8 tablespoons unsalted butter
1 cup all-purpose flour
1 3/4 cups whole milk
3 large eggs
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Confectioners' sugar, maple syrup and fresh fruit, for garnish

Steps:

  • Melt 4 tablespoons butter in a 10-inch nonstick skillet. Combine the flour, milk, eggs, melted butter, vanilla and salt in a blender; process until smooth.
  • Preheat the oven to 200 degrees. Warm the same skillet over medium heat until a drop of water bounces and sizzles. Add 1 teaspoon butter; turn to coat the pan with the melted butter. Pour in a scant 1/3 cup batter and quickly swirl the pan to evenly coat the bottom. Cook until the pancake sets, 1 to 1 1/2 minutes. Using a rubber spatula, carefully lift the pancake by the edges and flip; cook until lightly golden on the other side, 15 to 30 seconds. Transfer to a plate; keep warm in the oven while making the others. Repeat with the remaining butter and batter to make about 12 pancakes. If the pancakes seem too thick, thin the batter slightly with warm water. Fold or roll and serve with confectioners' sugar, syrup and fresh fruit.

This recipe is so delicious and easy to make. I come from a really Swedish town - Rockford, Illinois - where Swedish pancakes are a favorite for Sunday morning breakfast. My Dad used to make these for us at home for a special treat. Serve with butter and maple syrup, or lingonberries if you've got them.

2 cups milk
½ cup all-purpose flour
1 tablespoon sugar
1 pinch salt

Steps:

  • In a large bowl, beat eggs with a wire whisk. Mix in milk, flour, sugar, salt, and melted butter.
  • Preheat a non-stick electric skillet to medium heat. Pour a thin layer of batter on skillet, and spread to edges. Cook until top surface appears dry. Cut into 2 or 4 sections, and flip with a spatula. Cook for another 2 minutes, or until golden brown. Roll each pancake up, and serve.

1 cup milk
½ cup warm water
3 tablespoons white sugar
1 cup all-purpose flour

Steps:

  • Blend eggs, milk, warm water, white sugar, flour, and salt together in a large mixing bowl with an electric mixer until well combined into a smooth batter.
  • Stream the melted butter into the batter while continuing to beat.
  • Heat a skillet or crepe pan over medium heat. Coat the cooking surface with a thin layer of butter.
  • Pour a thin layer of batter onto the prepared cooking surface; swirl the pan to assure even coverage.
  • Cook the crepe until browned on the bottom, 1 to 2 minutes; flip the crepe and continue cooking until the other side is browned. Serve immediately.

I lay no claim to the authenticity of this recipe. This recipe has been in my husband's family for years (hubby's grandparents were from Switzerland.) When my in-laws prepare these, the pancakes are folded up without any filling but I take it a step further and add all sorts of goodies, depending on the season (read my suggestions below). If you are limiting your cholesterol intake, do not substitute more than half of the eggs with an egg substitute. This yields something identical in taste to French crepes, except these pancakes are larger and thicker.

4 eggs
1/2 teaspoon salt
2 cups milk
1/2 teaspoon vanilla extract (my addition)
3/4 cup unbleached flour
1 tablespoon sugar
1 tablespoon oil (vegetable, corn, etc.)
strawberry
peach
applesauce
stewed pear
cream cheese
nutella
blackberry, sauce
jam
jelly
powdered sugar
toasted almond (walnuts and pecans are good, too!)
maple syrup

Steps:

  • Pour all batter ingredients into a blender and blend for 1 minute or until the batter is smooth, stopping blender and scraping down sides if necessary. (Alternately, you can blend all ingredients using a mixer or hand held immersion blender.).
  • For best results, refrigerate batter for at least 30 minutes before cooking.
  • Lightly grease a non-stick pan with sloped edges. Heat pan to medium. Pour into the pan approximately a scant 1/3 cup of batter and swirl the batter to distribute evenly. Cook for about 2 minutes or until the top of the pancake starts to form little bubbles and the bottom of the pancake is light brown with "specks".
  • Flip the pancake over carefully and continue to cook for another 45 seconds to 1 minute. Be careful not to overcook.
  • Carefully remove pancake to warming dish and continue cooking the pancakes as in Step #3. Grease pan lightly as needed.
  • For filling: you can leave the pancakes plain as my inlaws do or we like to add strawberries cut up and mixed in with some cream cheese; the top garnished with toasted slivered almonds. I've also used homemade applesauce and fresh peaches, too. Use your imagination for pancake fillings. Roll up, bringing both sides of pancake to center.
  • Serve warmed maple syrup (or warmed jam or jelly) on side if desired. Sprinkle top of pancake with powdered sugar for presentation.

2 forkfuls grey poupon mustard
1/2 cup swiss cheese, grated
1 handful of bisquick(golf ball size)
1 to 2 squirts water

Steps:

  • Break egg into small bowl. Add mustard by dipping fork into mustard jar and plopping in small bowl with egg. Beat egg mustard mixture with same fork. Add grated cheese and bisquick and combine with egg mustard mixture. Add enough water to make moist but not runny.(Like a stiff mortar mix.) Spoon into a small teflon coated frying pan into which a small hunk of butter has been dropped and melted. Cover pan and cook over slow heat until you have finished reading the local sports column. Turn over with spatula and cook other side long enough to read the lead story in the sports section. Serves one. If you have a friend for breakfast--you lucky devil--double the recipe and use two frying pans.

Steps:

  • Whisk first 4 ingredients in large bowl to blend. Gradually whisk in flour and baking powder. Stir in 2 tablespoons butter and dill. Cover; let stand 1 hour. Preheat oven to 250°F. Brush large skillet with butter. Heat over medium heat. Working in batches and brushing with butter as needed, drop batter by tablespoonfuls into skillet, forming 2 1/2-inch rounds. Cook until pancakes are golden on bottom and bubbles begin to break on surface, about 3 minutes. Turn over; cook until golden, about 2 minutes. Transfer to baking sheet. Keep warm in oven.
  • Top pancakes with salmon. Spoon sour cream over. Top with caviar.

3 tablespoons Dijon-style mustard
3 tablespoons sour cream
1/4 teaspoon dried tarragon, crumbled
1/2 cup thinly sliced scallion
2 1/2 cups coarsely grated Swiss cheese (about 1/2 pound)
1/2 cup chopped walnuts, toasted lightly and cooled
crackers as an accompaniment

Steps:

  • In a bowl whisk together the mustard, the sour cream, the tarragon, the scallion, and pepper to taste, add the Swiss cheese and the walnuts, and combine the mixture well. Serve the mixture with the crackers.

1 package (30 ounces) frozen shredded hash brown potatoes, thawed

Steps:

  • In a large nonstick skillet, melt 1 tablespoon butter with 1 tablespoon oil over medium-high heat. Spread half of the potatoes in an even layer in skillet. Season with 1/2 teaspoon salt and 1/8 teaspoon pepper. Sprinkle with cheese, then top with remaining potatoes. Season with remaining salt and pepper. Press mixture gently into skillet. Cook for about 7 minutes or until bottom is browned. , Remove from the heat. Loosen pancake from sides of skillet. Invert pancake onto a plate. Return skillet to heat and heat remaining butter and oil. Slide potato pancake brown side up into skillet. Cook about 7 minutes longer or until bottom is browned and cheese is melted. Slide onto a plate. Sprinkle with parsley and cut into wedges.
