Couscous Salad with Chickpeas image

Couscous Salad with Chickpeas and harissa roasted vegetables, a deliciously spiced dish with Moroccan flavours. Ready in about 20 minutes, this salad is absolutely delicious. The harissa paste gives it a distinctive exotic flavour and an earthy heat, while the dried fruit work beautifully with the roasted vegetables.

1 cup couscous
1/2 cup dried cranberries and raisins
1 red pepper
1/2 aubergine ((eggplant))
1 1/2 cup boiling water
1 tsp turmeric
1/2 tsp ground cumin
1/2 tsp ground coriander
1 tbsp harissa paste
1 tbsp chopped parsley
salt to taste
1 cup cooked chickpeas

Steps:

  • Chop the aubergine and red pepper, add the harissa paste, and mix well to coat.
  • Roast in the pre-heated oven at 200 degrees Celsius (390 Fahrenheit) for 10-15 minutes until tender.
  • Add the couscous, dried fruit and spices to a large bowl, pour over the boiling water, cover the bowl with a lid or a large plate, and set aside for 5 minutes.
  • Use a fork to fluff it up, add the roasted vegetables, chickpeas and parsley, and stir well to combine.
  • Serve it either warm or cold.

1 cup boiling water
5 tablespoons olive oil, divided
1 large orange bell pepper, cut in bite-sized sticks
1 large onion, cut around its equator and cut into thin slices
1 1/2 teaspoons ground cumin
1/2 teaspoon ground ginger
1/4 teaspoon ground cinnamon
salt
ground black pepper
1 (16 ounce) can chickpeas, drained
1/4 cup chopped fresh cilantro
3 tablespoons rice vinegar
3 tablespoons frozen orange juice concentrate, thawed

Steps:

  • place couscous and dried cherries in a med. bowl. add boiling water; immediately cover bowl with plastic wrap and let sit until water is completely absorbed, about 5 minutes.
  • meanwhile, heat 2 tablespoons olive oil in a large skillet over medium-high heat. add peppers and onions, sauteing until tender, about 5 minutes, and seasoning with cumin, ginger, cinnamon, salt and pepper as they cook. add to couscous, along with chickpeas and cilantro.
  • whisk remaining 3 tablespoons of oil with vinegar and orange juice concentrate. pour over salad. toss to coat. cover and refrigerate until ready to serve.

2 tablespoons olive oil
1 onion, minced
3 garlic cloves, minced
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon powdered ginger
1 (19 ounce) can chickpeas, drained and rinsed well
1 cup couscous
1/2 cup raisins
1/2 cup dried apricot, sliced
2 cups orange juice
1 lemon, zest and juice
sea salt & freshly ground black pepper
1/2 cup almonds (sliced or slivered)
1 handful chopped cilantro

Steps:

  • Splash the olive oil into a small saucepan over a medium-high heat. Add the onion, garlic and spices. Sauté for a few minutes until everything is heated through and your kitchen smells fragrant.
  • Add the chickpeas, couscous, raisins, apricots, orange juice, lemon zest and juice, and salt and pepper. Bring everything to a simmer and then reduce the heat to low, just enough to maintain the simmer. Cover with a tight-fitting lid and continue cooking until the couscous is tender and the liquid has been absorbed, about 15 minutes.
  • Turn off the heat and let the couscous rest for another 5 minutes or so before serving. Using a fork to help fluff up the couscous, transfer it into a serving bowl and sprinkle with the almonds and cilantro.
