Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 12

1 14-ounce tube polenta, cut into 12 rounds
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper
1 pork tenderloin (about 1 1/4 pounds), trimmed and cut on an angle into 1/2-inch slices
1 pound cremini mushrooms, sliced
3 cloves garlic, 2 sliced and 1 minced
1 shallot, sliced
1 tablespoon all-purpose flour
1 cup low-sodium chicken broth
2/3 cup Marsala wine
1/2 teaspoon grated orange zest, plus 1 teaspoon orange juice
3 tablespoons finely chopped fresh parsley

Steps:

  • Preheat the broiler. Lay the polenta slices on a baking sheet and brush the tops with 1 tablespoon olive oil; season generously with salt and pepper. Broil until browned around the edges and crisp, 12 to 14 minutes.
  • Meanwhile, season the pork with salt and pepper. Heat a large nonstick skillet over medium-high heat and add 1 tablespoon olive oil. Add the pork and cook until browned, about 2 minutes per side; remove to a plate. Add the remaining 2 tablespoons olive oil, the mushrooms, sliced garlic, shallot and 1/2 teaspoon salt. Cook, stirring occasionally, until the mushrooms brown in spots, 6 to 8 minutes. Sprinkle with the flour and cook, stirring, about 30 seconds. Add the chicken broth and wine; bring to a simmer and cook until the sauce thickens, about 5 minutes.
  • Return the pork and any juices to the skillet. Cook over low heat until the pork is cooked through, 1 to 2 minutes. Stir in the orange juice and season with salt and pepper.
  • Combine the orange zest, parsley and minced garlic in a small bowl. Divide the polenta among plates. Top with the pork, mushroom sauce and parsley mixture.

Moroccan Lemon Chicken image

Provided by Giada De Laurentiis

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 12

2 tablespoons olive oil
4 bone-in, skin-on chicken breast halves
1 1/4 teaspoons kosher salt
1 shallot, chopped
1 preserved lemon, inside discarded, skin thinly sliced
1/2 cup pitted mixed marinated olives, halved
1/2 cup sun-dried tomatoes in oil, drained and chopped
1 cup white wine
1 cup low-sodium chicken broth
4 sprigs oregano
2 tablespoons chopped Italian parsley
Chive blossoms, for garnish, optional

Steps:

  • Heat the oil a medium straight-sided skillet over medium-high heat. Dry the chicken breasts well and sprinkle evenly with the salt. Place the breasts skin-side down in the hot pan and cook undisturbed until deep golden brown, about 6 minutes. Using tongs, flip the chicken to the bone side and continue to cook for another 5 minutes. Remove to a plate while you build the sauce.
  • In the same pan, add the shallots and sweat, stirring occasionally, for a minute. Add the preserved lemon, olives and sun-dried tomatoes and stir to combine. Deglaze with the white wine, scraping up the brown bits from the bottom of the pan with a wooden spoon. Simmer for 3 minutes to reduce slightly. Add the chicken broth and return to a simmer. Add the oregano and the chicken back to the sauce. Spoon some of the liquid over the chicken. Cover the pan and simmer gently until an instant-read thermometer registers 160 degrees F, about 25 minutes. Allow the chicken to rest in the sauce for 10 minutes. Stir in the parsley.
  • Serve the chicken with a generous helping of the sauce and sprinkled with chive blossoms if using.

MOROCCAN CHICKEN: MADE ON STOVE TOP, CROCK-POT OR TAGINE

Moroccan Chicken: Made on Stove Top, Crock-Pot or Tagine image

Shopping at Ikea I bought a Tangine because it looked so cool! Don't worry, if you don't have one - you can just make this on the stove top. If you want it to be ready when you come home from work, just toss it into a crockpot (slow cooker) P.S. you can also make this with Lamb or Pork if you want to!

Provided by BBCFan

Categories     Curries

Time 25m

Yield 5 serving(s)

Number Of Ingredients 13

5 boneless skinless chicken breasts, chopped into bite size pieces
1 tablespoon ground coriander
1 tablespoon smoked paprika
1 tablespoon ground cumin
1 tablespoon mccormick's montreal steak grill seasoning
1 teaspoon ground turmeric
1/8 teaspoon ground cinnamon
olive oil
1/2 of an onion (White, Yellow or red, your choice)
1 cup chicken stock, from a box
1/2 cup raisins (if you want, you can use more)
1/2 cup prune (if you want you can use more)
couscous (optional, any flavor you want)

Steps:

  • Super Easy:.
  • Olive Oil in pan on high heat.
  • Add chopped onions and sautee a little.
  • Add chicken.
  • Mix a bit.
  • Reduce heat and add all the spices and mix a little.
  • Count to 60 so let the spices warm up a little.
  • After 1 minute has passed, add chicken stock, prunes and rasins and stir a bit.
  • Cover and simmer for about 15 minutes.
  • Uncover, stir a bit again and simmer another 5 minutes until the stock has reduced a bit and it's not so runny.
  • If you are using couscous, put the cous cous on a serving plate first then pour this chicken dish over the couscous which will absorb any loose liquid.
  • ----------------------------------------------------------------------------------------------------.
  • If using a crockpot (slowcooker).
  • Dump everything in the same order as above: oil, onions, chicken, then spices, fruit, cover with stock and slow cook for anywhere from 4 hours (ideal) to no more than 10. The longer it cooks, the better it will be - but it WILL dry out after 10 hours unless you a little extra chicken stock.
  • Side Dish ideas:.
  • Polenta.
  • Enjoy!

MEXICAN CHICKEN AND POLENTA

Mexican Chicken and Polenta image

Based on a Weight Watchers recipe, I've tweaked this to suit my own tastes to create a little more flavor contrast between the polenta and chicken. Though the dish is light, family and guests will never know it. I usually serve this with some black beans and a crispy green salad,

Categories     Chicken Breast

Time 1h

Yield 4 serving(s)

Number Of Ingredients 17

1 lb boneless skinless chicken breast
2 sprigs fresh cilantro, chopped
4 garlic cloves, peeled
1/2 small yellow onion, chopped
1/4 teaspoon Mexican oregano or 1/4 teaspoon oregano
2 -3 cups water
3 dried ancho peppers, stems removed and seeds shaken out
3 garlic cloves, unpeeled
1/2 cup canned tomato sauce
1/2 teaspoon ground cumin
3/4 cup uncooked cornmeal, to make polenta
1 1/2-2 cups water
1/2 cup frozen corn kernels
1/2 teaspoon Splenda sugar substitute or 1/2 teaspoon sugar
1/4 teaspoon table salt
2 medium scallions, sliced (optional)
2 sprigs cilantro (optional)

Steps:

  • Place chicken in a large skillet and cover with water; add chopped cilantro, oregano, onion and peeled clove of garlic.
  • Cook chicken breasts over medium heat about 10 to 15 minutes; chicken should no longer be pink in center; remove chicken from pan and let cool; reserve liquid.
  • Add ancho peppers to the reserved liquid in pan; cover and soak about 10 minutes (no heat on pan); drain liquid into a bowl.
  • (Sometimes, I add the whole ancho to the pand and seed after they are softened.) Shred cooled chicken and set aside.
  • Place peppers, garlic, tomato sauce and cumin in blender and blend on high until smooth, about 2 minutes; if you have an immersion blender you can add everything to the pan and blend.

  • To make polenta, bring water to a boil; add salt.
  • Add about 1/2 cup of the water to the cornmeal to make a paste or slurry; Slowly add cornmeal slurry to the boiling water, stirring until smooth; after 10 minutes add Splenda and corn kernels; cook another 3 to 5 minutes.
  • Spoon 1/4 of the cooked polenta onto the serving plate; top with 1/4 of chicken and chili mixture; garnish with additional cilantro (optional) or chopped scallions (optional).
  • OR If you prefer polenta wedges, coat a 9 x 9-inch pan with cooking spray and pour polenta into pan; smooth with a spatula; let polenta to firm up, about 3 minutes; cut into quarters and remove from pan.
  • Place polenta slices in a large nonstick skillet coated with cooking spray; cook on both sides until crispy, about 2 to 4 minutes per side.
  • Place polenta wedge onto the serving plate; top with 1/4 of chicken and chili mixture; garnish with additional cilantro (optional) or chopped scallions (optional).
