MULBERRY COOKIE BARS
Steps:
- 1. Place Mulberry Sauce ingredients in medium sauce pan, save cornstarch and cold water. Cover and heat on medium-low, then reduce heat to low setting and simmer. Cook berries with other ingredients for about 20 minutes, mashing berries with a large metal spoon periodically.
- 2. Preheat oven to 350°F. Spray an 8" or 9" square pan with non-stick cooking spray. Mix oats, flour, sugar, and baking soda. Cut in butter until evenly distributed. Add sweetened condensed milk and mix. Mixture will be slightly sticky. Pat 3/4 of cookie mixture in bottom of pan. Bake for 10-12 minutes.
- 3. While cookie bakes, finish mashing berry sauce so no whole berries remain. Mix cornstarch and water and pour into cooking berry sauce. Stir as sauce thickens and remove from heat. After cookie has baked, remove from oven and spread berry sauce on top evenly. Drop small amounts of remaining cookie mixture over berry sauce until evenly distributed. All berry sauce will not be covered. Bake again for 20 minutes until cookie mixture has browned on top. Cool completely. Cut into 16 squares.

- In a large bowl, combine the flour, oats, 1 cup sugar and baking soda. Cut in butter until mixture resembles coarse crumbs. Reserve 2 cups for topping. Press remaining crumb mixture into a greased 13-in. x 9-in. baking pan; set aside. , In a large saucepan, combine blueberries, cornstarch, lemon juice and remaining sugar. Bring to a boil; boil for 2 minutes, stirring constantly. , Spread evenly over the crust. Sprinkle with the reserved crumb mixture. Bake at 375° for 25 minutes or until lightly browned. Cool on a wire rack. Cut into bars.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13 inch pan.
- In a medium bowl, stir together 1 cup sugar, 3 cups flour, and baking powder. Mix in salt and cinnamon, if desired. Use a fork or pastry cutter to blend in the shortening and egg. Dough will be crumbly. Pat half of dough into the prepared pan.
- In another bowl, stir together the sugar and cornstarch. Gently mix in the blueberries. Sprinkle the blueberry mixture evenly over the crust. Crumble remaining dough over the berry layer.
- Bake in preheated oven for 45 minutes, or until top is slightly brown. Cool completely before cutting into squares.
