CLASSIC MULLED WINE



Classic Mulled Wine image

Warm up with this classic mulled wine recipe! It's so easy to make. Gather a few basic ingredients and you'll be sipping mulled wine in 15 minutes! Recipe yields 1 bottle's worth of mulled wine (about 5 servings); multiply as desired.

2 small oranges or 1 large
1 bottle of affordable Merlot, Zinfandel or Garnacha (also called Grenache)
1/4 cup brandy
1 to 2 tablespoons maple syrup or honey, to taste
2 whole cinnamon sticks
3 star anise
4 whole cloves
Optional garnishes: Fresh whole cranberries (about 1/4 cup), cinnamon sticks, additional orange rounds or half moons

Steps:

  • To prepare the oranges, if using 2 small, slice one orange into rounds and slice the other in half. If using 1 large orange, slice it in half through the round middle, then slice one of the halves into rounds. Place the rounds into a medium heavy-bottomed pot or small Dutch oven. Squeeze the juice from the remaining oranges into the pot.
  • Pour the wine into the pot, followed by the brandy. Add 1 tablespoon of the sweetener for now. Add the cinnamon sticks, star anise and cloves.
  • Warm the mixture over medium heat until steaming (about 5 minutes), and keep an eye on it. When you start seeing the tiniest of bubbles at the surface, reduce the heat to the lowest of low.
  • Carefully taste, and add another tablespoon of sweetener if it's not sweet enough for your liking. If it's not spicy enough to suit your preferences, continue cooking over very low heat for 5 to 10 more minutes.
  • Serve in mugs with your desired garnishes! If you're adding cranberries as I did, you can add them to the pot to make it look extra festive.
  • If you expect to polish off the mulled wine within 20 minutes or so, you can keep it on the stove over extra-low heat (it will become more spicy with time). Otherwise, remove it from the heat, cover, and rewarm over low heat if necessary. Leftovers will keep in the refrigerator for a couple of days, covered (pour it through a strainer if you don't want it to become any more spicy than it already is).

This mulled wine recipe couldn't be easier to do. Don't bother with expensive wine - a cheap red will work beautifully and no one will ever know the difference! Start with a little sugar, then add more to taste. This recipe can be easily doubled or trebled.

4 cups dry red wine
2 (2 inch) pieces cinnamon sticks
1 teaspoon whole cloves
1 teaspoon whole allspice berries
1 large strip of lemon peel
1 large strip of orange peel
2 tablespoons sugar, or more to taste

Steps:

  • Combine red wine, cinnamon sticks, cloves, allspice, lemon peel, and orange peel in a heavy saucepan over medium heat. Heat gently, but don't boil. Stir in 2 tablespoons of sugar, and once dissolved, taste to see if you'd like to add more.
  • Keep hot on medium to low heat for 20 minutes to let the flavors infuse the wine. Serve your mulled wine hot in glasses or mugs.

A flavorful mulled wine recipe flavored with fresh apples, oranges and cranberries. It's the best holiday drink to get in the spirit. The best part is that the Instant Pot makes it easy to put together and keep warm! It's also great served over ice!

4 cups apple cider or 4 cups juice
5 whole cloves
4 cinnamon sticks
2 whole star anise pods
1/2 teaspoon whole all-spice berries
1/2 teaspoon black peppercorns
2 (750 ml) bottles dry red wine, such as Merlot
2 cups port wine or 2 cups apple brandy
2 navel oranges, thinly sliced
3 small apples, cored and sliced
1/2 cup fresh cranberries

Steps:

  • Add the apple cider, cloves, cinnamon, star anise, all-spice and peppercorns to the inner bowl of an 8-quart or larger Instant Pot. Lock the lid and make sure the valve is set to seal. Cook on high pressure for 3 minutes. Allow the pressure to naturally release for 10 minutes before manually releasing any residual steam inside.
  • Carefully open the lid and strain out the spices with a small fine mesh sieve. Stir in the wine, port or brandy, orange slices, apple slices and cranberries. Set the pressure cooker to sauté on low, place the glass lid on and cook, stirring often, until warmed through and just barely simmering, about 15 minutes. You can serve immediately or set the warming button to keep warm until ready to serve.

  • While the wine comes to a heat that is near the boiling point (70-80 degrees celsius), add 3 cinnamon sticks, a pinch of nutmeg, and sugar to taste, stirring occasionally. The mulled wine should be pleasantly sweet and warm. Continue cooking on low heat for about 20 minutes, but note that the wine should not be allowed to come to a boil. As soon as the first bubbles appear, immediately turn off the heat and add 50 mls of cognac or brandy (for strength) and immediately cover the pot with a lid.
  • Let stand for a few minutes, and then pour the mulled wine into special cups (no thin goblets here, please!)
