Meatballs are always a crowd pleaser. These Italian Turkey Meatballs happily wallow in a pan of easy, homemade tomato sauce.

1 pound lean ground turkey
1/2 medium onion (grated)
3 garlic cloves (minced)
1/4 cup minced flat-leaf parsley
1/4 cup whole wheat breadcrumbs
1 egg
1 teaspoon ground oregano
1/2 teaspoon salt
1/2 teaspoon ground pepper
2 teaspoons olive oil
1 small onion (chopped)
3 garlic cloves (minced)
1 teaspoon ground oregano
1/4 teaspoon red pepper flakes
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 28 ounce can crushed tomatoes
1 14 ounce can crushed tomatoes
1/4 cup minced flat-leaf parsley
4 basil leaves (thinly sliced)

Steps:

  • Preheat the oven to 350 degrees F. Lightly coat a baking sheet with cooking spray.
  • In a large bowl, stir together the ground turkey, onion, garlic, parsley, breadcrumbs, egg, oregano, salt and pepper.
  • Divide the mixture into 8 portions, form into balls and place on the prepared baking sheet.
  • Bake until the meatballs are firm to the touch and cooked through, 15 to 20 minutes.
  • Heat the olive oil in a large nonstick skillet set over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Stir in the garlic, oregano, salt and pepper, and cook for 1 minute.
  • Add the crushed tomatoes, bring the sauce to a boil, and then simmer for 10 minutes. Stir in the parsley and basil.
  • Nestle the meatballs into the sauce and spoon sauce over to coat the meatballs.
  • Serve over pasta or rice, or on their own.

Number Of Ingredients 15

1 onion, peeled
1 celery stalk
2 tablespoons garlic flavoured oil
1 teaspoon dried thyme
2 x 14 ounce cans diced plus approx. 3 1/3 cups (2 full cans) water
1 teaspoon sugar
1 teaspoon kosher salt flakes or 1/2 teaspoon table salt
Pepper, to taste
1 pound ground turkey
1 egg
3 tablespoons breadcrumbs
3 tablespoons grated Parmesan
2 tablespoons of finely chopped onion and celery (from the tomato sauce ingredients above)
1 teaspoon Worcestershire sauce (such as Lea and Perrins)
1/2 teaspoon dried thyme

Steps:

  • Put the peeled onion and celery into a processor and blitz to a mush. Or you can chop as finely as humanly possible by hand. Reserve 2 tablespoons for the meatball mixture.
  • Warm the garlic flavoured oil in a heavy saucepan or Dutch oven, add the onion and celery mixture, along with the thyme, and cook at moderate to low heat, stirring every now and again, for about 10 minutes.
  • Add the cans of tomato, filling up each empty can with water to add to the pan. Season with the sugar, salt and pepper, stir and then leave to come to a bubble, and then turn down to let it simmer gently while you get on with the meatballs.
  • Put all the ingredients for the meatballs, including the reserved chopped onion and celery, and salt according to preference, into a large bowl and mix together, gently, with your hands, wearing disposable vinyl gloves if you feel so inclined. Don't over-mix, as that will make the meatballs dense-textured and heavy.
  • When all the meatball ingredients are not too officiously amalgamated, start rolling. The easiest way really to do this is to pinch out an amount about the size of a generously heaped teaspoon and roll into a bowl between the palms of your hands. Put the meatballs on a baking tray, lined with baking parchment or greaseproof paper, as you go. You should get about 50 little meatballs.
  • Drop these gently into the simmering sauce; I try and let these fall in concentric circles working around the pan from the outside edge inwards, in only the vaguest of fashions.
  • Let the meatballs cook for 30 minutes, until cooked through. Serve with rice or pasta or however you so please.

Delicious easy-to-make, sure-to-please meatball recipe that I whipped up spur of the moment. This is so good, that if I weren't already married, I would soooooo marry me! The seasonings may be adjusted to suit personal taste.

1 egg
3/4 cup whole wheat bread crumbs
1/4 cup onion flakes
1 tablespoon italian seasoning
1 tablespoon seasoning salt
1 tablespoon garlic sea salt
2 teaspoons chili pepper flakes
kosher salt & freshly ground black pepper
2 lbs ground turkey
8 ounces mozzarella cheese
1 tablespoon basil olive oil
2 tablespoons herbed butter
1 large yellow onion
8 ounces mushrooms
2 garlic cloves
1 (6 ounce) can tomato paste
1 (28 ounce) can tomato sauce
1 cup merlot
kosher salt & freshly ground black pepper

Steps:

  • Combine first 8 the ingredients in a large mixing bowl. Then add the ground turkey last.
  • Mix just enough to combine. Let rest for 15 - 30 minutes.
  • Make meatballs about the size of your fist and insert cube of mozzarella cheese in each. Pinch closed and roll between palms.
  • Put on baking sheet.
  • Bake at 400° for 20 minutes.
  • While meatballs are baking make sauce.
  • Add chopped onions and chopped mushrooms to olive oil and herbed butter melted in large dutch oven over high heat. (Pan should be large and deep enough to accommodate sauce plus 25 fist-sized meatballs.).
  • Add garlic and cook until onions and mushrooms are soft.
  • Add tomato paste, tomato sauce and merlot wine.
  • Salt and pepper to taste. Cover and simmer over medium heat.
  • After draining fat, add meatballs and any mozzarella cheese that spilled out into the baking sheet to the tomato sauce.
  • Cover and let cook over low heat for 30 minutes.
  • Serve over pasta and enjoy!

Tender meatballs filled with onions and Parmesan, bathed in plenty of tomato sauce, are classics in every way except for one: They call for turkey instead of the usual beef (or beef-veal-pork combination). Serve them over spaghetti or polenta, or stuff them into a hero roll for a sandwich. Try to use ground dark meat turkey here if you can, it has a deeper, richer flavor than ground white meat.

1/2 cup grated Parmesan cheese, more for serving, if desired
1/2 cup panko or other plain dried bread crumbs
1/4 cup minced onion
1/4 cup chopped chives or basil
2 garlic cloves, grated on a microplane or minced
1 1/2 teaspoons kosher salt
1/2 teaspoon black pepper
1/2 teaspoon dried oregano
Pinch red pepper flakes (optional)
1 1/2 pounds ground turkey, very cold
1 large egg, beaten
3 tablespoons extra-virgin olive oil, more as needed
3 cups marinara sauce, more to taste

Steps:

  • In a large bowl, combine cheese, bread crumbs, onion, chives, garlic, salt, pepper, oregano and red pepper flakes, if using, and mix well. Add turkey and egg and blend with your hands until well mixed. If you've got time, cover mixture and chill for an hour or up to 24 hours. These are easiest to form into balls while very cold. Form into 28 meatballs, each about 1 1/4-inches in diameter.
  • Heat 2 tablespoons of the oil in a large sauté pan. When hot, add enough of the meatballs to fit in one layer without crowding, and brown on all sides, 5 to 8 minutes. Transfer to a plate, add another tablespoon of oil to pan and brown another layer of meatballs, transferring them to the plate as they brown. Repeat until all meatballs are browned, adding more oil to the pan as needed.
  • When meatballs are all browned, add marinara sauce to pan and bring to a simmer, scraping up the browned bits on the pan bottom. Return meatballs and their juices to pan, shake pan to cover the meatballs with sauce, and lower heat. Partly cover pan and simmer until the meatballs are cooked through, 15 to 20 minutes.
  • Serve hot, drizzled with more olive oil and sprinkled with more cheese, if you like.

An ultra rich tomatoey sauce and the mozzarella in the meatballs is a cool little surprise when you cut them open. Perfect for family meals and children will love them. Trust me, it is easier than it looks!

Steps:

  • For the tomato sauce heat the oil in a decent sized saucepan. When the oil is hot enough add the onion, pepper and garlic. Stir this mixture and cook for a few minutes on a medium heat till it has all softened and the onions are almost see-through. Then add the mushrooms and cook for a few minutes more.
  • Now add the tinned tomatoes, tomato puree, herbs, salt & pepper, wine and oxo cube. Don't worry about pour the wine in after the tinned tommatoes as there is no need to bubble off the alcohol in a dry pan as simmering the sauce later will do this anyway.
  • Bring the sauce to the boil and then simmer for 1/2 an hour to an hour. Keep the lid off of the pan till the sauce as thickened up enough for you, when you can then put the lid back on. If the sauce is too dry at any point add some water. Stir occasionally to check that the sauce isn't sticking to the pan and that it isn't too dry.
  • For the meatballs, soak the breadcrumbs in the wine for 5 minutes. While this is happening use the time to check the sauce and preheat the oven to 125C (in a non fan assisted oven)
  • Add to the breadcrumbs the minced meat, mixed herbs, parmesan, pepper and egg. Mix this all up with your hands.
  • Split this meat mixture into 30 - 40 meatballs roughly. With each meatball flatten it out roughly in one hand, add a cube of mozzarella and shape the meatball so that the mozzarella is sealed inside each one.
  • When the meatballs are all rounded, heat the oil in a frying pan to brown and seal the meatballs in batches. When browned, add the meatballs to an oven dish.
  • Put the meatballs in the oven for 25-30 minutes, and mix them around 1/2 way through so that they all cook evenly.
  • When you take them out, cut a fat one open just to check that they are cooked all the way through. If not quite completely cooked pop back in the oven for 5 more minutes.
  • Serve this with spaghetti. You can either stir the pasta, sauce and meatballs all together and serve, or you can add the sauce to the meatballs in the oven dish, sprinkle with grated cheese and bake for 5 minutes more, till the cheese has melted. Be aware that the quantity of meatballs for this recipe will serve more people than the sauce will, so you can put any leftover meatballs in the fridge for another day :)
