Our all time favorite dish. Breaded chicken baked with Muenster cheese and mushrooms in chicken broth. Easy enough to make for the family, but special enough to make for company.

6 skinless, boneless chicken breasts
1 ½ cups milk
2 cups dried bread crumbs, seasoned
6 slices Muenster cheese
1 cup fresh sliced mushrooms
½ cup chicken broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Dip chicken in milk, then in breadcrumbs. Lightly brown coated chicken in a large skillet, then arrange in a 9x13 inch baking dish.
  • Top each chicken with a slice of cheese. Top with mushrooms, then pour broth over and around chicken. Cover dish with aluminum foil.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes; remove cover, baste with any remaining broth, and bake for another 15 to 20 minutes.

Chicken Cutlet Sandwich with Herb Mayonnaise image

Number Of Ingredients 11

1 1/2 pounds bone-in chicken breast
Kosher salt and freshly ground black pepper
Canola oil, for brushing chicken
1/2 cup mayonnaise
1 tablespoon spicy brown mustard
1 lemon, zested and juiced (reserve the juice for the Blueberry Scones recipe)
2 tablespoons chopped parsley leaves
Fennel fronds from 1 bulb, chopped
1 baguette, about 16-inches long
1/2 medium red onion, thinly sliced
1/2 small head lettuce, shredded

Steps:

  • Heat the grill or a grill pan over medium-high heat. Remove the skin from the chicken and remove the bones. Slice the breast diagonally across to make 4 thin pieces. Pound the chicken lightly between 2 pieces of plastic wrap. Season the cutlets with salt and pepper, to taste, and brush them with a little oil. Grill the cutlets until cooked through, about 4 to 5 minutes per side. Remove from the pan and let cool.
  • Put the mayonnaise into a bowl along with the mustard, lemon zest, parsley, and fennel fronds and whisk to combine. Check the seasoning and add salt, and pepper, to taste. Cut the baguette in half lengthwise. Spread the herb mayonnaise on the bottom half. Top with the chicken, onions, and lettuce. Spread the remaining mayonnaise on the other half and put it on top. Cut the sandwich into 4 pieces and wrap well in waxed paper or plastic wrap.

1 cup good mayonnaise, such as Hellmann's
2 tablespoons buttermilk, shaken
1 teaspoon good white wine vinegar
2 tablespoons thinly sliced scallions, white and green parts
1 tablespoon minced fresh parsley
1 tablespoon minced fresh chives
1/8 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper

Steps:

  • Whisk together the mayonnaise, buttermilk, vinegar, scallions, parsley, chives, thyme, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl. Cover and refrigerate until ready to use.

4 ciabatta or 4 hearty bread rolls
1 lb chicken breast, cooked and sliced
4 jarred roasted red peppers, cut into large strips
8 slices muenster cheese
1 cup romaine lettuce
1/2 cup mayonnaise
1 tablespoon basil, chopped
1/2 tablespoon chives, chopped
1 teaspoon lemon juice
salt and pepper

Steps:

  • Preheat broiler to high. In a small bowl, mix the mayonnaise, basil, chives, lemon juice, salt and pepper. Cut the 4 sandwich rolls in half, spread herbed mayonnaise on the bread. On the top bun, place the Romaine, set aside. On the bottom bun, place the sliced chicken and strip of roasted red pepper. Top the chicken and red pepper with 2 slices of muenster cheese, and place under the broiler and broil until the cheese melts. Place the top on each sandwich and serve immediately.

This is an excellent, delicious, superb dish! Everyone asked for this recipe when I made it for Christmas dinner. You can add fresh sliced mushrooms too if you want before you layer the cheese on it. (the prep time includes refrigeration time)

4 chicken breasts
2 eggs
1 -2 cup seasoned bread crumbs
2 tablespoons butter
1/3 cup white wine
6 -8 slices muenster cheese

Steps:

  • Cut up chicken breast in bite sizes pieces.
  • Beat 2 eggs.
  • Soak chicken for 1 hour hour in refrigerator.
  • Drain after done soaking, and coat chicken in seasoned bread crumbs.
  • Brown in butter (not oil).
  • Spray 9x13 pan and put chicken in, add white wine.
  • Cover with sliced cheese.
  • Bake at 350 covered with foil for 15 minutes.
  • Bake uncovered for additional 15 minutes.
