bread and put a slice of turkey meat, a slice of provolone cheese, and a slice of ham, topping with the other piece of bread to form a sandwich.
- Spray your frying pan with Pam or other non-stick spray and begin to heat up on low. Dip the entire sandwich, both sides, into your egg mixture then put into frying pan and cook both sides until lightly browned.
- After done, sprinkle with powdered sugar and add a heaping spoonfull of rasberry jam on the side! Enjoy!

The Monte Cristo is a variation of the French croque-monsieur. I love monte cristo sandwiches that I have eaten at restaurants and found this recipe for it online but switched the jelly!!

- For the jelly sauce:.
- Combine jelly, water and half and half in blender and mix until smooth. Makes about 3/4 cup.
- For the batter:.
- Place water, egg, salt, pepper and food coloring in a bowl and using an electric mixer, mix well at low speed. Add flour and baking powder and mix until batter is smooth. Chill. Makes enough for 4 sandwiches.
- Sandwiches:.
- Make 4 sandwiches, putting cheese between hand and turkey. Cut into fourths and put a toothpick through each quarter.
- Heat about 6-inches of oil to 340F in a fryer. Dip sandwiches in batter to cover all surfaces. Deep fry sandwiches until golden brown, turning as needed. Remove from oil, take out toothpicks, sprinkle sandwiches with confectioners' sugar. Serve with raspberry jelly sauce.

- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry, then cut into 1½-inch-wide strips.
- Brush the raspberry jam over each strip.
- Arrange a layer of half-slices of ham on a pastry strip with the straight edges at the center of the strip and the curved edges hanging over the edge of the pastry. Fold the exposed pastry over the ham. Sprinkle some Gruyère cheese over the ham. Starting from one short end, roll the pastry into a tight spiral. Secure the end with a toothpick, if desired. Transfer to the prepared baking sheet and repeat with the remaining ingredients.
- Brush the pastry roses with the beaten egg.
