MOROCCAN SWEET POTATO STEW
A perfect blend of rich sweet potato stew with a kick of curry powder and ginger plus the crunch of peanuts.

Steps:
- Place sweet potatoes in a microwave-safe bowl and add a splash of the broth. Cook in the microwave until slightly softened, 3 to 5 minutes.
- Heat olive oil in a soup pot over medium heat. Add onion, celery, bell pepper, and garlic. Cook and stir for 3 to 5 minutes. Add softened sweet potatoes, remaining broth, chickpeas, tomatoes, lemon juice, ginger, cumin, curry powder, coriander, chili powder, salt, and pepper. Bring to a boil, reduce heat, and cover pot. Simmer soup until vegetables are tender, about 20 minutes.
- Stir raisins and peanut butter into soup and simmer 5 minutes more. Adjust spices if necessary.

MASHED SWEET POTATOES WITH MOROCCAN SPICES
We mashed sweet potatoes with fat-free Greek yogurt, butter, brown sugar and Moroccan spices for a vegetarian side dish that you'll want to make room for on the Thanksgiving table.

Steps:
- Place sweet potatoes in 4-quart saucepan. Add water to cover. Heat to boiling. Reduce heat; boil gently (simmer) about 12 minutes or until tender.
- Drain; return potatoes to pan. Add 1 cup of the Greek yogurt, the butter, 3 tablespoons of the brown sugar, the salt and remaining spices. Mash with potato masher until smooth.
- In small bowl, mix remaining 1/2 cup Greek yogurt and remaining 1 tablespoon brown sugar until smooth.
- Serve potatoes warm, topped with sweetened yogurt and chives.

Steps:
- In a 12 inch skillet, heat oil over medium heat until hot. Add onion and cook until tender and lightly browned, stirring occasionally. Stir in garlic, curry powder, cumin, and allspice; cook 30 seconds.
- Add tomatoes, broth, beans, and potato; cover and heat to boiling over medium high heat. Reduce heat to medium and cook 10 minutes.
- Stir in zucchini, cover, and cook until vegetables are tender.
- Meanwhile, prepare couscous as label directs.
- Stir mint into stew. Serve over couscous.

- Preheat the oven to 400ºF. In a small bowl combine the cumin, turmeric, cinnamon, cayenne pepper, paprika, salt, and olive oil.
- Peel the sweet potatoes, then cut them into about 3/4-inch cubes. Place the cubes in a bowl and pour the oil and spice mixture over top. Stir the potatoes until they are well coated in oil and spices.*
- Spread the spiced sweet potatoes out over a baking sheet so they are in a single layer. Place the baking sheet in the oven and roast the potatoes for 15 minutes, then stir the sweet potatoes, return them to the oven, and roast for 15 minutes more, or until tender.
- Once the sweet potatoes have finished roasting, give them a taste and add a pinch more salt, if needed. Roughly chop the cilantro and sprinkle it over top just before serving.
