Foolproof Popovers image

Bake Melissa d'Arabian's recipe for hollow, golden Foolproof Popovers from Ten Dollar Dinners in a muffin tin for the perfect accompaniment to a Sunday roast.

Number Of Ingredients 5

3 tablespoons melted butter, divided
2 eggs
1 cup milk, warmed for 30 seconds in the microwave (should be lukewarm to warm)
1 cup all-purpose flour
1 teaspoon kosher salt

Steps:

  • Special equipment: muffin tin
  • Preheat the oven to 400 degrees F.
  • Using a pastry brush, coat 8 muffin cups with 1 tablespoon of the melted butter and put the tin in the oven for 5 minutes. Meanwhile, mix the eggs in a blender until light yellow. Add the warmed milk and blend. Add the flour, salt and remaining melted butter, and blend until smooth. Pour the batter into the warmed muffin tin and return it to the oven to bake until golden, about 35 minutes. Remove from the oven and serve warm.

Muffin Pan Popovers image

Skip all of the fancy kitchen gadgets and whip up this quick recipe for light and fluffy Muffin Pan Popovers!

4 large eggs
1 1/2 cups whole milk, lukewarm
1/2 teaspoon salt
1 1/2 cups all-purpose flour
3 Tablespoons unsalted butter, melted, plus more for greasing pan

Steps:

  • Preheat the oven to 450°F and position the oven rack on a lower shelf. (See Kelly's Notes.)
  • Place the eggs in a bowl of hot water for 10 minutes.
  • Generously grease a standard 12-cup muffin pan all over (including the areas around the cups) with unsalted butter.
  • In a large bowl, whisk together the eggs, milk and salt until the mixture is well combined. Add the flour and continue whisking until the mixture is frothy. (There shouldn't be any large lumps.)
  • Quickly whisk in the melted butter until combined then divide the the batter among the muffin cups, filling them 2/3 to 3/4 full.
  • Bake the popovers for 20 minutes without opening the oven door. Reduce the heat to 350°F (again without opening the door), and bake the popovers for an additional 10 to 15 minutes, until they're a deep, golden brown. (See Kelly's Notes.)
  • Remove the popovers from the oven, release them from the pan and serve immediately.

Popovers begin with essentially the same batter as Yorkshire pudding. Purists will tell you that what makes Yorkshire pudding so great is that it's cooked in beef drippings. But butter isn't a bad stand-in, and popovers are pretty easy. You can buy special popover pans, with deeper, narrower cups which force the tops up in a more pronounced fashion, but I wouldn't bother. Any muffin pan will produce a perfect popover if the butter is hot, the batter is rich and smooth and the baker is patient. But the patience ends when the popovers are done: they must be eaten right away.

5 tablespoons melted butter
2 eggs
1 cup milk
1 teaspoon sugar
1 teaspoon salt
1 cup all-purpose flour
1 teaspoon fresh thyme (or 1/2 teaspoon dried), optional

Steps:

  • Preheat oven to 425 degrees. Drizzle a teaspoon or so of melted butter in each cup of a 12-cup muffin pan or a popover tin and put it in oven while you make batter.
  • Beat together the eggs, milk, 1 tablespoon butter, sugar and salt. Beat in the flour a little bit at a time and add thyme if using; mixture should be smooth.
  • Carefully remove muffin tin from oven and fill each cup about halfway. Bake for 15 to 20 minutes, then reduce heat to 350 degrees and continue baking for 15 minutes more, or until popovers are puffed and browned. Do not check popovers until they have baked for a total of 30 minutes. Remove from pan immediately and serve hot.

I grew up with these buttery popovers served with homemade turkey noodle soup. Very easy to make and tasty. DO NOT open the oven until done!

1 cup milk
1 cup all-purpose flour
1 teaspoon salt
3 tablespoons butter, melted - divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Put 12-cup muffin tin in oven to preheat as well.
  • Beat eggs and milk together in a bowl with an electric hand mixer. Add flour and salt; continue beating into smooth batter.
  • Put about 3/4 teaspoon butter into each muffin tin and carefully spread butter up sides of each cup. Quickly divide batter among prepared cups.
  • Bake until popovers are risen well and browned, 30 to 35 minutes. Do not open the oven during baking.

Adapted from a Mr Food recipe. This is one time when nonstick spray just won't do the trick-grease your tins very well using shortening, oil, or butter or the muffins will stick.

1 cup all-purpose flour
1/4 teaspoon salt
1 cup milk
2 large eggs, lightly beaten

Steps:

  • Preheat oven to 425 F.
  • Mix all ingredients together in the bowl of an electric mixer.
  • Beat on low speed just until smooth (don't overmix).
  • Set a very well greased muffin pan into the preheated oven for 3 minutes or until a drop of water sizzles when dropped into the tin.
  • Once pan is preheated, ladle batter into the tins two-thirds full each.
  • Bake for 15 minutes, then LOWER the heat to 350 F and bake another 18-20 minutes.
  • Turn off the heat.
  • Using a knife tip, poke a small hole in the top of each popover to releases the steam.
  • Leave the popovers in the oven another 5 minutes to crisp up.
  • Serve immediately.
