- Cut turkey breast cutlets into 12 3-inch squares. Tear mozzarella into 12 small strips. Peel and quarter shallots. Working on a cutting board, use 2 overlapping basil leaves to enclose a cheese strip and place on a piece of turkey. Roll turkey around filling and thread onto an 8-inch skewer to hold the roll-up closed. Follow with 1 shallot wedge and 1 cherry tomato. Add 2 more roll-ups to skewer, alternating with shallot and tomato. Repeat to make 3 more kebabs.
- Heat a grill to medium-high. Clean and lightly oil hot grill. Season kebabs with salt and pepper and grill, turning and brushing with Italian dressing occasionally, until turkey is cooked through and cheese is melted, 10 to 12 minutes.

- Mix the ground turkey, egg, black beans, red bell pepper, mozzarella cheese, garlic powder, salt, and black pepper together in a bowl until blended; form the mixture into 4 patties.
- Heat a large skillet over medium heat; cook the turkey patties in the skillet until cooked through and no longer pink the center, 7 to 10 minutes per side. An instant-read meat thermometer inserted into the center of a patty should read at least 160 degrees F (70 degrees C).

I came up with this recipe for a recipe contest, and it's been a family favorite ever since. For a lighter version, omit stuffing the meatballs with mozzarella cheese. Serve with your choice of pasta.

- Preheat an oven to 375 degrees F (190 degrees C).
- Place the ground turkey, onion, garlic, egg, bread crumbs, Parmigiano-Reggiano cheese, parsley, pesto, milk, salt, and black pepper in a bowl. Mix until evenly blended, then form into 1 3/4-inch meatballs. Make a hole in the meatball with your finger and place a cheese cube in the hole. Seal the meatball around the cheese and place on a nonstick baking sheet. Drizzle the olive oil over the meatballs.
- Bake in the preheated oven until the meatballs are no longer pink in the center, about 30 minutes. Heat the marinara sauce in a saucepan over low heat. Bring to a simmer, and place the baked meatballs in the marinara sauce for about 2 minutes.

MOZZARELLA-STUFFED TOMATOES

- Preheat oven to 375 degrees F.
- Cut the tops off the tomatoes and, using a spoon, hollow out the middle. In a medium bowl, combine the mozzarella, bread crumbs, parsley, garlic, oregano, and olive oil. Season to taste with salt and pepper. Place the stuffing in the tomatoes, taking care not to pack them too tight. Place on a baking sheet and transfer to the oven. Roast for 30 minutes.
GRILLED MOZZARELLA AND TOMATO SKEWERS
Created by Chef Richard Krause for "Chef on a Shoestring." The CBS Saturday Early Show challenge was to create a gourmet 3 course meal for 4 people for less than $20. I love the presentation of this, much more interesting than simple bruschetta. Cut the bread into about 3/4" thick rounds for this. The ingredients after the skewers is for the sauce. I've also made this without the bread before and served it over couscous as a main dish. BE VERY CAREFUL cooking these as you only want them lightly toasted. It literally takes seconds. If you leave them over the heat too long, the cheese will melt all over the place.

- Cut mozzarella in half, then into eight 3/4" slices.
- Place ingredients on the skewers in the following order: bread, tomato, basil, mozzarella, tomato, basil, mozzarella and bread. Set aside while you make the sauce.
- Mix all the sauce ingredients (everything following the skewers) together in a saucepan and warm for 1-2 minutes before serving. You don't want the tomatoes to break down, but rather just to be warmed.
- Brush the skewered mozzarella and tomato with a little olive oil and season with salt and pepper.
- Grill over high heat on both sides until the bread is lightly toasted and the cheese begins to melt, about 30-45 seconds per side.
- Spoon the sauce onto 4 warm dinner plates. Set the skewers neatly on top of the sauce, slide out the skewers and serve.

- pre-heat over to 400F degrees.
- cut mozzarella cheese into very small cubes.
- mix breadcrumbs (I use pepperage farms herb crusted stuffing mix) and cayenne pepper in large bowl.
- add 1 egg and minced garlic to breadcrumbs.
- fold in ground turkey.
- may need to add more breadcrumbs to desired texture.
- roll meatballs to about 1 inch size.
- make hole in each meatball and add small cube of mozzarella cheese to middle, then pinch meat around and roll to fully cover cheese.
- Place on lighty greased baking pan.
- bake at 400F degrees for 15-20 minutes, or until meatballs fully cooked.

- Preheat the oven to 375˚F (190˚C).
- Make the sauce: In a medium bowl, stir together the tomato sauce, apple cider vinegar, and honey. Set aside.
- Make the meatloaf: In a large bowl, combine the ground turkey, zucchini, onion, garlic, egg, Dijon mustard, honey, 2 tablespoons of the tomato sauce, bread crumbs, salt, pepper, oregano, basil, and parsley. Mix well.
- Add half of the meatloaf mixture to a greased loaf pan and flatten to form an even layer.
- Layer the cheese over the meatloaf layer. Top with the rest of the meatloaf and smooth the top.
- Top the meatloaf with half of the tomato sauce mixture, using a spoon or rubber spatula to spread evenly. Reserve the rest of the tomato sauce.
- Bake the meatloaf for 1 hour, or until the internal temperature reads 160˚F (70˚C) when tested with a meat thermometer.
- When the meatloaf is cooked through, warm the reserved tomato sauce in the microwave or a skillet, then drizzle on top of the meatloaf.
- Garnish with fresh parsley and serve with your favorite sides. (We used mashed sweet potatoes and asparagus.)

- Marinara-heat oil in medium saucepan over medium heat; add onion and garlic; cover and cook, stirring frequently, until translucent, about 5-7 minutes.
- Stir in fresh tomatoes and any juices, sun-dried tomatoes, salt and pepper; bring to a simmer and cook, stirring occasionally, until tomatoes have broken down, 8-10 minutes.
- Stir in basil and remove from the heat; transfer to a food processor and pulse to form a coarse-textured sauce.
- Return to the pan and set aside.
- Burgers-place turkey, scallions, garlic, Worcestershire sauce, lemon zest, oregano, pepper, and salt in a large bowl.
- Gently combine, without overmixing, until evenly incorporated.
- Form into 8 thin patties about 4 inches wide and 3/8 inch thick.
- Combine 1/4 cup cheese and basil and place an equal amount in the center of 4 patties.
- Cover with the remaining patties and crimp the edges closed.
- Heat oil in a large nonstick skillet over medium heat.
- Add burgers and cook, turning once, until an instant-read thermometer inserted in the center reads 165°, 8-10 minutes.
- Reheat the marinara on the stove.

- Wash, trim and finely chop one of the tomatoes, as if making salsa. Finely chop the onion, and mince the garlic.
- Wash, trim, seed and mince the jalapeno. Wash and finely chop the cilantro and parsley. Shred the mozzarella. Combine all these ingredients with the oil, ground turkey, salt and pepper, and shape into 6 patties.
- Heat a nonstick pan until it is medium-hot, and saute the patties until they are browned on both sides and cooked through, 5 to 7 minutes. Slice the rolls, and put the turkey burgers on them, if desired.
- Wash, trim and thickly slice the tomatoes; serve with the burgers.

- Preheat oven to 350 degrees F (175 degrees C).
- Cut the tops off each tomato and scoop out a small amount of the insides. Discard tops and insides.
- Heat olive oil in a skillet over medium heat; cook and stir zucchini, green bell pepper, garlic, and salt until tender, about 10 minutes. Add ground turkey; cook and stir until turkey is browned and crumbly, 5 to 7 minutes. Stir quinoa and 1/2 of the tomato sauce into the ground turkey mixture.
- Arrange tomatoes in a baking dish. Fill each tomato with turkey-quinoa mixture. Pour remaining tomato sauce over each stuffed tomato. Pour a 1/2 inch of water into the bottom of the baking dish.

- To a large bowl, add ground turkey, basil, panko, egg, salt, pepper, vinegar, and parsley. Grate the onion and garlic over the bowl to catch all the juice. Mix everything together using your hands until it is combined. Do not overmix.
- Divide meat mixture into four portions. Form one portion into a patty around a piece of mozzarella, making sure that cheese is completely encased by meat. Repeat process for the remaining meat, forming 4 patties total.
