COCONUT-BERRY MUESLI BREAKFAST PARFAIT



Coconut-Berry Muesli Breakfast Parfait image

Coconut flavor makes muesli the star of this easy breakfast parfait.

1 container (6 oz) Liberté® Méditerranée coconut yogurt
1/4 cup Nature Valley™ toasted oats muesli original
1/2 cup fresh mixed berries

Steps:

  • In parfait glass or dessert dish, spoon about half of the yogurt. Sprinkle with about 3 tablespoons of the muesli. Add remaining yogurt. Top with berries, and sprinkle remaining tablespoon of muesli over berries.
  • Serve immediately.

This is a nutritious and delicious breakfast cereal. Use any type of dried fruit you desire! You can also use almonds in place of walnuts if you like. Wonderful when served in bowls with milk and fresh berries or sliced fresh fruit.

4 ½ cups rolled oats
½ cup toasted wheat germ
½ cup wheat bran
½ cup oat bran
1 cup raisins
½ cup chopped walnuts
¼ cup packed brown sugar
¼ cup raw sunflower seeds

Steps:

  • In a large mixing bowl combine oats, wheat germ, wheat bran, oat bran, dried fruit, nuts, sugar, and seeds. Mix well. Store muesli in an airtight container. It keeps for 2 months at room temperature.

1/2 cup unsalted raw almonds
1 cup nonfat milk
1 cup nonfat plain yogurt
1 cup old fashioned oats
2 tablespoons honey
1/4 teaspoon vanilla extract
2 cups fresh mixed berries (strawberries hulled and halved) or 2 cups frozen mixed berries (strawberries hulled and halved)

Steps:

  • Toast the almonds in a dry skillet over medium-high heat, stirring frequently until golden and fragrant, about 3 minutes. Chope them coarsely.
  • In a medium bowl, stir together the milk, yogurt, oats, honey and vanilla extract. Divide the oat mixture evenly among four small dishes or parfait glasses. Top each with 1/2 cup berries, then 2 tablespoons chopped almonds.
  • Cover tightly and refrigerate overnight.
