My mom gave me this recipe. Everyone I have ever cooked these for say they will never eat any other refried beans again. There are not any restaurants beans that can beat these!

1 lb pinto beans
1 large onion, chopped
4 tablespoons margarine
pepper
8 ounces monterey jack cheese, grated (with or without peppers)
water
1 1/2 teaspoons salt

Steps:

  • Cover beans with water; add chopped onion and bring to a boil.
  • Boil 2 minute.
  • Take off heat, cover and let sit 1 hours.
  • Do not drain water, but again add enough water to cover beans, heat to boiling, turn down heat and cook until beans are tender, stirring occasionally, about 1 to 2 hours.
  • (add more water if needed during cooking) When beans are done (make sure there is not too much water in the beans), take off heat and mash with a mixer Add margarine, salt, pepper, and cheese and continue to beat with mixer until the beans are soft.

CHICKEN CHIMICHANGAS

Enjoy these flavour-packed chicken chimichangas with Monterey Jack cheese, chilli, chipotle and refried beans. You can bake or deep-fry them

Number Of Ingredients 13

3 tbsp vegetable oil, plus 60ml (if frying rather than baking)
5 skinless and boneless chicken thigh fillets, or about 300g leftover cooked chicken
½ onion, chopped
1 small red pepper, roughly chopped
100g green chillies from a jar, finely chopped
85g Monterey Jack cheese, grated plus extra for serving
½ tsp garlic powder
½ tsp ground cumin
½ tsp chipotle chilli powder
6 large flour tortillas
400g can refried beans (optional)
240ml red enchilada sauce
soured cream and a handful of chopped coriander, to serve

Steps:

  • Heat 1 tbsp of the oil in a frying pan on a medium heat, add the chicken thigh fillets and fry for 6-8 mins each side until cooked through, then remove from the pan and set aside. Add another tbsp oil to the pan, then the onion and red pepper and cook until softened, about 5 mins.
  • Shred or cut chicken into small pieces and put in a bowl with the cooked onions and peppers, chillies, cheese and spices, season and mix well.
  • Heat the tortillas briefly in a dry frying pan for a few seconds on each side to make them a little more pliable, or heat in a microwave. Spoon a layer of the beans, if using, into the centre of each tortilla, then spoon some of the chicken mixture on top. Repeat so all the wraps and filling are used up.
  • Roll-up the chimichangas - fold the bottom over the filling, fold the sides in, then roll away from you so all the filling is sealed in.
  • To bake, heat the oven to 200C/180C fan/gas 6. Place the chimichangas on an oiled baking sheet and brush lightly with more oil. Bake until golden, about 20-25 mins. Or to fry them, heat a heavy-based frying pan over a medium heat. Once hot, add the 60ml oil to the pan and place the chimichangas seam-side down. Turn gently every few seconds until lightly golden on all sides and the filling has heated through.
  • While they cook, warm the enchilada sauce in a small pan, then spoon some enchilada sauce on a plate, lay the chimichanga on top, and top with soured cream, a little more cheese and some coriander.Nutrition (fried):Kcal 425; fat 24g; saturates 6g; carbs 27g; sugars 5g; fibre 3g; protein 23g; salt 1.85g

1/2 cup chopped green onions
3 tablespoons butter
1 package (9 ounces) frozen cut green beans
1 can (4 ounces) mushroom stems and pieces, drained
1/2 teaspoon lemon-pepper seasoning
1/4 teaspoon salt
1/2 cup shredded Monterey Jack cheese

Steps:

  • In a large saucepan, saute onions in butter until tender. Add the beans, mushrooms, lemon-pepper and salt. Cover and cook over medium heat for 5 minutes or until beans are tender. Sprinkle with cheese; cover and let stand for 1 minute or until cheese is melted.

1 lb dried pinto bean
1 large sweet onion, chopped
4 tablespoons lard or 4 tablespoons vegetable shortening
5 -6 cloves garlic, minced
1 1/2 teaspoons adobo seasoning or 1 1/2 teaspoons seasoning salt, to taste

Steps:

  • Sort beans and place in a pot with 6 cups water.
  • Soak overnight, or bring to a boil, cook for 3 minutes, then cover and remove from heat, allowing to sit undisturbed for 1 hour.
  • Drain and rinse beans, and cover with 6 cups water.
  • Bring to a boil, then cover, and simmer for 1- 1 1/2 hours or until tender and creamy.
  • Drain beans and retain cooking liquid.
  • Cook onion and 6 cloves minced garlic in 4 tbsp lard in a deep skillet until tender.
  • Add drained beans and mash until smooth and creamy, adding some of the cooking liquid if necessary (to adjust consistency to your liking).
  • Season to taste with adobo seasoning or seasoned salt.

1 pound dry pinto beans, rinsed
2 tablespoons minced garlic, divided
1 medium tomato, diced
2 tablespoons ground cumin
1 tablespoon chili powder
2 tablespoons olive oil
salt to taste

Steps:

  • Place beans in a large saucepan and cover with water by 1 inch. Place over high heat and bring to a boil. When beans come to a boil, drain and return them to the same pot.
  • Cover beans with water by 2 inches; stir in 1 tablespoon garlic, tomato, cumin, and chili powder. Bring to a boil over high heat, then reduce heat to low, and simmer until beans are very soft, about 3 hours and 45 minutes, adding water as needed.
  • Once beans have cooked, mash them with remaining garlic, oil, and salt; add water as needed to achieve desired consistency. Place over low heat for 30 minutes, stirring occasionally.
