Two 7-ounce jars canned, sliced pimientos, drained
Three 10-ounce bricks sharp Cheddar, finely grated
1 cup mayonnaise
White sandwich bread

Steps:

  • Place the drained pimientos in a blender or food processor and puree until smooth. Using an electric mixer, combine the pimientos and cheese, beating until smooth. Beat in the mayonnaise. Spread on slices of white sandwich bread while the mixture is room temperature. Trim the bread crusts and cut the sandwiches into triangles.

8 ounces cream cheese, softened
2 tablespoons unsalted butter, softened
1 small garlic clove, quartered
1/4 teaspoon kosher salt
1/4 cup chopped parsley leaves
1 tablespoon chopped chives
Crackers or toasts (for serving)

Steps:

  • Combine cream cheese, butter, garlic, and salt in the bowl of a food processor. Pulse until smooth. Add parsley and chives and pulse a few times until well combined. Pack mixture into a small bowl, ramekin, or glass jar. Cover and chill at least 30 minutes. Serve with crackers or toasts.
  • Do Ahead
  • Cheese can be made 5 days ahead. Cover and chill.

1/4 cup dry white wine
3 tablespoons unsalted butter, softened
2 tablespoons fresh parsley leaves
1 small clove garlic

Steps:

  • Remove any rinds from hard cheeses. Grate hard cheeses and cut others into 1/2-inch cubes. Place cheese, wine, butter, herbs, and garlic in a food processor and blend until smooth, approximately 2 minutes. Serve immediately or refrigerate for at least 1 hour for a firmer consistency. This can be stored in the refrigerator for up to 1 week.

1/4 cup parmesan cheese, grated
3 ounces cream cheese, softened and cut into chunks
1/2 teaspoon garlic, minced
4 -5 green olives, pitted
1/4 teaspoon italian seasoning
1/4 teaspoon dried parsley
1/4 teaspoon savory
1 tablespoon cooking sherry
2 teaspoons olive oil

Steps:

  • 1. Combine all ingredients except olive oil in food processor.
  • 2. Pulse chop until well mixed, gradually adding olive oil until it reaches desired consistency.
  • 3. Enjoy with crackers, crusty bread, or pita.

4 ounces blue cheese (I use crumbles.)
1/2 cup green onion

  • Mix all ingredients in food processor until homogenous in texture.
  • Refrigerate until ready to use.
  • I like to use rye rolls and spread this on them prior to baking.

two 10-ounce logs soft mild goat cheese
3 tablespoons heavy cream
1 1/2 tablespoons paprika
1 tablespoon caraway seeds
3/4 teaspoons dry mustard
1 garlic clove, minced
4 flat anchovies, drained
4 scallions, sliced very thin crosswise
2 tablespoons drained capers

Steps:

  • In a food processor blend goat cheese, cream, paprika, caraway seeds, mustard, garlic, anchovies, and salt and pepper to taste until smooth.
  • Transfer mixture to a bowl and stir in scallions and capers. Chill spread, covered, at least 2 hours and up to 2 weeks. Serve as a dip for crudité or as a spread for crackers or sandwiches. Makes about 2 1/2 cups.
