Best Fresh Strawberry Pie image

I make this in the summer when the berries are fresh and juicy. I have tried many strawberry pie recipes but this one is the best imo. Chill time is 4 hours.

2 tablespoons powdered sugar
1 9 inch pie shell, baked and cooled
4 cups fresh strawberries, hulled
1 cup sugar
3 tablespoons cornstarch
1 tablespoon lemon juice
2 cups whipping cream
2 tablespoons sugar

Steps:

  • Sprinkle the powdered sugar over the cooked pie crust.
  • Fill pie crust with 2 cups of the largest berries.
  • In a saucepan, crush the remaining 2 cups berries (I use a potato masher).
  • Add in sugar and cornstarch; stir to combine.
  • Cook and stir constantly over medium heat for 8-10 minutes or until the mixture is thickened and clear.
  • Add in lemon juice; stir.
  • Remove pan from heat and cool slightly.
  • Pour berry mixture over the berries in the pie crust.
  • Cover and refrigerate for 4 hours.
  • Before you are ready to serve, prepare whipped cream as follows: Add whipping cream to a mixing bowl; whip, using an electric mixer.
  • Gradually add in sugar and whip until peaks form.
  • Spoon whipped cream over pie wedges if desired.

Fresh strawberries, a touch of lime, real whipped cream and a pastry crust. What's not to like?

1 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/3 cup plus 1 tablespoon shortening
2 to 3 tablespoons cold water
3/4 cup boiling water
1 package (4-serving size) strawberry-flavored gelatin
1 teaspoon grated lime peel
1/2 cup lime juice (4 limes)
1 1/2 cups whipping cream
3/4 cup powdered sugar
1 pint (2 cups) strawberries, slightly crushed
Whipped cream, if desired
Strawberry halves, if desired

Steps:

  • In medium bowl, mix flour and salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary).
  • Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap in plastic wrap; refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 475°F. With floured rolling pin, roll pastry into round 2 inches larger than upside-down 9-inch glass pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute as desired. Prick bottom and side of pastry thoroughly with fork. Bake 8 to 10 minutes or until light brown; cool on cooling rack.
  • In large bowl, pour boiling water over gelatin; stir until gelatin is dissolved. Stir in lime peel and lime juice. Refrigerate about 1 hour or until very thick but not set.
  • Beat gelatin mixture with electric mixer on high speed about 4 minutes, scraping bowl occasionally, until thick and fluffy; set aside. In chilled large bowl, beat whipping cream and powdered sugar on high speed until stiff. Gently stir whipped cream and crushed strawberries into gelatin mixture. Pour into crust. Refrigerate about 3 hours or until set. Garnish with whipped cream and strawberry halves. Store in refrigerator.

¼ cup white sugar
½ cup brown sugar
½ cup all-purpose flour
1 tablespoon cornstarch
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 tablespoon vanilla extract
½ teaspoon almond extract
4 cups fresh strawberries, halved
2 tablespoons butter

Steps:

  • Preheat oven to 425 degrees F (220 degrees C.) Lay one crust into a 9 inch pie pan, making sure the edges extend slightly beyond the pan.
  • In a large bowl, mix together white and brown sugars, flour, cornstarch, cinnamon, nutmeg, vanilla and almond extract. Add the strawberries to the mixture and gently stir to coat thoroughly. Pour into the crust, mounding it slightly in the middle.
  • Cut the second crust into 1/2 inch strips and weave into a lattice over the filling. Roll up the extra dough on the bottom crust to seal down the lattice strips, then press with fingers to form a fluted edge. Dot with butter in the open squares. For a golden crust, brush lattice lightly with milk, then sprinkle with sugar.
  • Bake in the preheated oven for 35 to 40 minutes, or until golden brown.

3/4 cup confectioners' sugar
2 teaspoons grated lemon zest
1/2 teaspoon lemon extract
TOPPING:
6 cups fresh strawberries, hulled (about 2 pounds)
3/4 cup sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1 cup water
1 package (3 ounces) strawberry gelatin
1 teaspoon butter

Steps:

  • In a large bowl, mix flour, sugar and salt; cut in shortening until crumbly. Gradually add vinegar and milk, tossing with a fork until dough holds together when pressed. 1/2 cup quick-cooking oats
1/2 cup chopped pecans
2 tablespoons sugar

3/4 cup sugar
2 tablespoons cornstarch
1 cup water
2 tablespoons light corn syrup
2 tablespoons strawberry gelatin powder
1 quart fresh strawberries

Steps:

  • In a large bowl, combine the flour, oats, pecans, sugar and salt; stir in the butter until blended. Press onto the bottom and up the sides of a 9-in. pie plate. Bake at 400° for 12-15 minutes or until lightly browned. Cool on a wire rack. , For filling, combine sugar and cornstarch in a saucepan. Gradually stir in water and corn syrup; bring to a boil over medium heat. Cook and stir for 2 minutes or until thickened. Remove from the heat; stir in gelatin until dissolved.
