GREEN BEANS WITH MAGIC SAUCE
Steps:
- Add olive oil to a large saucepan over medium heat. Add green beans and saute, until just tender, about 3 minutes. Season lightly with salt to taste and remove from heat.
- Add soy sauce, tahini, honey, sesame oil, red pepper and garlic to a small bowl and mix until thoroughly combined. Drizzle mixture over beans and lightly toss to combine. Plate and serve.

- Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
- Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.
LOLO'S GREEN BEANS
I just wanted something with a little more zing for our homegrown green beans, I was getting sick of the same old thing all the time. So I came up with this, and it was a hit!

Steps:
- Snap ends from beans and boil in water for 8 minutes, then immediately shock with ice water to stop cooking process. Set aside.
- In saucepan on medium heat, saute onions in butter and oil until tender.
- Add garlic and tomatoes and cook for 2 minutes.
- Add drained beans, picante sauce, vinegar, sugar, pepper and bacon.
- Saute until beans are to desired doneness, about 3-5 minutes.
- Serve.

- In a large nonstick skillet, heat oil over medium-high heat. Add onion, and cook, stirring occasionally, 2 minutes. Add garlic, and cook 2 minutes more. Add escarole, and stir slowly, allowing it to wilt slightly. Add chicken stock, thyme, and salt; reduce heat to medium-low. Simmer for 15 minutes. Stir in the beans, and continue to simmer until most of the liquid is absorbed and the greens are tender, 3 to 5 minutes. Remove from heat. Serve warm, garnished with grated Parmesan cheese.

These green beans are nice and meaty, with a creamy sauce. My wife doesn't cook and is a little picky. She said she would only eat her mother's green beans so I got her recipe. For a variation on this recipe, mix in 1 cup sour cream with the other ingredients, or sprinkle 1 cup of your favorite shredded cheese over the top near the end of baking time
