- Preheat oven to 350˚F (180˚C).
- In bowl, add the almonds, salt, cayenne, honey, and olive oil, and stir to combine.
- Transfer to a parchment paper-lined baking sheet, and bake for 12 minutes, until the honey is caramelized and the almonds are aromatic.
- Let cool.
- Enjoy!

- Preheat oven to 300 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper.
- In a medium bowl, stir together the brown sugar, spices, salt, and pepper.
- To another medium bowl, add the egg white. Whisk briskly until frothy, about 30 seconds. Add the almonds and toss with a wooden spoon until coated. Add the spice mix and toss until the nuts are well-coated. Spread evenly on the baking sheet.
- Place in oven and bake, stirring once, until fragrant and toasted, about 45 minutes. Let cool completely and then serve. Nuts will keep well at room temperature in a sealed bag or jar for several days.

- Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15-inch jelly roll pan.
- Combine egg white and vanilla in large bowl; beat until frothy. Add almonds and toss to coat. Pour almonds into a mesh strainer to drain excess liquid, 5 to 10 minutes. Return strained almonds to the bowl.
- Stir white sugar, brown sugar, cinnamon, chili powder, and salt together in a bowl. Sprinkle sugar mixture over almonds and toss to coat evenly. Spread coated nuts evenly onto prepared jelly roll pan.
- Bake, stirring every 20 minutes, until the seasoning clings to the almonds, about 1 hour. Allow to cool completely before storing in an air-tight container.

- Preheat the oven to 350 degrees F (175 degrees C).
- Spread almonds onto a baking sheet. Toast in the preheated oven until nuts start to turn golden brown and become fragrant, 8 to 10 minutes.
- Meanwhile, combine vinegar and brown sugar in a saucepan over medium heat. Gently stir until sugar has dissolved, about 5 minutes. Remove toasted almonds from the oven, add to saucepan, and stir to coat.
- Line the baking sheet with parchment paper.
- Spread coated almonds evenly onto the prepared baking sheet. Sprinkle salt over almonds, tossing to cover evenly. Allow to dry, about 10 minutes.

- Preheat an oven to 400°F (200°C).
- Rinse the almonds in cold water and allow them to drain in a colander for a few minutes.
- Prepare a baking pan by generously sprinkling salt across the bottom. Add the almonds to the pan in a single layer, and generously sprinkle salt over the almonds.
- Roast the almonds in the hot oven for 10 to 12 minutes, or until the almonds have barely darkened and are fragrant.
- Allow the almonds to cool completely before storing in an airtight container.

- Heat oven to 180C/160C fan/gas 4. Spread the nuts on a baking tray and roast for 15 mins. Tip the hot nuts into a bowl and toss with the butter, salt and paprika to taste, until coated. Tip the nuts back onto the tray and roast for 2 mins more to dry the coating onto them. Cool and store in an airtight container. The nuts will keep for 3 days.

MOROCCAN ROASTED HALIBUT
This recipe comes from Sheila Lukins "Celebrate!". The list of ingredients looks long, but it is a very easy dish to prepare, and the outcome is outstanding! I used Orange Roughy instead of the Halibut. Used four large fillets, and the amount of sauce was perfect. I added a few extra chickpeas and raisins. The family doesn't like mint, so I left it out, and I didn't have fresh parsley, so used about 2 T. dried. For a side dish, I made couscous with chicken broth, and added some toasted almonds. The table was set with a rich colored table cloth, candles and a lot of old brass. Dimmed the lights and had one romantic dinner! A definite do again.

Steps:
- Place the olive oil, onion and garlic in a heavy pot over low heat and cook, stirring, until onions are very soft, 15 minutes.
- Add the cardamom, saffron, lemon juice, cinnamon stick, orange zest, broth, and salt and pepper.
- Raise the heat to medium high and bring to a boil.
- Reduce the heat to medium low and simmer, partially covered, for 10 minutes.
- Then stir in the chickpeas, raisins and tomatoes.
- Add the parsley and the 1/4 cup mint and simmer, partially covered, for 15 minutes.
- Preheat the oven to 400 degrees F.
- Remove the cinnamon stick and the orange zest from the vegetable mixture.
- Place the cooked vegetables in a 13x9 inch baking dish and arrange the fish on top.
- Spoon some of the vegetable liquid over the fish.
- Bake until the fish is baked through and flakes easily when tested with a fork, 15 minutes.
- (I baked mine about 10 minutes longer.).
- Serve the fish and the vegetables over couscous and sprinkle with remaining 2 tablespoons fresh mint.
