TROUT WITH GARLIC LEMON BUTTER HERB SAUCE

One of the best trout recipes I've tried is simply cooking the trout in the skillet in olive oil, and then adding garlic, lemon juice, white wine, fresh parsley and butter. Gluten free, healthy, easy-to-make and delicious! Low-carb dinner rich in lean protein and omega-3 fatty acids. A family favorite! Perfect way to cook an amazing fish: trout.

1.5 pounds trout (or salmon, or arctic char - 2 large fish fillets with skin on the bottom)
2 tablespoons olive oil (more, if needed)
1 tablespoon Italian seasoning ((dried thyme, oregano, parsley, combined together))
1/4 teaspoon salt (to taste)
4 garlic cloves (diced)
3 tablespoons lemon juice (freshly squeezed)
2 tablespoons white wine
2 tablespoons butter (softened)
2 tablespoons parsley (chopped)

Steps:

  • Season the top of fish fillets with Italian herb seasoning and salt (generously). Fish fillets will have skins on the bottom - no need to season the skins.
  • In a large skillet (large enough to fit 2 fish fillets), heat 2 tablespoons of olive oil on medium heat until heated but not smoking. To the hot skillet with olive oil, add fish fillets skin side up - flesh side down. Cook the flesh side of the fish for about 3-5 minutes on medium heat, making sure the oil does not smoke, until lightly browned.
  • Flip the fillets over to the other side, skin side down (add more oil, if needed). Cook for another 2-4 minutes on medium heat (to prevent oil from burning).
  • Remove the skillet from heat, close with the lid, and let the fish sit for 5-10 minutes, covered, in the skillet, until flaky and cooked through completely.
  • After the fish is cooked through, off heat, using spatula, carefully remove fillets to the plate, separating the fish from the skin. Carefully remove or scrape the fish skin off the bottom of the pan, making sure to leave all the cooking oils in the pan.
  • Add diced garlic, lemon juice, and white wine to the same pan with oil. Cook on medium-low heat for about 1 minute, until garlic softens a bit. Remove from heat. Add 1 tablespoon of chopped parsley, and 2 tablespoons of butter, off heat, to the sauce, stirring, until the butter melts and forms a creamy mixture.
  • Add fish to the pan, spoon sauce over the fish, top the fish and sauce with the remaining 1 tablespoon of parsley, and serve.

GRILLED RED TROUT WITH RANCHERO SAUCE

Salt and pepper, to taste
4 red trout fillets, boned
Nonstick cooking spray, if desired
Ranchero sauce, recipe follows
1/2 large red onion, diced small
1 roasted poblano chile, peeled
1 red bell pepper, diced small
3 pounds, canned diced fire roasted tomatoes (or canned, diced tomatoes)
1 tablespoon ground cumin
1 teaspoon cayenne
Salt and pepper, to taste

Steps:

  • Salt and pepper the meat side of the fish, spray with nonstick cooking spray if desired. Place skin side down on a hot grill. Cook about 30 seconds and flip over. The skin should separate from the meat. Cook 1 to 2 minutes, and turn over, to finish cooking the other side of the fillet. When cooked through, around 1 minute more, depending on the temperature of your grill, remove from heat. Serve hot with ranchero sauce.
  • Saute onion, red pepper and poblano chile until soft and translucent. Add the tomatoes, bring to a boil. Add seasonings. Simmer for 15 to 20 minutes. Serve hot.

PAN-ROASTED SEA TROUT WITH UMBRIAN LENTILS AND RED CABBAGE SOTTACETO



Pan-Roasted Sea Trout with Umbrian Lentils and Red Cabbage Sottaceto image

for the cabbage
1/4 cup extra-virgin olive oil
8 garlic cloves, thinly sliced
Kosher salt and freshly ground black pepper
1/4 head of red cabbage, cored and thinly sliced (about 4 cups)
1 cup balsamic vinegar
for the fish
4 6-ounce fillets sea trout, skin on
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
30 whole fresh Italian parsley leaves
Lentils Castellucciano (page 264)
2 tablespoons finishing-quality extra-virgin olive oil, plus more for drizzling
1 lemon

Steps:

  • To make the cabbage, warm the oil and garlic together in a large nonstick sauté pan over medium heat. Season with salt and sauté the garlic, stirring constantly to prevent it from browning, for about 2 minutes, until it begins to soften. Add the cabbage, season with salt and pepper, and cook, stirring frequently, for about 2 minutes, to wilt it slightly. Reduce the heat to low, add the vinegar, and simmer the cabbage 35 to 45 minutes, until the vinegar is reduced by about two-thirds and is thick and jammy. You don't need to stir the cabbage while it cooks, just let it slowly simmer and it will melt down into the vinegar. You can prepare the cabbage to this point up to three days in advance. Transfer it to an airtight container and refrigerate; bring to room temperature before serving.
  • Adjust the oven rack to the middle position and preheat the oven to 350°F. Season both sides of the trout with salt and pepper. Heat the olive oil in a large nonstick sauté pan over medium- high heat until the oil is almost smoking and slides easily in the pan, 2 to 3 minutes. Place the fish fillets in the pan skin side down and cook for 1 to 2 minutes, so the skin begins to brown and crisp. Place the pan in the oven and cook for about 4 minutes, until the skin is golden brown. (To check for doneness, look at the skin around the outer edges of the fish; you want it to be a rich, crunchy, french-fry brown around the sides.) Remove the pan from the oven and slide a spatula under each fillet to turn it, taking care not to tear the skin or burn yourself, as the pan will be searing hot. Return the pan to the oven and cook the fish for another minute. Remove the pan from the oven and let the fish rest in the pan for 2 minutes.
  • While the fish is cooking, combine 1/2 cup of the cabbage with the parsley in a small bowl and toss gently. Warm the lentils in a small saucepan over medium heat. Add enough water so they are the consistency of a thick porridge but not so thin that they will spread over the surface of the plate. Remove the lentils from the heat and drizzle in 2 tablespoons of the finishing-quality olive oil, stirring constantly for about a minute, until the lentils are creamy and emulsified.
  • Ladle 1/4 cup of the lentils into the center of each of four plates. Lay the trout on top of the lentils, squeeze a few drops of lemon juice over each fish fillet and top with the cabbage and parsley, dividing it evenly. Drizzle each serving of fish with the finishing olive oil, and serve with the remaining cabbage on the side.

1 (6 -8 ounce) ruby trout fillets
1 tablespoon cilantro pesto sauce
2 cups mixed vegetables (green beans, carrots, etc.)
1 tablespoon herb butter
1/2 cup tejas rice
1 tablespoon avocado relish

Steps:

  • Rub cilantro pesto on flesh of trout then place on grill or sautéed pan skin side down.
  • Turn over and grill/sauté for approximately 3 minutes creating grill marks.
  • Remove skin using tongs.
  • Place mix veggies into vegetable water and heat up for one minute.
  • Add herb butter to a 10 inch skillet and place on high heat.
  • Add drained mix veggies to skillet and sauté till tender.
  • Salt and pepper to taste.
  • Place trout on a platter and top with avocado relish.

MUSTANG'S UTAH RED TROUT RECIPE

Number Of Ingredients 9

Four 8 to 10 ounce Utah red trout filets (and you can substitute whole trout you find in the supermarket.)
Olive oil to saute the trout Salt and Pepper
1 tablespoon minced shallots
1 stick unsalted butter
Juice of two lemons
1 tablespoon capers
2 tablespoons fine diced fresh Roma tomatoes
2 tablespoons fresh chives, chopped
2 tablespoons toasted pine nuts

Steps:

  • 1. Start by heating a large saute pan over medium-high heat and add the olive oil. Season the trout with salt and pepper and when the oil is hot, add the filets skin side down and cook for four minutes. 2. Flip the filets over and cook for another three to four minutes and then remove them from the pan to a plate and keep warm. Add two tablespoons of butter to the pan and saute the shallots. 3. Add the lemon juice and bring to a boil. Reduce the sauce until it is thick enough to coat a spoon.Reduce the heat to low and add the rest of the butter gradually in small pieces, whisking after each addition. Taste and adjust the seasoning with salt and pepper. 4. Plate the trout and spoon the sauce over the trout and garnish the plate with capers, diced tomatoes, chives and toasted pine nuts.
