HAM AND SPINACH QUICHE
Bump up the richness of this from-scratch quiche by adding Monterey Jack to the ham-and-spinach filling.

- Pulse together the flour, sugar and 1/2 teaspoon salt in a food processor. Add about a 1/3 of the chilled butter cubes and process until the butter is absorbed. Add the remaining butter and pulse until the butter is the size of peas, 5 or 6 pulses. Add the vinegar. Then, pulsing quickly a few times as you do it, add the ice water through the tube. Squeeze some dough between your fingers; it should just hold its shape without feeling wet. If it is crumbly, add more ice water a tablespoon at a time. Pulse quickly; do not overwork or the dough will be tough. Wrap the dough loosely in a large piece of plastic wrap, then firmly press and flatten the dough into a thin round. Refrigerate for 1 hour.
- Lightly dust a work surface with flour, roll the dough out into an 11- to 12-inch round, about 1/8 inch thick. Center the dough in a 9-inch pie plate, with an even overhang all around. Fold the edges and flute or crimp. Chill for at least 30 minutes.
- Preheat the oven to 375 degrees F.
- Press a piece of foil over the chilled crust, fill with pie weights, raw beans or rice. Bake to set the crust, about 20 minutes. Remove the foil and weights and bake until the crust is light brown, 5 to 10 minutes more. Let cool slightly before adding the filling.
- Adjust the oven temperature to 350 degrees F.
- Sprinkle the onion evenly into the crust. Combine the cheese, ham and spinach in a small bowl and sprinkle it in an even layer over the onion.
- Whisk together the half and half, parsley, eggs, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl.
- Pour the custard over the filling and bake until the quiche is set, 35 to 50 minutes. Let cool at least 30 minutes before serving warm or at room temperature.
SAUTEED SPINACH AND MUSHROOMS

- Heat the oil in a medium saute pan or skillet (not nonstick) over medium-low heat. Add the garlic and cook until fragrant, about 2 minutes (do not let the garlic brown). Push the garlic off to the side of the pan and add the mushrooms. Increase the heat to medium high and season the mushrooms with salt and pepper to taste. Cook, stirring occasionally, until the mushrooms are cooked through and begin to become golden in spots, 10 to 12 minutes.
- Add the spinach, sprinkle with an additional pinch of salt and turn with tongs until wilted. (If you can't fit all the spinach in the pan, cover it for a few minutes, then uncover, stir and add the rest.) Transfer to a serving platter, drizzle with the vinegar and serve warm.
SPINACH MUSHROOM QUICHE

- Preheat the oven to 400 degrees F.
- Heat the oil in a large skillet over medium heat. When the oil is hot, add the mushrooms, garlic and thyme. Cook, stirring occasionally, until the mushrooms have browned, 5 to 6 minutes. Season with a pinch of salt and pepper. Remove the skillet from the heat.
- Press the pie crust into a deep, 9-inch tart pan with a removeable bottom (or a deep-dish pie pan). Layer the mushrooms and spinach into the crust and top with the cheese.
- Whisk together the half-and-half, eggs and a good pinch of salt and pepper in a large bowl. Pour the egg mixture into the crust.
- Place the pan on a rimmed baking sheet. Lightly cover the pan with aluminum foil and bake for 45 minutes. Remove the foil and continue baking until the quiche is set and the crust is golden brown, another 10 to 15 minutes. Let the quiche sit for 10 to 15 minutes, then remove from the pan, slice and serve.

- Heat the grill to its highest setting. Heat the oil in an ovenproof frying pan over a medium-high heat. Tip in the mushrooms and fry for 2 mins until mostly softened. Stir in the ham and spinach, and cook for 1 min more until the spinach has wilted. Season well with black pepper and a pinch of salt.
- Reduce the heat and pour over the eggs. Cook undisturbed for 3 mins until the eggs are mostly set. Sprinkle over the cheese and put under the grill for 2 mins. Serve hot or cold.

- Preheat oven to 230°C.
- Chop shallots and ham, and sauté in olive oil with garlic. Remove from heat and allow to cool.
- In a bowl mix the flour with a little milk until a smooth paste forms. Add rest of milk, eggs, paprika, salt and pepper.
- To the milk mixture, add the sautéed shallots and ham, cheese and spinach. Mix well.
- Prick the base of the pastry with a fork and gently pour in the filling mixture. Spread out evenly.
- Bake for 30 minutes. If necessary, cover with foil for the last 10 minutes to prevent over-browning.
- Remove from oven and leave for 5 minutes before serving.

- Fit pie crust into a 9-inch pie dish.

I found this recipe in Woman's Day like 10 years ago. This is a great way to get spinach into your diet without the taste. My family hates spinach and you can't even taste it in this great recipe! Plus it is a great way to use your leftover ham from holiday parties!

- Place crust in pie dish. Pierce with crust with fork to prevent bubbles. PLace dish on cookie sheet.

- Preheat oven to 375 degrees F (190 degrees C).
- Melt margarine in a skillet over medium heat and cook mushrooms, spinach and onions for 5 minutes or until tender, stir continuously. Remove the skillet from heat.
- In a 9 inch round pan or pie plate coated with non-stick cooking spray arrange crescent roll triangles in a circle, with narrow tips hung over the rim of the pie plate about 2 inches. Press dough onto the bottom and side of the pie plate to fill in any gaps.
- In a medium bowl stir together the soup mix, half and half cream and eggs. Stir the cheese and cooked vegetables into the egg mixture until blended. Pour into the prepared crust. Fold the points of dough that are hanging over the edge back in over the filling.
- Bake the quiche for 30 minutes in the preheated oven, or until a knife inserted into the center comes out clean.

- To make pastry crusts - combine flour, butter and salt in a food processor and blend until the mixture resembles bread crumbs.
- Add 3 tablespoons of ice cold water and continue to blend until moist clumps begin to form.
- Transfer the dough to a work surface and cut the dough into 4 pieces and flatten each piece into a disc and wrap in plastic wrap and refrigerate for 1 hour.
- Lightly coat four 6 1/2 diameter tart pans with removable bottoms with butter.
- Unwrap the dough discs and roll out each disc on a lightly floured work surface to a 6 1/2 inch round.
- Transfer the dough to the prepared tart pans, fold the overhang in and press gently to adhere.
- Refrigerate for 30 minutes, or until the pastry shells are cold.
- Preheat the oven to 200°C.
- Line the pastry shells with foil and weight the foil down with pie weights or dried beans.
- Place the tarts on a heavy baking tray and bake for 15 minutes.
- Remove the weights and foil and return to the oven and bake for a further 8 minutes or until the crusts are pale golden in colour.
- Meanwhile to prepare the filling - heat the oil in a large heavy pan over medium-high heat and add mushrooms and onion and saute for 3 minutes or until the mushrooms soften.
- Add the spinach and saute for 1 minute or just until the spinach wilts.
- Remove the pan from the heat and cool and the divide the mix among the 4 warm crusts.
- Top each with an equal amount of ham and cheese.
- Mix the cream, eggs, salt and pepper in a medium bowl to blend.
- Divide the egg mix between the 4 tarts over the filling and bake for 18 minutes or until it is just set in the centre.
- Cool for 5 minutes and then remove from and pans and you could serve with a salad if so inclined.

- Wash the spinach and place in a blender or food processor. Add the egg, butter, flour and milk, and blend well for 1 minute. Pour into a bowl and allow to sit for 30 minutes.
- Wash the mushrooms and put in blender or food processor along with the ham, sour cream and paprika. Puree and set aside.
- Heat a crepe pan, or small non-stick skillet over medium heat until a drop of water jumps in the pan. Put 1 tablespoon of crepe batter into the pan and tilt the pan to spread the batter evenly. Turn down the heat. Crepe should be very thin so it will cook in less than a minute. The crepes do not need to be turned. Remove the crepe and continue with the rest of the batter, one at a time. You should thin the batter with 1-2 tablespoons of water as you make the crepes, because the batter will thicken as it sits. You want to keep the crepes very thin!
- Place each crepe in an oven dish as you make them. Spread each crepe with the ham and mushroom filling, and fold.
- Sprinkle the grated cheese over the top, and heat in pre-heated 375F oven for 2-5 minutes.
