FRENCH ONION SOUP BREAD PUDDING

French Onion Soup Bread Pudding image

Everyone knows that the best part of French onion soup is the crusty, cheesy top: these individual savory bread puddings are packed with all that gooey, bready goodness.

Provided by Food Network Kitchen

Categories     main-dish

Time 2h

Yield 6 servings

Number Of Ingredients 11

1 stick (8 tablespoons) unsalted butter, plus more for greasing
One 24-inch baguette
2 large yellow onions, thinly sliced (about 3 pounds),
1 tablespoon fresh thyme leaves
Kosher salt and freshly ground black pepper
1 cup dry white wine
1 beef bouillon cube, crumbled
1 cup heavy cream
1/4 cup chopped fresh chives
4 large eggs
6 cups grated Gruyere

Steps:

  • Preheat the oven to 350 degrees F. Grease six 8-ounce ramekins with butter and set aside on a rimmed baking sheet.
  • Cut six 1/2-inch thick slices from the baguette and place them on the baking sheet. Cut the remaining baguette into 1/2-inch cubes (you should have about 4 1/2 cups) and spread them out on the same baking sheet. Bake, tossing the cubes and flipping the slices halfway through, until lightly browned, about 15 minutes.
  • Meanwhile, melt the butter in a large skillet over medium-high heat. Add the onions, thyme, 1 teaspoon salt and a generous amount of black pepper and cook, stirring occasionally, until the onions begin to soften, about 6 minutes. Reduce the heat to medium-low and cook, stirring occasionally, until the onions are very soft and caramelized, 35 to 40 minutes. Add the wine, turn the heat to medium-high, bring to a boil and cook until the wine has evaporated, about 5 minutes. Add 2 cups water and the bouillon cube and stir until the cube dissolves. Bring the mixture to a boil and let cook until thickened slightly, about 5 minutes.
  • Whisk together the heavy cream, chives, eggs and 1/2 teaspoon salt in a medium bowl. Add 1/2 cup bread cubes to each ramekin, sprinkle each with 1/4 cup Gruyere and top each with 1/4 cup bread cubes. Pour the egg mixture over the top. Divide the onion mixture among the ramekins. Top each ramekin with a slice of bread and 3/4 cup Gruyere.
  • Set aside at room temperature for 15 minutes to allow the bread to absorb the egg mixture. Bake on the baking sheet until the custard is set and the bread pudding is puffed and golden, about 20 minutes. Let stand 5 minutes before serving.

Time 1h20m

Yield 6 servings

Number Of Ingredients 12

1 1/2 pounds onions (2 to 3 medium onions), thinly sliced
1 teaspoon sugar
3 teaspoons kosher salt
3 tablespoons clarified butter*
1 tablespoon sweet sherry
1 large Italian or French bread loaf, crusts removed, cut into 5 by 1-inch pieces
6 eggs
2 cups heavy cream
1 tablespoon grainy mustard
1 teaspoon finely chopped thyme
1 teaspoon freshly ground black pepper
2 cups grated Gruyere cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large skillet, saute the onions, sugar, and 1 teaspoon of the salt in the clarified butter over medium-high heat; stir constantly to prevent burning. Cook until golden brown. Add sherry and stir to lift any caramelized onion on the bottom of the pan. Remove from the heat and set aside.
  • Spread out the bread pieces evenly on a baking sheet. Place in the oven for about 5 to 8 minutes to dry the bread slightly but not to add color. Set aside to cool.
  • Whisk together the eggs, cream, mustard, thyme, the remaining salt, and pepper. Soak the bread in the egg mixture for 5 minutes.
  • In a casserole dish, layer the bread with the onions and cheese. Pour the remaining egg mixture over the top.

CHEESY CARAMELIZED ONION SKILLET BREAD

Cheesy Caramelized Onion Skillet Bread image

This appetizer is perfect for a football game or informal party, but it came about because I have two sons who are always hungry. I needed time to get dinner on the table after coming home from work. If you'd like, you can use homemade biscuits instead of prepared. -Mary M. Leverette, Columbia, South Carolina

  • Halve both onions through root end. Using the tip of your knife, cut a V-shaped notch around root to remove it (this will ensure that all slices separate when you cut the onion).
  • Place 1 onion half on your cutting board so root end is facing you, then thinly slice onion lengthwise, starting at one side and working all the way to the other (so your knife runs through the root halfway through, not starting or ending at the root end). You’re going for slices that are ¼"–⅛" thick.
  • Repeat same slicing procedure for remaining onion halves. It’s a lot of onion! But it will cook down quite a bit, so it’s best to start with a large quantity.
  • Heat 2 Tbsp. butter in a large saucepan over medium until melted and sizzling. You can use a skillet to cook the onions, but a pan with high sides will keep the onions from flipping out onto your stove. Using a pan that also has a wide base gives water room to evaporate, allowing the onions to caramelize rather than steam.

  • For the Starter (about 10 to 14 hours at room temperature) : Whisk together the flour and yeast in a bowl. Pour the warm water over it and mix well with a wooden spoon or fork until you have a somewhat wet dough. Cover loosely and let it sit on your counter top at room temperature for 10 to 14 hours. Overnight works well.
  • Now mix together the dough : Whisk together the flours, salt and yeast in a large bowl. Pour a little of the warm water (about 1/3rd cup) into the edge of the bowl containing the starter. This will help release it easily.
  • Use approximately a third of the water to pour around the starter edges to release it from the sides of the bowl. Put the remaining warm water, the honey and all the starter (with the liquid) and mix in with a wooden spoon. Now add the flour and combine into a dough using a scraper. Add a little more flour or water if required, and mix well to combine until you have a dough that has come together well and is sticky to touch.
  • Now comes a series of multiple stretches, folds, tucks and letting the dough rest in between, for a total of 4 times. The book advises this to be done in the bowl itself by stretching and rolling the dough and then tucking in the sides. I chose to do this on my counter top.
